Italian-Style Green Beans image

You will love these sauteed Italian-style green beans with tomatoes and garlic. The easy recipe can be prepared with fresh or frozen vegetables.

1/4 cup olive oil
3 cloves garlic, minced
12 ounces (1 1/2 cups) diced tomatoes, chopped fresh or canned
24 ounces (1 1/2 pounds) fresh or frozen green beans
1/2 teaspoon salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste

Steps:

  • Warm olive oil over medium heat in a large, deep frying pan on the stove.
  • Add garlic and cook until fragrant while stirring occasionally, about 30 seconds to 1 minute.
  • Stir in tomatoes and cook down for about 5 minutes, until they have broken down a bit and have formed a chunky sauce, stirring occasionally.
  • Add green beans and stir to coat them with the tomato mixture.
  • Simmer covered over medium-low heat for 20-25 minutes if using fresh green beans (25-35 minutes if using frozen), until the beans are softened and tender crisp.
  • Stir in salt and pepper. Taste and add more salt and/or pepper as desired. Serve immediately.

1 small onion, chopped
2 tablespoons olive oil
2 to 3 garlic cloves, minced
1 can (14-1/2 ounces) stewed tomatoes, coarsely mashed
1/2 cup water
3 tablespoons minced fresh oregano or 1 tablespoon dried oregano
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 to 1/2 teaspoon coarsely ground pepper
2 pounds fresh green beans, cut into 1-inch pieces
2 tablespoons grated Romano cheese

Steps:

  • In a small saucepan, saute onion in oil until tender. Add garlic; saute 1 minute longer. Add the tomatoes, water, oregano, basil, sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 40 minutes., Meanwhile, place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Add tomato mixture and cheese; cook for 5 minutes or until heated through.

1 pkg 12 to 14 oz. frozen italian green beans,
1/4 c real bacon bits
1 Tbsp bacon grease
1/2 c diced onion
2 Tbsp red bell pepper,diced
3 Tbsp seasoned rice vinegar
1 Tbsp granulated sugar
1/4 tsp pepper

Steps:

  • 1. Microwave beans according to package direction,do not over cook. Set aside unopened to rest.
  • 2. In a skillet,add the bacon grease.Heat to melt, then add the onion and bell pepper; saute until softened. Add the bacon bits, vinegar,sugar and pepper.
  • 3. Cook until sugar is dissolved and mixture is bubbly. Add green beans and toss to coat with the mixture and heat through..enjoy...

BEST GREEN BEANS EVER!!! These beans are also known as Kentucky Wonders. They were the variety that my father always grew in our garden and are of the flat bean type. They have flavor galore! I have included a photo of the cans to show the brand and kind to purchase. A dish is always included on the menu at our family gatherings and are looked forward to.

4 slices bacon (save drippings)
2 (14 1/2 ounce) Italian cut green beans, drained
4 cups water
1/2 onion, diced
1 tablespoon sugar
1/2 teaspoon salt

Steps:

  • Fry bacon until crisp, crumble and set aside.
  • Place drained beans with water in a medium size saucepan with lid.
  • Add bacon drippings, onion, sugar and salt.
  • Simmer on low heat for approximately 1 1/2 hours.
  • Pour beans in a serving bowl and sprinkle crumbled bacon on top.
