Steps:
- Melt the butter in a small pan and stir in the flour.
- Remove from the heat and stir in the mustard.
- Return the pan to the heat and gradually incorporate the milk, beating with a spoon as it comes up to a boil.
- Season with salt and pepper and let simmer gently, uncovered, for 10-15 minutes.
- This cooks the flour and thickens the sauce.
- Stir in the chives, adding a touch of soup stock or water if it seems too thick.
- Spoon over slices of ham.
MUSTARD AND CHIVE BUTTER GARNISH WITH ASPARAGUS

Steps:
- Fill a medium bowl with ice water, and set aside. Bring 5 cups water to boil in medium saucepan. Add 2 teaspoons kosher salt and asparagus. Cook until tender, 30 to 45 seconds. Using slotted spoon, transfer asparagus to ice water very briefly, remove, and dry on paper towels. Set aside.
- Combine butter, mustard, chives, pepper and a pinch of kosher salt in small bowl, and mix with fork until light and fluffy. Scrape butter onto 6-inch square of plastic wrap, roll tightly into log about 1 inch in diameter, and refrigerate until firm. Thirty minutes before serving, remove butter from refrigerator, slice into four medallions, cover lightly, and set aside.
- Warm blanched asparagus pieces briefly in hot water. Place hot torn toast in 4 small bowls. Drain asparagus, and sprinkle over toast or place in 4 cocktail glasses.
- To assemble, place 2 eggs on top of toast in bowls or in glasses (with toast on the side). Splash with Cognac. Drop butter medallions onto each portion, and serve.

OVEN BAKED ASPARAGUS WITH MUSTARD SAUCE

Steps:
- preheat oven to 325.
- Wash and trim ends from asparagus.
- Tear off a sheet of Reynolds Wrap aluminum foil long enough to wrap the asparagus inches Place the rinsed asparagus on the foil and dot with butter.
- Bring up foil side. Double fold top and ends to seal making one large foil packet, leaving room for heat to circulate inside.
- Bake 30 to 35 minutes or until asparagus is crips tender. Open foil, season with salt and pepper.
- Combine sour cream, vinegar, mustard, sugar and red pepper flakes in small microwave bowl to make sauce. Microwave on high 90 seconds or until warm.
- Serve over asparagus.

ASPARAGUS WITH MUSTARD HOLLANDAISE

- Cook 2 bunches jumbo asparagus (trimmed and peeled) in salted boiling water until crisp-tender, about 3 minutes; drain. Combine 2 egg yolks and 1 tablespoon each lemon juice and hot water in a heatproof bowl set over a saucepan of simmering water. Cook, whisking constantly, until thickened, 1 to 3 minutes (remove from the heat if the eggs start to scramble). Gradually whisk in 1 1/2 sticks cut-up butter until thickened, 3 to 5 minutes. Whisk in 4 teaspoons whole-grain mustard; season with salt and cayenne. Thin with lemon juice as needed. Serve over the asparagus.
ASPARAGUS SAUTEED IN BUTTER AND MUSTARD
Adapted from Kitchen of Light. The original used unsalted butter, but I prefer salted. If you do use unsalted butter, adding a pinch of salt might be a good idea. I do not recommend a nonstick pan for this dish.

- Add asparagus and cook for 1 minutes.
- Reduce heat to medium.
- Add the butter.
- Cook, stirring, until butter begins to brown, about 1 minute more.

- Prepare a large ice-water bath. Set a steamer basket in a large pot filled with 1 inch boiling water. Add asparagus, cover, and cook until crisp-tender, 2 to 6 minutes (depending on thickness). Immediately plunge asparagus into the ice bath and let cool. Drain and pat dry with paper towels and transfer to a serving platter.
- Stir together mayonnaise, oil, vinegar, and mustard. Season with salt and pepper. Drizzle over asparagus and serve immediately.

Found in the Best Simple Recipes (America's Test Kitchen) cookbook. The picture looked delicious and it was a quick and simple yet elegant meal. Use asparagus spears that are at least 1/2 inch thick at the base so they do not overcook.

- Lay asparagus in single layer on bottom of a large skillet. Add water and 1/4 teaspoon salt to skillet. Season salmon with salt and pepper and lay across asparagus spears. Bring water to boil over high heat, cover and cook over medium heat until salmon is cooked through (just til it flakes) and asparagus is tender, about 8 minutes. Transfer asparagus and salmon to platter.
- Add wine to skillet, increase heat to medium-high and simmer mixture to reduce, 5 minutes. Off heat, whisk in butter and chives and season with salt and pepper. Pour sauce over salmon and asparagus. Serve with lemon wedges.
