Mushroom sauce can be done with any type of stock, but I used beef stock here since I'm going to be serving with meatloaf.

¼ cup butter
1 (16 ounce) package sliced mushrooms
salt to taste
¼ cup all-purpose flour, or as needed
1 quart beef stock
1 pinch ground black pepper to taste
1 pinch fresh thyme leaves, to taste

Steps:

  • Heat butter over medium heat in a saucepan until it foams. Stir in mushrooms. Season with salt. Simmer until liquid evaporates, about 20 minutes.
  • Stir in the flour, cooking and stirring for about 5 minutes. Add about 1 cup of beef stock, stirring briskly until incorporated, then pour in the remaining stock and mix thoroughly. Season with black pepper and thyme. Reduce heat to medium-low, and simmer until thickened, about 30 minutes, stirring often.

This mushroom gravy has an incredible depth of flavor and is delicious served over roasts, steaks, meatloaf, roast chicken, potatoes, Yorkshire puddings, vegetables and more!

Number Of Ingredients 14

2 tablespoons butter, bacon grease, lard or beef drippings
1 yellow onion (,finely chopped)
1 clove garlic (,minced)
16 ounces fresh mushrooms of choice (I used button mushrooms in the photos) (,cleaned and sliced)
1 tablespoon ground dried porcini mushrooms
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups strong beef broth
1 teaspoon dark balsamic vinegar
1/2 teaspoon sea salt plus more to taste
1/2 teaspoon sugar
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
Optional: For a creamy gravy, add a few tablespoons of heavy cream at the end

Steps:

  • Melt the butter (or bacon grease, lard or beef drippings - any of these will yield the most flavor) in a pan over medium-high heat and fry the onions until beginning to brown. Add the garlic and cook another minute.
  • Add the mushrooms and cook 7-8 minutes or until golden and the liquid from the mushrooms has evaporated. Add the ground porcini mushrooms and cook for another minute.
  • Add the butter and melt. Add the flour, stir to combine and cook for about 3 minutes, stirring continually. This will cook off the flour flavor and brown the flour to create more depth of flavor in the gravy.
  • Add the beef broth, vinegar, thyme, sugar, salt and pepper. Whisk continually until the gravy is thickened. Cover and simmer on low, stirring occasionally, for 5-10 minutes. Add salt and pepper to taste. If you prefer the gravy thinner add a little more water (or heavy cream if using).Note: To make this gluten free simply omit the step of adding the flour and then, at the very end after you've added the broth and seasonings, stir in a cornstarch slurry made with one tablespoon of cornstarch dissolved in 2 tablespoons of water and simmer for a minute until thickened.

Thick and rich mushroom sauce with red wine that goes great with beef, especially filet mignon. Serve in a gravy boat and use as a gravy on grilled steaks.

2 teaspoons minced garlic
½ teaspoon dried thyme
1 teaspoon salt
1 teaspoon ground black pepper
2 cups sliced button mushrooms
1 ½ cups Cabernet Sauvignon
1 cup beef broth
1 bay leaf
¼ cup water
1 tablespoon cornstarch

Steps:

  • Melt butter in a skillet over medium heat. Add garlic, thyme, salt, and pepper; cook until fragrant, about 30 seconds. Add mushrooms and saute until tender, about 5 minutes.
  • Add wine and beef broth and cook until sauce has reduced to about 3/4 of the original volume, about 20 minutes.
  • Mix water and cornstarch together in a bowl until smooth; add to the sauce. Reduce heat to medium-low and simmer until thickened, 2 to 3 minutes.

This is a rich, delicious sauce, full of umami flavor, for beef and venison steaks or roasts. It can be made with almost any type of edible mushroom species, and you can use them sliced or minced, according to your personal preference. Recipe may be doubled.

1/2 tsp olive oil
1/2 tsp butter
4 oz fresh mushrooms, sliced or minced
1/2 Tbsp shallots, finely minced
1/2 tsp garlic, finely minced or pressed
1/4 tsp salt
1/8 tsp black pepper, freshly ground
1 Tbsp flour
1 Tbsp cornstarch
1 can(s) beef broth
1 tsp soy sauce
1 tsp worcestershire sauce
2 - 3 pinch weber smoky truffle seasoning or similar (montreal steak seasoning, house seasoning etc...)

Steps:

  • 1. Add oil and butter to a skillet (I prefer nonstick;) place over medium/medium high heat.
  • 2. When butter has melted, add mushrooms; sautee 2-3 minutes, then add shallots, salt and pepper; sautee 3-4 minutes, then add garlic; sautee an additional 1-2 minutes.
  • 3. Temporarily remove from heat.
  • 4. In a bowl or large measuring cup, whisk together one tablespoon flour and one tablespoon cornstarch.
  • 5. Pour about 1/4 of the beef broth into flour mixture; whisk until thoroughly combined and no lumps remain; add remaining broth, whisking well.
  • 6. Return mushrooms to medium/medium high heat; add broth mixture, stirring constantly, cook until thickened, about 3 minutes.
  • 7. Lower heat; stir in 1 teaspoon soy sauce, 1 teaspoon worcestershire sauce and 2 or 3 pinches smoky truffle seasoning (or other similar seasoning.)
  • 8. Remove from heat, cover and keep warm until ready to serve.

PANTRY MUSHROOM GRAVY

1 can (4 ounces) mushroom stems and pieces
3 tablespoons butter
1/4 cup finely chopped onion or 1 tablespoon dried minced onion

1 teaspoon beef bouillon granules
1/8 teaspoon pepper
1/4 to 1/2 teaspoon browning sauce, optional

Steps:

  • Drain mushrooms, reserving liquid. Add enough water to mushroom liquid to measure 1-1/4 cups., In a small saucepan, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour, bouillon and pepper until blended. Add mushrooms. Gradually stir in mushroom liquid mixture. Bring to a boil, stirring constantly; cook and stir 2 minutes or until gravy is thickened. If desired, stir in browning sauce.

2 tablespoons extra-virgin olive oil, or more to taste
1 ½ cups sliced fresh mushrooms
1 small onion, thinly sliced
1 stick butter
1 tablespoon steak sauce
1 teaspoon Worcestershire sauce
salt and ground black pepper to taste

Steps:

  • Heat a large skillet over medium heat. Pour olive oil into the pan. When hot, add mushrooms and onion into the pan; saute until soft, 5 to 7 minutes. Add butter, steak sauce, and Worcestershire; cook until butter melts, about 2 minutes.
  • Reduce heat to low and simmer, uncovered, until everything is really soft, 15 to 20 minutes. Season with salt and pepper. Serve immediately over any type of steak.
