NACHO ABUELITOS GRILLED CHEESE



Nacho Abuelitos Grilled Cheese image

1 tablespoon vegetable oil
1 pound ground fresh Mexican chorizo
8 slices good quality white bread, such as Arnold Country White Sliced
8 ounces shredded Chihuahua cheese
1/2 cup sliced black olives
1/4 cup pickled jalapenos, sliced
4 tablespoons salted butter, softened
Restaurant-style tortilla chips, such as Donkey corn tortilla chips
Honey Chipotle Crema, recipe follows
1 cup sour cream
1 tablespoon chopped fresh cilantro
1 tablespoon honey or agave
1 chipotle pepper in adobo, minced
1/2 lime, juiced
Kosher salt and pepper

Steps:

  • In a large skillet, heat the vegetable oil and brown the chorizo over medium heat until cooked through, about 8 minutes. Using a slotted spoon, scoop out the chorizo, and move to a paper-towel-lined plate. Set aside.
  • In between two pieces of bread, layer the cheese, chorizo, olives, jalapenos and then another layer of cheese. Add some butter to the griddle over medium-low heat, and place the sandwich on the griddle. Add more butter to the top of the bread and cover with a metal bowl until golden on the outside and gooey in the middle, 5 minutes per side. Open the sandwich and place a few tortilla chips inside, then close again.
  • Cut into quarters, serve with a side of Honey Chipotle Crema, and be prepared to never eat conventional nachos again.
  • Mix the sour cream, cilantro, honey, chipotle pepper, lime juice and some salt and pepper together, and set aside.

GRILLED TACO NACHOS



Grilled Taco Nachos image

10 cups tortilla chips
2 pounds bulk pork sausage, cooked and drained
2 cans (4.5 ounces each) Old El Paso® chopped green chiles, drained
4 teaspoons Old El Paso® taco seasoning mix (from 1-ounce package)
4 roma (plum) tomatoes, chopped (1 1/3 cups)
4 medium green onions, sliced (1/4 cup)
4 cups finely shredded Colby-Monterey Jack cheese (1 pound)

Steps:

  • 1. Heat coals or gas grill for direct heat. Spray two 30x18-inch pieces of heavy-duty aluminum foil with cooking spray. Spread tortilla chips on centers of foil pieces. Mix sausage, chilies and seasoning mix; spoon over tortilla chips. Top with tomatoes and onions. Sprinkle with cheese.
  • 2. Wrap foil securely around tortilla chips. Cover and grill foil packets, seam sides up, 4 to 6 inches from medium heat 8 to 10 minutes or until cheese is melted

FRENCH ONION GRILLED CHEESE



French Onion Grilled Cheese image

1 tablespoon unsalted butter, plus more for spreading
1 tablespoon olive oil
2 yellow onions, sliced 1/4 inch thick
Kosher salt and freshly cracked pepper
1 tablespoon dry sherry
1/2 teaspoon finely chopped fresh thyme
4 slices white American cheese
8 slices country white bread
4 slices yellow American cheese

Steps:

  • Melt the butter with the olive oil in a heavy-bottomed pot over medium-high heat. Add the onions, season with salt and pepper and spread the onions in an even layer. Cover the pot and turn down the heat to medium low. Sweat, steam and soften the onions, 10 to 15 minutes. Uncover and continue cooking until caramelized, 25 to 30 minutes, stirring frequently. Add the sherry and scrape up any bits from the bottom of the pan. Stir in the thyme and season with salt and pepper.
  • Preheat a griddle to medium-low heat. Put 1 slice white American cheese on 4 slices country white bread and 1 slice yellow American cheese on 4 more bread slices. Divide the onions between half the bread, then close and butter both sides. Place the sandwiches on the griddle; cover with a metal bowl (careful, it will get hot) and let the sandwiches get nice and golden brown, 2 to 3 minutes. Flip, cover again and cook until the cheese is melted and the sandwiches are golden brown, 2 to 3 minutes.
