Number Of Ingredients 7

1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs, beaten
1 1/2 cups milk
1/4 cup butter or 1/4 cup margarine

Steps:

  • Measure dry ingredients into mixing bowl.
  • Stir very well.
  • Make a well in center.
  • In separate bowl beat eggs until frothy.
  • Stir in milk and butter.
  • Pour into well.
  • Beat only until smooth.
  • Fill hot waffle iron according to it's instructions.
  • Bake until it stops steaming.
  • Serve immediately with butter and syrup.

GRANDMA B'S SUPER WAFFLES

This was my grandma's favorite waffle recipe. It has become a family favorite enjoyed on special occasions not only by her grandchildren but great-great grandchildren as well. The clipping is yellow with age clipped I suspect from the local daily paper many many years ago.

2 cups sifted all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups sour milk (note below) or 2 cups buttermilk (note below)
4 eggs, well beaten
3/4 cup melted margarine (I use margarine or butter) or 3/4 cup salad oil (I use margarine or butter)

Steps:

  • note: if you do not have sour milk or buttermilk measure 2 tablespoons vinegar into your 2-cup measuring cup and fill to the two-cup mark with sweet milk and let it stand while you prepare other ingredients.
  • Sift together: 2 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt.
  • Combine: 2 cups sour milk or butter milk 4 eggs well beaten Add the milk and eggs to dry ingredients,beat until smooth with a hand mixer or electric mixer on high speed.
  • Stir in 3/4 cup melted margarine or salad oil.
  • Bake in preheated waffle iron until crisp and golden. For large maker 2 cups for small maker 1 cup batter.
  • Serve with your favorite toppings.

2 cups buttermilk
¼ cup unsalted butter, melted and cooled to room temperature
2 large eggs, separated, divided

Steps:

  • Stir flour, baking soda, and salt together in a large bowl. Whisk buttermilk, melted butter, and egg yolks together in a separate bowl. Pour buttermilk mixture into the flour mixture; stir to combine.
  • Preheat a Belgian waffle iron according to manufacturer's instructions.
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff; fold into the waffle batter.

1 ounces fresh cake yeast or 2 packages active dry yeast
3 cups milk, warmed to 100 F
3 large egg yolks
12 tablespoons (1.5 sticks) unsalted butter, melted and cooled to lukewarm
1/2 cup sugar and 1 teaspoon vanilla extract (combined)
Pinch of salt
4 cups all-purpose flour
3 large egg whites, beaten to soft peaks
For Serving:
Confectioner's sugar
Unsalted butter at room temperature
Whipped cream
Sliced fresh fruit

Steps:

  • 1. In a small bowl, dissolve the yeast in 1/2 cup of the lukewarm milk 2. In a large, deep mixing bowl (the dough will double or triple in volume), whisk the egg yolks with ½ cup of the remaining milk and the melted butter and margarine. Add the yeast mixture, sugar, and salt. 3. Gradually add the flour to the batter by sifting it in. Alternate additions of flour with the remaining 4 ½ cups milk. Stir with a wooden spoon after each addition. 4. Fold in the beaten egg whites. 5. Cover with a clean towel and put in a warm place. Let rise for 1 hour. The batter should double or even triple in volume. 6. Bake the waffles in a hot waffle iron.

SIMPLE FLUFFY WAFFLES

This is a recipe I got from my mom. I grew up with these waffles and my brother and I loved them. No sugar in this recipe, but who needs it with the added butter and syrup or powdered sugar. I am saving this for my personal cookbook.

3 eggs
1 1/2 cups milk
1 teaspoon baking soda
1 3/4 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1/2 cup vegetable oil

Steps:

  • Heat waffle iron.
  • Mix the flour, baking soda, baking powder and salt very well(otherwise may get bites that are bitter), I use a plastic bag and just shake all very well. Mix the eggs, milk and oil in a seperate bowl and then add the dry ingredients and mix all well.
  • Pour enough mix into waffle iron and cook to desired doneness.
