BAKED BEANS FROM SCRATCH
Old Fashioned recipe for Baked Beans are made from scratch with a sweet and savory maple sauce.

Steps:
- Place dried beans in a container that can be fitted with a lid. Pour fresh water over beans until the water is at least 1 inch above beans. Seal container shut. Soak beans for 8-12 hours.
- After soaking, drain beans. Add soaked beans to a large stock pan. Cover beans by 1 inch with fresh cold water.
- Bring water to a rapid boil, and reduce to a simmer. Simmer for 1 hour. Drain cooked beans well.
- After soaking the beans, you can speed up the process by cooking the soaked beans in the Instant Pot.
- Preheat oven to 300 degrees.
- Heat a large skillet over medium-high heat.
- Add in the sliced bacon. Cook until bacon begins to render fat and then stir in the chopped onion. Saute bacon and onions together until onions begin to soften and bacon is browned and slightly crisp. This should take about 5-6 minutes. Drain off excess fat off bacon.
- Mix together tomato sauce, brown sugar, molasses, maple syrup, dried mustard, vinegar,apple juice, water, and salt together. Add in bacon and onion mixture and cooked beans and gently stir to combine.
- Pour bean mixture into a 2-quart oven-safe dish. Beans should be pretty well submerged in liquid and mixture should be relatively loose. If there does not seem to be enough liquid in the baking dish, add up to 1/2 cup additional water or juice. Cover pan with foil or oven-safe lid.
- Bake covered for 2 hours. Uncover and bake for another 30-40 minutes, until thickened.

MOM'S BAKED BEANS
Steps:
- Preheat the oven to 350 degrees F.
- Line a plate with a paper towel. In a saute pan over medium heat, add the bacon. Cook until tender and cooked but not crisp, flipping once, about 8 minutes. Remove to the paper-towel lined plate. Let cool and then chop.
- To the pan with the bacon drippings, add the onion and cook until tender, soft and translucent, about 7 minutes. Add the garlic and cook until fragrant, another 1 to 2 minutes. Remove from heat.
- To a large bowl, add the baked beans, molasses, dark brown sugar, barbecue sauce and bacon mixture. Pour the mixture into a 9-by-13-inch baking dish and bake, uncovered, for about 1 hour. Remove from the oven and let cool for at least 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large bowl combine beans, molasses, mustard, salt, tomatoes, brown sugar, dry mustard, ham, onions and crumbed bacon. Mix well and transfer to a 2 quart casserole dish.
- Bake in preheated oven, covered, for 1 hour. Uncover and bake for 1 hour more.

- In 5-quart Dutch oven, heat 8 cups water and beans to boiling over medium-high heat. Boil uncovered 2 minutes. Remove from heat; let stand 1 hour; drain.
- Heat oven to 350°F. In same 5-quart Dutch oven, cook and stir salt pork over medium-high heat 5 to 6 minutes, until lightly browned. Stir in remaining ingredients. Bring to boiling over medium-high heat. Cover; place in oven and bake 1 hour.
- Stir beans; remove cover. Bake 1 hour to 1 hour 15 minutes, stirring occasionally, until beans are tender and of desired consistency. If desired, transfer beans to a casserole for serving.

MY MOMS BAKED BEANS

- 1. Empty your 2 cans of baked beans, and add a dash of salt & pepper.Cut a few slices from your onion and add into your beans.
- 2. Mix in 1/4 cup of ketchup,1/4 cup of pancake syrup and a 1/4 cup of brown sugar.
- 3. Sprinkle some chili powder on top of your baked beans,and slice your bacon in half and add on top of your baked beans.

- Cook bacon till crisp.
- Remove bacon, reserving about 3 Tbsp drippings in skillet. Drain and crumble bacon; set aside. Cook chopped onion in reserved drippings till tender.
- Stir in two cans pork and beans in tomato sauce, brown sugar, catsup, Worcestershire sauce, and prepared mustard.
- Turn into a 1 1/2 quart casserole. Bake, uncovered, in a 350 degree oven for 1 1/2 to 1 3/4 hours, or cook in the microwave oven on HI for 10 to 12 minutes.
- Stir 1/2 way through cooking time, Top with bacon.
- Let stand a few minutes before serving.
