0.5 (15 ounce) container ricotta cheese
1 medium portobello mushroom
1 tablespoon fresh parsley, chopped
1/4 teaspoon salt
1/2 teaspoon italian seasoning
fresh ground pepper, to taste
1 (2 ounce) package miniature phyllo cups
1 1/2-2 ounces gouda cheese, shredded

Steps:

  • Preheat oven to 350°F.
  • Clean mushroom (remove stem and gills) and chop in roughly 1/8 inch pieces (does not need to be exact).
  • Combine ricotta, chopped mushroom, parsley, salt, Italian seasoning and pepper.
  • Fill mini shells with filling (they will be very full). Top each one with a little Gouda.
  • Cover a baking sheet with foil and spray with cooking spray. Place filled shells on baking sheet and bake for 10-15 minutes or until cheese is melted and filling is hot.
  • Let cool for 5 minutes before digging in!

11 tablespoons unsalted butter
2 tablespoons finely chopped fresh thyme, plus
1 1/2 teaspoons fresh thyme, plus more
fresh thyme, for garnish
12 sheets frozen 11 1/2-by-16-inch phyllo dough, thawed
1/4 cup minced shallot (2 shallots)
8 ounces assorted fresh mushrooms, wiped clean
coarse salt & freshly ground black pepper
4 ounces fresh goat cheese

Steps:

  • Preheat oven to 350ºF; with the rack positioned in the center.
  • Melt 8 tablespoons (1 stick) butter, and set aside.
  • Set 2 tablespoons of the thyme aside.
  • Brush a mini-muffin tin with melted butter, and set tin aside.
  • Place 1 sheet phyllo dough on a clean, dry work surface; brush the entire sheet generously with melted butter.
  • Sprinkle lightly with reserved thyme.
  • Place another sheet phyllo on top, brush with butter, and sprinkle with thyme.
  • Repeat with 2 more sheets phyllo.
  • Cut stack into twelve 3-inch squares.
  • Gently press each square into muffin-tin cup.
  • Bake until edges are just golden brown, 8 to 10 minutes.
  • Repeat step two with 4 more sheets phyllo dough, melted butter, and thyme.
  • Repeat again, for a total of 36 crisps. (The crisps may be made one day ahead and kept in an airtight container.).
  • In a large skillet, melt remaining 3 tablespoons butter over medium heat.
  • Add shallots, and cook, stirring occasionally, until soft, 3 to 5 minutes.
  • Stir in mushrooms, 1/2 teaspoon salt, 1/4 teaspoon pepper, and the remaining 1 1/2 teaspoons thyme.
  • Continue cooking, stirring often, until mushrooms have released some liquid and have cooked through, about 5 minutes.
  • Place 1/4 teaspoon goat cheese in the bottom of each phyllo crisp, and place 1 heaping teaspoon of the mushroom mixture on top of the goat cheese.
  • Transfer the filled cups to a baking sheet.
  • Cook in oven just until heated through, about 3 minutes.
  • Garnish with more thyme, and serve.

For an impressive dessert, try these flaky phyllo pastries, which are not at all difficult to make. Form little packages of phyllo leaves brushed with butter, add a smear of sweetened ricotta and top them with ripe figs cut into star shapes. Lightly sugared, baked and drizzled with honey, they are a cross-cultural pleasure, almost like a French tartlet, but with Middle Eastern undertones. Each pastry requires just one sheet of dough. Any remaining leaves can be carefully wrapped and refrozen.

1 cup ricotta
Zest of 1 lemon
1 tablespoon lemon juice
1/8 teaspoon almond extract
2 tablespoons sugar
6 sheets phyllo dough
1 1/2 sticks (12 tablespoons) unsalted butter, melted
12 ripe figs
Sugar for sprinkling
1/4 cup raw almonds, toasted and roughly chopped
1/4 cup warm honey for drizzling

Steps:

  • In a mixing bowl, combine ricotta, lemon zest and juice, almond extract and sugar. Stir well and set aside.
  • Lay 1 sheet phyllo dough horizontally on a flat surface. Brush lightly with butter. Fold phyllo in half, left to right, and brush the top lightly with butter. Then fold phyllo in half, top to bottom, and brush the top lightly with butter again. Fold once more, left to right. You should have a 4-by-6-inch rectangle. Brush top with butter and trim edges. Repeat with remaining 5 sheets phyllo, using 2 tablespoons butter per pastry. Lay pastry packages on a parchment-lined baking sheet and heat oven to 375 degrees.
  • Spread each pastry package with a generous tablespoon of ricotta filling. Snip stems from figs and open them into star shapes by cutting from stem end in quarters, nearly to the bottom of the fig. Top each pastry package with 2 figs. Sprinkle 1 teaspoon sugar over each package.
  • Bake for 15 minutes or until golden and crisp. Remove from oven, sprinkle with chopped almonds and drizzle lightly with honey. Serve at room temperature. If desired, cut pastries in half to make 12 small servings.

¼ cup butter
1 pound button mushrooms, stems trimmed
2 tablespoons red wine vinegar
1 cube beef bouillon, crushed
1 teaspoon minced garlic
1 tablespoon ricotta cheese

Steps:

  • Melt butter in a skillet over medium heat; cook and stir mushrooms until they begin to sweat, about 5 minutes. Add vinegar, beef bouillon, and garlic. Cook and stir mushroom mixture until bouillon is dissolved and mushrooms are lightly browned, 10 to 15 more minutes. Stir ricotta cheese into mushroom mixture and remove from heat.
