½ cup soy sauce
¼ cup red wine
3 tablespoons white sugar
1 teaspoon minced garlic
1 teaspoon ground ginger
1 teaspoon molasses

Steps:

  • Mix together soy sauce, wine, sugar, garlic, ginger and molasses. Pour over meat and refrigerate.

My Best Wine Marinade image

I've used this for more than 20 years. After the mixture cools, I pour it into a ziplock bag and toss in the beef, squeezing out the air. After marinating, season meat as normal. 6/2001 update: I've used white wine in place of red to marinade pork ribs with an exceptional outcome. For ribs don't forget to remove silverskin (easy to do by pulling away with a paper towel) and season as usual. Apply a bbq or finishing sauce to complete in final minutes of cooking.

3 tablespoons Dijon mustard
1 teaspoon sugar
1 garlic clove, minced
3 tablespoons olive oil

  • Bring to a boil and simmer for 5 minutes.
  • Cool completely and marinate at least 8 hours or overnight.

1 cup red wine
3/4 cup olive oil
5 garlic cloves (minced)
2 tablespoons onion (diced)
2 to 3 sprigs fresh rosemary
1 tablespoon lemon juice
1 teaspoon of sea salt
1 teaspoon pepper
2 to 3 (6-ounce) steaks

Steps:

  • Gather the ingredients.
  • Combine the red wine, olive oil, garlic cloves, onion, rosemary, lemon juice, salt, and pepper in a bowl and then pour the mix into a large plastic zip-top bag.
  • Add the steaks and seal the bag. Refrigerate for 4 to 6 hours, turning the bag several times to mix the marinade.
  • Prepare the steaks according to your preference and discard the rest of the marinade.

1 tsp dried basil or oregano leaves
1 tsp worcestershire sauce
1/2 tsp sea salt
1/4 tsp coarsely ground pepper
1/8 tsp garlic powder

  • 1. Mix all ingredients together in a small bowl.
  • 2. VARIATIONS for chicken or fish : follow the recipe above except substituting 1 teas. of dried tarragon leaves for the basil.
