I'm not sure where the original recipe comes from, but my mom gave me the BEST chocolate frosting recipe. Once you try this, I doubt you will ever use another. Seriously.

1 cup chocolate chips

Steps:

  • Bring the butter, sugar and milk to a slow boil.
  • Add chocolate chips and stir until melted.
  • Use to frost brownies, chocolate cake-- whatever your little heart desires!

3 ounces unsweetened chocolate
2/3 cup sugar
1/2 cup milk
1 large egg, beaten
1/2 cup shortening
1 cup sugar
1 teaspoon vanilla
2 large eggs
2 cups sifted flour
1 teaspoon baking soda
1/4 teaspoon salt
2/3 cup milk

Steps:

  • Combine chocolate, 2/3 cup sugar, 1/2 cup milk and 1 egg.
  • Cook over medium heat until mixture thickens.
  • Set aside and cool.
  • Preheat oven to 350F and grease/flour cake pan.
  • Cream together shortening and 1 cup sugar.
  • Add vanilla, 2 eggs, flour, baking soda, salt, and 2/3 cup milk.
  • Combine until well blended.
  • Add cooked ingredients - mixing well.
  • Bake for 25-30 minutes or until toothpick inserted in center comes out clean.

My mom made this cake all the time when I was growing up. Somehow the cookbook was lost, but I recently found a copy of the 1967 Southern Living Dessert Cookbook. This is actually called the Five-Minute Chocolate Cake and Instant Fudge Frosting. The beauty of this cake, besides how delicious it is, is that you only need one saucepan for the cake and one bowl for the frosting. If you don't have the sour milk called for in the recipe just use regular milk and add 1/2 tablespoon of lemon juice or vinegar.

1 cup water
1/2 cup butter or 1/2 cup margarine
3/4 cup shortening
5 tablespoons cocoa
2 cups sugar
2 cups sifted flour
1 teaspoon baking soda
2 beaten eggs
1/2 cup sour milk
1 teaspoon vanilla
1 lb powdered sugar, unsifted
1/2 cup cocoa
1/4 teaspoon salt
1 teaspoon vanilla
7 tablespoons boiling water
6 tablespoons butter or 6 tablespoons margarine, softened

Steps:

  • Cake:.
  • Boil water, butter, shortening and cocoa in a medium saucepan until all of the shortening is melted.
  • Add sugar, sifted flour and soda.
  • Add eggs, sour milk and vanilla.
  • Mix well.
  • Put in a 9x13 cake pan.
  • Bake at 350 degrees for 20 to 25 minutes.
  • Frosting:.
  • Mix powdered sugar, cocoa and salt thoroughly.
  • Add vanilla and boiling water; stir until smooth.
  • Add soft butter and stir until smooth.
  • You can frost the cake while it is still warm, but don't cut the cake until the frosting has had time to set up into fudgey goodness.

A Tradition in the South. Pour this frosting over a cooled yellow cake in which holes have been poked to allow all the goodness to saturate the cake. The frosting firms up after cooling and makes a wonderful cake topping.

Steps:

  • Mix sugar and cocoa together in saucepan. Stir in milk. Add butter. Cook over low heat and stir until butter melts. Continue to cook over low heat until mixture comes to a rapid boil. Mom always cooked each of us our favorite cake on our birthday. My little brother's favorite was 4 layer yellow cake with this cooked fudge icing. The only icing I can cook that turns out right every time. My brother liked it so it was slightly hard when done. I love it that way too. I have used this on Boston Cream Pie as well.

2 cups sugar
2 tablespoons corn syrup
3 squares chocolate
1/2 cup milk
1 teaspoon vanilla
2 tablespoons butter

4 large eggs, room temperature
1 stick butter, room temperature
1 box yellow cake mix
8 oz cream cheese, room temperature
2 c or 1 box powdered sugar

  • 1. Preheat oven to 350F. Place dry cake mix, butter, and 2 eggs in a mixing bowl.
  • 2. Mix together.
  • 3. Press into a greased 9" x 13" cake pan, pushing the sides up slightly to hold the filling.
  • 4. For the filling: Mix cream cheese, remaining 2 eggs, and powdered sugar in a mixing bowl.

2/3 c soft butter
1 3/4 c sugar
2 eggs
1 1/2 tsp vanilla
3 c sifted cake flour (must use cake flour)
2 1/2 tsp baking powder
1 tsp salt
1 1/4 c milk

Steps:

  • 1. Heat oven to 350 degrees. Grease well and flour 3-8X1 1/2" cake pans, or 2-9X 1/1/2" square, or an oblong 13X9X2" pan. Beat butter, sugar, eggs, and vanilla 5 minutes at high speed on mixer or by hand till fluffy. Sift flour, baking powder, salt. Add in 4 additions alternately with milk. Start and end with dry ingredients. Blend on low speed just until smooth. Bake layers 30-35 minutes, oblong 45-50 min. Use with icing below.
