MUSSEL AND POTATO SALAD



Mussel and Potato Salad image

5 pounds mussels
3/4 cup dry white wine
1 1/2 pounds potatoes
About 5 scallions, peeled and minced ( 1/2 cup)
3 cloves garlic, peeled, crushed, and finely chopped
3/4 teaspoon salt
1 teaspoon finely ground black pepper
1 1/2 tablespoons Dijon-style mustard
1 1/2 tablespoons red-wine vinegar
1/3 cup olive oil
2 cups mixed salad greens, rinsed and thoroughly dried

Steps:

  • Place the mussels in a large bowl, cover them with cold water, and rub them against one another to scrape off any residue. Transfer them to another bowl of cold water. Repeat the washing and transferring procedure until there is no evidence of grit or debris.
  • Place the mussels in a large pot, and add the wine and 1 cup of water. Cover, and bring to a boil over high heat. Toss the mussels lightly in the pan to reposition them, and cook them for 2 to 3 minutes longer, covered, to allow the mussels to open. Remove those that are open and place them in a bowl while you continue to boil the unopened mussels for 1 to 2 minutes longer to give them another chance to open. Discard any mussels that have not opened at this point. Cooking the mussels, from start to finish, should not take more than 12 to 15 minutes.)
  • When the mussels are cool enough to handle, remove them from their shells and discard any of the "beard" that is attached to them. (It resembles dry seaweed.) Place the mussels in a bowl large enough to hold the finished dish.
  • Meanwhile, wash the potatoes, place in a large saucepan, cover with cold water, and bring the water to a boil. Then, reduce the heat to low, and boil the potatoes gently, uncovered, until tender, 30 to 40 minutes. Drain, and set them aside until they are cool enough to handle.
  • Let the mussel stock settle in the pan for a few minutes, and then pour it slowly into a bowl, leaving behind any sediment. There should be about 4 cups. Add enough water to bring the yield to 6 cups, and reserve for use in the mussel and tomato soup.
  • Peel the lukewarm potatoes, and cut them into 1/4-inch slices. Add them to the mussels along with the scallions and garlic. In a small bowl, mix together the salt, pepper, mustard, vinegar and oil, and add to the potatoes and mussels. Toss gently to mix.
  • Arrange the salad greens on six plates, and spoon the salad onto the greens, dividing it evenly among the plates. Serve at room temperature.

2 pounds mussels, scrubbed and debearded
Kosher salt and freshly ground pepper
1 tablespoon Dijon mustard
1 tablespoon lemon zest, plus 2 tablespoons fresh lemon juice
1 teaspoon honey
1 shallot, finely chopped
1 clove garlic, minced
1/2 teaspoon saffron threads
1/2 teaspoon curry powder
1/2 cup extra-virgin olive oil
8 radishes, trimmed and quartered
2 cups watercress, roughly chopped
1/2 cup curly parsley sprigs, plus more for garnish

Steps:

  • Heat a medium pot over medium-high. Add mussels and 1 tablespoon pepper; stir to combine. Cover pot and steam until shells open and mussels are cooked, 3 to 5 minutes.
  • Transfer cooked mussels to a bowl or rimmed baking sheet and let cool. Refrigerate for 1 hour or until chilled.
  • In a medium bowl, whisk to combine mustard, lemon zest and juice, honey, shallot, garlic, saffron, curry powder, and a pinch of salt. While whisking continuously, slowly drizzle in oil.
  • In a large bowl, combine mussels, radishes, watercress, and parsley. Drizzle vinaigrette over salad and toss to combine. Transfer to a serving dish and garnish with parsley.

1 pint cherry tomatoes, quartered
12 tiny Nicoise olives
1 tablespoon minced fresh parsley
1 teaspoon freshly grated orange rind
Salt and freshly ground black pepper

Steps:

  • Boil the potatoes until just cooked through. Allow to cool briefly, then slice. Place in a bowl.
  • Mix vinegar with mustard and anchovy paste. Beat in the olive oil and stir in the garlic. Pour this dressing over the potatoes and gently toss. Add the mussels, tomatoes, olives, parsley and orange rind.
  • Season to taste with salt and pepper and serve.

1 lemon, juiced
1/4 cup white wine
1 pound Prince Edward Island Mussels
1/2 cup balsamic dressing
1 tablespoon minced fresh parsley leaves
1 teaspoon minced fresh thyme leaves
1 cup chopped sun-dried tomatoes
1 cup fresh spinach
1/4 cup crumbled feta cheese
1/2 cup cooked corn kernels
Salt and freshly ground black pepper

Steps:

  • In a large saute pan over medium-high heat, add lemon juice, white wine, and the mussels. Cook until the liquid dissolves. Reduce the heat to low, add balsamic dressing, parsley, thyme, and tomatoes. Continue to cook on low heat for 3 to 4 minutes, stirring to prevent the dressing from separating. Remove the pan from the heat, and allow the mussel mixture to cool. Add the mussels and sauce, the spinach, feta, and the corn to a large serving bowl. Season with salt and pepper, to taste, toss and serve.

3 pounds mussels, well scrubbed and with beards and barnacles removed
1/2 cup dry white wine
4 cups water
2 zucchini, about 3/4 pound, cut into 1/2-inch chunks
1/2 pound imported farfalle pasta (bow ties)
1 egg yolk
1 tablespoon Dijon-style mustard
2 tablespoons red or white wine vinegar
Salt and freshly ground pepper to taste
1 cup olive or corn oil
Pinch of cayenne pepper
4 tablespoons finely chopped shallots or scallions
1 tablespoon finely chopped garlic
2 ripe tomatoes, about 3/4 pound, peeled and cut into 1/2-inch cubes
1/2 cup coarsely chopped fresh basil leaves or Italian parsley

Steps:

  • Place the mussels in a saucepan and add the wine. Cover and cook over high heat, shaking the pan occasionally to redistribute the mussels, about 4 minutes or until all the mussels are opened.
  • Remove the mussels with a slotted spoon and set them aside to cool. Strain the broth. There should be about 2 1/2 cups. Reserve the broth. When the mussels are cool enough to handle, remove the meat and discard the shells.
  • Add the reserved broth and the water to a large saucepan or kettle. Bring to a boil and add the zucchini. Cook 3 minutes and remove the zucchini with a slotted spoon. Let cool.
  • Add the pasta to the saucepan, stir and bring to a boil. Cook 15 to 20 minutes or according to package instructions. It should be al dente. Drain well and let cool.
  • Meanwhile, put the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl. Beat the mixture with a wire whisk while slowly adding the oil a few drops at a time at first, then in a slow drizzle. When all the oil is incorporated, add the cayenne pepper, shallots and garlic and blend well.
  • Place the zucchini, tomatoes, pasta and mussels in a large bowl. Add the sauce and the basil. Toss well. Check the seasoning and serve.

6 tablespoons extra-virgin olive oil
1/4 cup fresh lemon juice
2 pounds mussels (preferably cultivated), cleaned but not steamed
1 fennel bulb (sometimes called anise; 1 pound), stalks discarded and bulb halved and very thinly sliced
1/2 cup finely chopped fresh flat-leaf parsley
1/3 cup brine-cured black olives, pitted and chopped
1 tablespoon drained bottled capers

a disposable aluminum baking pan (at least 1 inch deep)

Steps:

  • Cover potatoes with salted water by 1 inch in a large saucepan, then simmer, uncovered, until just tender, about 15 minutes. Drain in a colander and rinse under cold water until cool.
  • Prepare grill for cooking.
  • Cut cooled potatoes crosswise into thirds and arrange in 1 layer on a tray. Brush both sides of potatoes with some oil (2 tablespoons total for all of them) and season with salt and pepper.
  • When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill potatoes on lightly oiled rack until grill marks form, about 1 minute on each side, then transfer to a large bowl. Toss hot potatoes with 2 tablespoons lemon juice.
  • Put mussels in aluminum pan and cook in covered grill, stirring occasionally, 5 to 6 minutes, or until they just open. Transfer mussels to a bowl with a slotted spoon. Discard any that haven't opened, then shuck remainder.
  • Add mussels to potatoes along with fennel, parsley, olives, capers, and remaining 2 tablespoons lemon juice, tossing to combine, then let stand at room temperature, tossing occasionally, 10 minutes.
  • Toss salad with remaining oil and salt and pepper to taste.

1 tablespoon Dijon mustard
3 tablespoons small capers, drained

3 pounds mussels, steamed and shelled (about 1 pound of mussel meat)
3/4 pound thin asparagus, cleaned, steamed until crisp-tender and cut into 1-inch pieces
Chopped parsley, for garnish

Steps:

  • Place the potatoes in a large pot and cover with water. Bring the water to a boil over high heat, then add salt. Reduce the heat so the water is just simmering, and let the potatoes cook until just tender when a fork is inserted into the center, about 12 to 14 minutes. Drain and let them cool.
  • Combine the shallots, parsley, vinegar, mayonnaise and mustard in a medium-size bowl and mix well. Fold in the capers and season with salt and pepper.
  • Cube the potatoes, put them into a large bowl, and add about three-quarters of the dressing. Turn several times to mix well. Just before serving, add the mussels, asparagus and remaining dressing and toss again. Garnish with chopped parsley.

2 pounds waxy potatoes, cut into 1/2-inch cubes
1/2 cup dry white wine or water
1/2 cup chopped shallot or red onion
1/2 cup extra virgin olive oil, or more to taste
1/2 cup balsamic or sherry vinegar
Salt and freshly ground black pepper
1/2 cup chopped fresh parsley, dill, chives, or a combination

Steps:

  • Combine the mussels, potatoes, and wine or water in a broad, steep-sided skillet or casserole. Cover and turn the heat to high. When steam arises from the top, shake the pan once or twice and turn the heat to medium. Continue to cook until all the mussels open, checking after 5 minutes or so and then every couple of minutes. When the mussels are done, use tongs or a slotted spoon to transfer them to a plate; leave the potatoes in the skillet and re-cover.
  • Cook until the potatoes are almost tender, then remove the cover and turn the heat to high, cooking until most of the liquid evaporates and the potatoes are done. By this time, the mussels will be cool enough to remove from their shells; do so, putting them in a large bowl.
  • When the potatoes are done, add them to the bowl with the mussels and the shallot, oil, vinegar, salt, and pepper. Taste and adjust the seasoning as necessary. Serve immediately, an hour or two later, or cold, stirring in the herb(s) at the last moment.

2 cups cooked and quartered red bliss potatoes
1 head roasted garlic
1/2 cup sliced scallions green part only
1/2 cup shredded carrots
1/2 cup peeled and shredded green papaya
Aioli, recipe follows
Salt and freshly ground black pepper, to taste
12 mussels, steamed and removed from the shell
2 egg yolks*
1 tablespoon sambal
1 tablespoon chopped garlic
4 tablespoons freshly squeezed lime juice
3/4 cup canola oil

Steps:

  • In a large bowl mix together the potatoes, garlic, scallions, carrots, and green papaya. Add 4 tablespoons aioli and toss gently. Adjust seasonings with salt and pepper. Divide onto 2 salad plates and arrange 6 mussels on each plate
  • In a blender puree yolks with sambal, garlic, and lime juice. With the blender running, add canola oil in a stream and emulsify mixture.

12 small new or purple potatoes, scrubbed but not peeled
1/4 cup extra-virgin olive oil
3 cloves garlic, peeled and chopped
1 cup dry white wine
2 pounds mussels, scrubbed, beards removed
1 tablespoon herbes de Provence or 1/2 teaspoon each dried thyme, savory, basil and marjoram
1/4 cup chopped fresh Italian parsley or chervil
3 tablespoons chopped fresh chives
Dash of red pepper flakes
Salt and freshly ground black pepper to taste

Steps:

  • Put the potatoes in a large pot, and add enough lightly salted water to cover them by 2 inches. Bring to a boil, and boil gently, uncovered, until tender, about 15 minutes. Drain, and cut in halves or quarters. Keep warm in a large bowl.
  • In a large heavy skillet over medium heat, warm 1 tablespoon of oil. Add garlic, and saute for 2 minutes. Add wine, and bring to a rolling boil. Add mussels and herbes de Provence. Turn the heat down slightly, cover and cook just until mussels open, 3 to 5 minutes. Using a slotted spoon, transfer the mussels to a bowl. Discard any that did not open.
  • Line a fine-mesh sieve with cheesecloth, and strain juices into a small bowl. Return juices to the pan, and place over medium-low heat. Simmer until juices are reduced by half. Remove from heat, and whisk in the remaining 3 tablespoons oil.
  • Reserve 6 mussels in the shell, and shell the rest. Toss the shelled mussels with the potatoes and reduced pan juices. Sprinkle with the parsley or chervil, chives and pepper flakes. Season with salt and pepper. Arrange the reserved mussels on top. Serve warm.

1 tablespoon ground coriander
1 teaspoon turmeric

Juice of 1 lemon
2 tablespoons chopped cilantro leaves

  • Place onions and oil in a deep pot and cook, stirring over high heat until they turn light brown, about 5 minutes. Lower heat and stir in ginger, coriander, turmeric, and red pepper. Cook for an additional minute. Stir in the coconut, salt, and mussels, and bring contents to the boil. Cover the pot and steam until the mussels open up, about 7 minutes. Transfer mussels and the sauce to a deep platter. Sprinkle with lemon juice, coriander and, if desired, coconut. Serve immediately.;

1/2 cup zucchini in 1/4-inch dice
1/3 cup fennel in 1/4-inch dice
1/2 cup seeded ripe tomato in 1/4-inch dice
1 teaspoon chopped shallot
pinch cayenne
fine sea salt, to taste
freshly ground white pepper, to taste
1 teaspoon chopped fresh Italian parsley
2 tablespoons chopped fresh basil
1/2 clove garlic, peeled and split in half
1 teaspoon drained capers
4 imported black olives, pitted and diced
1/4 cup olive oil
1/4 cup extra-virgin olive oil
3 pounds mussels, steamed open and picked from shells

Steps:

  • Bring a pot of water to a boil and blanch the zucchini for 1 minute. Drain and refresh under cold running water. Drain again and place in a bowl with the fennel, tomato, and shallot. Season with cayenne, salt, and pepper. Add the parsley, basil, garlic, capers, olives, and olive oils. Mix well. Cover and refrigerate for at least 2 hours or up to 6 hours.
  • Arrange the mussels in a radial pattern in 4 shallow, oven proof bowls. (The mussels maybe arranged and refrigerated several hours before serving.)
  • To serve, preheat the oven to 400 degrees. Place the mussels in the oven just to warm them through, about 2 minutes. Using a slotted spoon, top the mussels with the vegetable mixture. Drizzle about 1 tablespoon of the oil from the mixture over each bowl. Serve immediately.

1/2 fennel bulb (sometimes called anise)
1 small vine-ripened tomato
1 medium zucchini
1 teaspoon chopped shallot
a pinch cayenne
fine sea salt
freshly ground white pepper
1/2 medium garlic clove
4 imported black olives
1 teaspoon chopped fresh flat-leafed parsley leaves
2 tablespoons chopped fresh basil leaves
1 teaspoon drained capers
1/4 cup olive oil
1/4 cup extra-virgin olive oil
3 pounds mussels (preferably cultivated)
1/3 cup water

Steps:

  • Trim fennel stalks flush with bulb, discarding stalks, and cut enough of bulb into 1/4-inch dice to measure 1/3 cup. Peel and seed tomato. Separately cut enough tomato and zucchini into 1/4-inch dice to measure 1/2 cup each. In a small saucepan of boiling water blanch zucchini 1 minute and drain in a sieve. Rinse zucchini under cold water to stop cooking and drain well.
  • In a bowl combine zucchini, fennel, tomato, shallot, and cayenne and season with sea salt and white pepper. Halve garlic and pit and chop olives. Add garlic and olives to vegetable mixture with parsley, basil, capers, and oils, stirring to combine well. Chill salad, covered, at least 2 hours and up to 6.
  • Scrub mussels and pull off beards. Heat a large heavy skillet over moderately high heat until hot and add water and half of mussels. Steam mussels, covered, 3 to 8 minutes, checking occasionally after 3 minutes and transferring them as they open to a bowl. Discard any unopened mussels. Repeat procedure with liquid remaining in skillet and remaining mussels.
  • Remove mussels from shells and divide among 4 shallow bowls. With a slotted spoon mound salad over mussels, tossing if desired. Drizzle each salad with 1 tablespoon dressing remaining in bowl.

SHRIMP AND MUSSEL SALAD WITH CABBAGE SLAW

They added cook time to prep time. The full prep time is 1.5 hours -- you prep some of the veggies while cooking seafood, and I gave ample time on all ends for logistics. Full prep time is no more than 1.5 hours. I just took this to a potluck (which had other salads) and at a potluck, this serves 15 people very well. If you can't find them, consider the nigella seeds optional -- they're also known as kalunji seeds, and they are a mild seasoning found in some Indian foods. Find something fun to substitute with, if you wish. Also: keep in mind that I don't tend to measure ingredients in this sort of recipe -- everything except the seafood (which came in packages with poundage labeling) is an eyeball approximation. I do try to eyeball correctly.

3 lbs mussels, in the shell
1/4 green cabbage
1/16 purple cabbage
1 cucumber
1/4 fennel bulb
1 small red onion
2 -3 tablespoons capers

1 1/2 lemons
1/8 cup apple cider vinegar
1/8 cup extra virgin olive oil

  • Bring hot water, sufficient to cover the shrimp, to boil. Drop in the shrimp. Leave in the hot water for no more than 90 seconds. Drain and run cold water over. Peel. (You can peel before you cook if you prefer. I tend to peel some while waiting on the water, and the rest after. You can even skip this step by buying pre-cooked shrimp, but I find they often taste a little funky.).
  • Bring hot water, sufficient to cover the mussels, to boil. Drop in the mussels -- there were enough of these that I divided the lot and did this step twice -- and let them cook. When foam starts rising, after about 3 minutes, you can reduce the heat to a strong simmer, and fish out (using tongs) the mussels whose shells are opening, and place in a separate bowl. By seven minutes, all the mussels that will open should have done so, unless your pot was too tightly packed. Run cold water over the retrieved mussels. Best is to put the mussels in a bowl that is directly under running cold water as you retrieve them. Discard any mussels that do not open. The opening size should be over 1/8th inch for it to count for something I'd serve to others, not to mention eat myself.
  • Remove mussels from their shells, and add to shrimp, and store, covered, in fridge.
  • Slice thinly: cabbages, onion, fennel bulb. Roughly chop shreds to smaller amounts.
  • If your cucumber is waxed, or if it has a thick skin, peel it. Otherwise you may optionally leave the skin on. Slice cucumber into very fine slices. Halve or quarter these, depending on the thickness of the cucumber.
  • Put the above vegetation into a large serving bowl.
  • Add the fresh parsley (don't stint, but I didn't measure it), chopped fine. Add the capers, the ground pepper and the nigella seeds. Make the nigella seeds, if you have them, a heaping tablespoonful.
  • Add the chilled seafood.
  • Dressing: the juice of 1.5 large lemons (slice lemons into segments and squeeze, removing seeds as you go). Add the vinegar and the olive oil, mix, and pour over your salad. Toss the salad up. Try to get everything coated, lightly. Feel free to add a little bit more of the oil and the vinegar, if you think this needs.
  • Optional garnish at the end: 1 tomato (from a roadside stand, a farmer's market, or your own garden, NOT the supermarket) sliced and laid invitingly atop the salad.

1 lb cleaned squid, bodies and tentacles separated but left whole
1 lb cultivated mussels
2 tablespoons cider vinegar
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1 teaspoon extra-virgin olive oil
1/4 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 large fennel bulb (sometimes called anise; 8 oz), trimmed, cored, and thinly sliced crosswise
1/2 medium red onion, thinly sliced
2 tablespoons chopped fresh flat-leaf parsley
12 Belgian endive leaves

Steps:

  • Plunge squid into a large saucepan of boiling water, then remove pan from heat and let stand, stirring once or twice, 1 1/2 minutes. Drain squid in a colander and cool. Cut squid bodies crosswise into thin slices and halve tentacles crosswise.
  • Scrub mussels and rinse well, then cook in a 5- to 6-quart heavy pot over moderately high heat, covered, until shells are opened, 4 to 6 minutes, checking frequently after 4 minutes and transferring mussels as opened to a bowl. (Discard any unopened mussels after 6 minutes.) Cool mussels, then remove from shells.
  • Whisk together vinegar, citrus juices, oil, garlic, salt, and pepper in a bowl and add squid, mussels, fennel, onion, and parsley, tossing to combine.
  • Serve salad on endive leaves.

1 teaspoon turmeric
1 teaspoon ground red pepper
1/2 cup rich coconut milk
Coarse salt to taste
4 pounds mussels (about 4 dozen), scrubbed clean
Juice of 1 lemon
2 tablespoons chopped cilantro leaves
2 tablespoons grated unsweetened coconut (optional)

Steps:

  • Place onions and oil in a deep pot and cook, stirring over high heat until they turn light brown, about 5 minutes. Lower heat and stir in ginger, coriander, turmeric, and red pepper. Cook for an additional minute. Stir in the coconut, salt, and mussels, and bring contents to the boil. Cover the pot and steam until the mussels open up, about 7 minutes. Transfer mussels and the sauce to a deep platter. Sprinkle with lemon juice, coriander and, if desired, coconut. Serve immediately.

1 head romaine lettuce
1 large carrot
2 large tomatoes
2 cups corn, cooked
1 avocado
1/2 cup oil and lemon dressing with herbs (or to taste)
3 eggs, hard boiled

Steps:

  • Soak mesquite chips in water for a few hours; heat them in a large Dutch oven or heavy roaster.
  • Meanwhile, scrub the mussels and place in a dish that fits inside the roaster.
  • When the chips smoke, place the mussels on top, splash water around for steam, cover tightly and heat for 2-3 minutes.
  • Remove from heat and leave covered for 1 hour.
  • Discard unopened mussels.
  • Shred lettuce; scrape carrot, cut in juliennes and blanch; peel, seed and dice tomatoes; peel and dice avocado; peel and slice eggs.

4 pounds mussels, well scrubbed
1/4 cup coconut milk
2 tablespoons freshly squeezed lime juice
2 to 3 tablespoons fish sauce, or to taste
Zest from one lime
1 to 2 fresh Thai chilies, minced
1 cup mung bean sprouts
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/2 cup fresh cilantro, chopped

Steps:

  • Put mussels in a large pot with a lid. Pour 1/4 cup water over all, cover, bring to a boil, then reduce heat to maintain a steady bubble (you will hear it and see some steam escaping). Shake pot now and then.
  • Meanwhile, combine coconut milk, lime juice, fish sauce, lime zest and chilies in a large bowl; add bean sprouts, cucumber and red pepper.
  • Mussels will be done in 5 to 10 minutes, or when all or most of the shells have opened. Remove and let cool slightly, reserving cooking liquid. (If there is a great deal, reduce it while you shuck mussels.)
  • When mussels are cool enough to handle, remove them from their shells and add them to bowl with vegetables and dressing. Add cilantro and as much of the reserved cooking liquid as you need to make mixture saucy. Toss well to combine, adjust seasonings and serve, or refrigerate for up to a few hours.
