GRILLED FRENCH BREAD PIZZA WITH MUSHROOM PESTO AND FONTINA CHEESE



Grilled French Bread Pizza with Mushroom Pesto and Fontina Cheese image

Number Of Ingredients 12

1-ounce dried porcini mushrooms
1 pound cremini or white button mushrooms, stems removed
1/4 cup canola oil
Salt and freshly ground black pepper
Whole head roasted garlic, pulp removed
1/4 cup toasted walnuts
1/4 cup loosely packed fresh flat-leaf parsley
2 teaspoons fresh thyme leaves
3/4 cup extra-virgin olive oil
1/4 cup plus 2 tablespoons grated Pecorino Romano cheese
1 loaf French bread, about 24 inches long, sliced in 1/2 lengthwise
2 1/2 cups grated fontina cheese

Steps:

  • Place the porcini mushrooms in a bowl and cover with boiling water. Let sit until softened, 30 minutes.
  • Heat the grill to high.
  • Brush the cremini or white button mushroom caps with the canola oil and season with salt and pepper. Place the mushrooms on the grill, cap side down and grill until golden brown and slightly charred, 4 to 5 minutes. Turn the caps over and continue grilling until the mushrooms are cooked through, about 5 minutes longer. Remove from the grill, let cool slightly then coarsely chop.
  • Remove the porcinis from the soaking liquid and place in the bowl of a food processor with a few tablespoons of the soaking liquid. Add cremini mushrooms, garlic pulp, walnuts, parsley and thyme in a food processor and process until finely chopped. With the motor running, slowly add 1/2 cup of the olive oil and process until smooth. Add 1/4 cup of the Romano cheese and pulse a few times to incorporate. Season with salt and pepper.
  • Brush the bread on the cut side with the remaining 1/4 cup of olive oil and season with salt and pepper. Evenly spread the pesto over the cut side of each half of bread. Top the pesto with the fontina cheese, return to the grill, cheese side up, close the cover of the grill and cook until the cheese has melted, about 2 minutes. Remove from the grill and sprinkle with the remaining Romano.

1 ounce dried porcini mushrooms
8 ounces white button mushrooms, quartered
1/2 cup walnuts, toasted
2 garlic cloves
1 1/2 cups fresh Italian parsley leaves
3/4 cup olive oil
1/2 cup freshly grated Parmesan
Salt and freshly ground black pepper
36 slices (1/2-inch-thick) baguette bread

Steps:

  • Place the porcini mushrooms in a bowl of hot water; press to submerge. Let stand until the mushrooms are tender, about 15 minutes. Scoop out mushrooms, being carefully not to stir any dirt that may have sunk to the bottom of the water. Discard mushroom water.
  • Combine the porcini mushrooms, button mushrooms, walnuts, garlic, and parsley in a food processor and pulse until coarsely chopped. With the machine running, gradually add 1/2 cup of the oil, blending just until the mushrooms are finely chopped.
  • Transfer the mushroom mixture to a medium bowl. Stir in the Parmesan. Season the pesto with salt and pepper, to taste. If not using mushroom pesto right away, cover tightly with plastic wrap to prevent possible discoloration of mushrooms.
  • Preheat a grill pan to medium-high heat. Arrange the bread slices on pan, cut-side down. Brush the remaining 1/4 cup of oil over the bread slices. Cook until pale golden and crisp, about 5 minutes.
  • Alternatively, you can toast the bread in the oven. Preheat the oven to 375 degrees F. Arrange the bread slices on 2 heavy large baking sheet. Brush the remaining 1/4 cup of oil over the bread slices. Bake until pale golden and crisp, about 15 minutes.
  • Spread the mushroom pesto over the crostini. Arrange the crostini on a platter and serve.

4 tablespoons extra-virgin olive oil
a 10-ounce package fresh white mushrooms, chopped fine (preferably in a food processor)
1 tablespoon Worcestershire sauce
1 tablespoon medium-dry Sherry if desired
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/4 cup pine nuts
1/4 cup freshly grated Parmesan
1/2 cup packed fresh parsley leaves, washed well and spun dry
1 pound penne rigate (ridged penne) or other tubular pasta

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta.
  • Make pesto:
  • In a 10- to 12-inch non-stick skillet heat 1 tablespoon oil over moderately high heat until hot but not smoking and sauté mushrooms with Worcestershire sauce, Sherry, and salt and pepper to taste, stirring, until liquid mushrooms give off is evaporated and mushrooms begin to brown, about 10 minutes.
  • In a food processor purée mushroom mixture with garlic, pine nuts, Parmesan, and remaining 3 tablespoons oil. Add parsley and blend until parsley is chopped fine. Pesto keeps, surface covered with plastic wrap, chilled, 1 week.
  • Cook pasta in boiling water until al dente. Reserve 1 cup cooking water and drain pasta.
  • In a large bowl whisk together pesto and 2/3 cup reserved hot cooking water. Add pasta and toss well, thinning pesto, if necessary, with remaining reserved cooking water.

½ cup extra virgin olive oil, divided

½ teaspoon salt
1 tablespoon oil
1 lb mushroom, sliced
1 cup asparagus, cut in half
1 tablespoon garlic, minced

Steps:

  • Preheat oven to 400ºF (200ºC).
  • With a sharp knife, slice the squash in half. If the squash is too tough, puncture in several places forming a dotted line around the squash. Microwave for 3-5 minutes to soften. Allow to cool before cutting in half.
  • Scoop out the seeds, brush with oil, and sprinkle with salt, and pepper. Bake for 40-45 minutes, or until a fork can easily pierce the skin.

  • In the mushroom and asparagus pan combine "spaghetti" and pesto and mix. Return to the squash and serve with or without plates. Garnish with parmesan.

Steps:

  • Place the oven rack on the middle rung; preheat oven to 450 degrees F.
  • If your pizza crust is unbaked, pre-bake it for 5 minutes.
  • Combine the olive oil and pesto, then spread crust with the mixture.
  • Place eggplant and mushrooms evenly over the pesto, then sprinkle with the feta cheese.

Arugula Pesto

Steps:

  • Melt 2 tablespoons butter in heavy large skillet over medium heat. Add shallots, tomatoes, garlic, basil, 2 teaspoons thyme and rosemary; sauté 2 minutes. Add mushrooms; sauté until very tender, about 15 minutes. Remove from heat. Season with salt and pepper. Cool.
  • Preheat oven to 400°F. Butter baking sheet. Melt 3 tablespoons butter in small saucepan. Place kitchen towel on work surface. Top with 1 phyllo sheet (keep remaining phyllo sheets covered with plastic wrap and damp towel). Brush with melted butter. Top with phyllo sheet; brush with butter. Sprinkle with 1/2 teaspoon thyme. Fold short sides over filling; brush folded edges with butter. Using towel as aid and starting on long side nearer filling, roll up strudel jelly-roll style. 1 1/2 teaspoons honey

2 garlic cloves, minced
2 large eggs, beaten to blend
2 tablespoons finely grated parmesan cheese
2 tablespoons chopped basil
2 tablespoons chopped fresh Italian parsley
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup panko breadcrumbs, plus additional for coating (Japanese breadcrumbs)
1/4 cup pine nuts or 1/4 cup cashews, toasted
1 cup coarsely chopped avocado (from 2 large avocados)
1/4 cup finely grated parmesan cheese
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh Italian parsley
2 teaspoons fresh lime juice

1/2 of a whole wheat baguette
1 1/2 cups wild mushrooms, cleaned and sliced
1/4 cup prepared pesto sauce
2 tablespoons extra virgin olive oil
1 teaspoon garlic, minced
2 tablespoons of freshly grated parmesan cheese

Steps:

  • Heat olive oil in a large skillet.
  • Add garlic and saute for 2-3 minutes until brown over medium-high heat.

4 boneless skinless chicken breast halves
Salt and pepper to taste
5 tablespoons olive oil
1 cup loosely packed fresh basil leaves
1/2 cup chopped walnuts
2 garlic cloves, minced
1/2 teaspoon salt
1/3 cup grated Parmesan cheese
4 slices part-skim mozzarella cheese
1 cup sliced fresh mushrooms

Steps:

  • Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. In a large skillet, cook chicken in 1 tablespoon oil for 5-10 minutes on each side or until juices run clear., Meanwhile, for pesto, combine the basil, nuts, garlic, salt and Parmesan cheese in a blender or food processor; cover and process until well blended. While processing, gradually add remaining oil in a stream. Spoon over chicken. Top each with a slice of mozzarella. Sprinkle mushrooms around chicken. Cover and cook for 5 minutes or until cheese is melted and mushrooms are tender.

3 pounds russet potatoes; peeled and cut into quarters
2 cups flour
1 egg
1/3 cup Parmesan
1/3 cup chopped chives
1/3 cup chopped basil
1/3 cup chopped cilantro
Salt and pepper
1/2 cup extra virgin olive oil, plus more, to cook
Mushroom Ragout, recipe follows
2 tomatoes, cut into small dice
Lemon zest
Asian Hazelnut Pesto, recipe follows
3 tablespoons butter
1 tablespoon finely chopped garlic
4 large shallots, thinly sliced
1 cup chanterelle, hedgehog, or lobster mushrooms
1 cup small fresh shiitake caps
1 cup quartered button or cremini mushrooms
1 cup Chinese dried black mushrooms, soaked in a bowl of warm water to soften, about 20 minutes, stemmed and quartered
Salt and pepper
1/2 cup dry red wine
1/2 cup chicken stock
1/2 cup veal demi-glace, or 1/2 cup chicken stock mixed with 1 tablespoon soy sauce
1 tablespoon dark soy sauce
1/2 tablespoon chopped fresh thyme, or 1/2 tablespoon dried
1 cup hazelnuts
4 cloves chopped garlic
1 cup roughly chopped cilantro leaves
1 cup roughly chopped mint leaves
1 cup roughly chopped Thai basil leaves
1 cup extra-virgin olive oil
3 lemons, juiced
Salt and pepper
6 cups chicken stock
1/2 cup leftover pesto
1 package thin square wontons
1 1/2 cups cold mushroom ragout, roughly chopped
12 cilantro or small basil leaves
Egg wash
2 cups chiffonade spinach,(1/8th inch thick slices)
2 tomatoes, cut small dice
Salt and pepper
2 lemons, juiced

Steps:

  • Fill a saucepan with enough salted water to cover the potatoes and bring to a boil. Reduce the heat to medium and continue to cook uncovered until they are soft, about 30 minutes.
  • Drain the potatoes from the pot and pass them through a ricer, onto a clean cutting board. Prepare a large stockpot with about 6 quarts of salted water and bring to a boil. Fill a bowl with ice water and keep in close proximity to the stockpot.
  • Form a well in the middle of the potatoes and scatter with the flour. Add the egg to the middle of the well and mix with a fork. As you are mixing, add the cheese, chives, basil, cilantro, salt and pepper. Work the mixture until it reaches a smooth consistency. Knead the dough until it is dry enough so that it does not stick to the cutting board. Be careful not to overwork the dough.
  • Place the dough into a pastry bag with a 1/2-inch tip and press out bite-sized pieces. Place the pieces on a tray lined with parchment paper, making sure that they do not stick together. Return to the stockpot and in small batches, drop the gnocchi into the boiling water. When the gnocchi float to the top, transfer them to the bowl of ice water to stop the cooking. Remove the gnocchi from the ice water and place them into a clean pan. Drizzle with the olive oil to prevent the gnocchi from drying out.
  • When ready, heat a large saute pan over high heat. Add the oil and swirl to coat the bottom of the pan. When the oil shimmers, add about 20 of the gnocchi and quickly sear, about 2 minutes on each side. Remove the gnocchi using a spatula and allow them to drain on a paper towel.
  • Plating: Portion out the gnocchi and place them in the center of the plate. Place the mushroom ragout on top of the gnocchi and sprinkle with the tomatoes and the lemon zest. Drizzle the Asian pesto around the outside of the plate.
  • Heat a heavy medium saucepan over medium heat. Add 1 tablespoon of the butter and swirl to coat the bottom of the pan. Add the garlic and shallots and saute, stirring until soft, about 5 minutes. Add all the mushrooms and saute until soft, 8 to 10 minutes. Season with salt and pepper, to taste. Add the wine, stir, and cook until the wine is reduced by half, about 5 minutes. Add the stock, demi-glace, dark soy sauce, and thyme, and simmer until reduced by half, about 25 to 30 minutes. Stir in the remaining 2 tablespoons of butter and correct the seasonings. Set aside.
  • In a food processor, combine the hazelnuts, garlic, cilantro, mint, Thai basil, olive oil lemon juice, salt and pepper. Puree for about 2 minutes or until all the ingredients are incorporated.
  • In a saucepan, heat the stock and whisk in the pesto. Check for seasoning. Meanwhile, lay out 12 wonton skins and place a small mound of the ragout in the center. Top with basil or cilantro leaf. Egg wash the perimeter of each wonton and top with second skin. Press down hard on all sides to seal. In a large pot of boiling, salted water, blanch the raviolis for only 3 to 4 minutes until the skins become translucent.
  • Plating: In 4 large soup plates, place a small mound of spinach with the tomatoes and season with salt, pepper, and lemon juice. Place 3 raviolis on top and ladle in the hot broth. Serve with crusty bread.

2 red bell peppers
2 garlic cloves
2 T milk
1.5 tsp honey
Mushroom Cakes:
2 T butter
2 T olive oil
16 oz sliced button mushrooms
2 large portobellas
8 oz shitakes
2 garlic cloves, minced
2 eggs, beaten
2 T grated parmesan
2 T basil, chopped
2 T parsley, chopped
1 t salt
0.5 t black pepper
0.5 cup panko
Avocado Pest0:
0.25 cup pine nuts
2 mashed avocados
0.25 cup grated parmesan
2 T cilantro
1 T parlsey
lime juice
0.25 + 2T olive oil
1 T butter

Steps:

  • Red Pepper Coulis: Char peppers in broiler until blackened and seal in paper bag for 15 minutes. Peel and seed pepper. Blend. Place garlic cloves in small dry skillet. Cover. Cook over med heat until brown and tender, shaking skillet occastionally. Cool. Peel. Add to blender. Add milk and honey. Puree. Mushroom Cakes: Melt butter with oil in heavy large skillet, medium high heat. Add mushies, cook for 14 minutes. Add garlic, cook 1 min. Put mixture in processor. Add eggs, parm, herbs, salt and pepper. Chop. Transfer to large bowl, mix in 0.5 cup panko. Divide into 8 portions, make cakes. Coat cakes with panko. Place on rimmed baking sheet. Preheat oven to 300. Melt butter with oil in large skillet over medium heat. Add cakes. Cook 5 min per side. Transfer to baking sheet. Place in oven to keep warm. Avocado pesto: Mix all ingredients in processor. Serve pesto. Place cakes on top, and drizzle with coulis.

1/2 large onion, sliced

2 ounces crumbled goat cheese

  • Preheat oven to 425 degrees.

This is a recipe that I found online. I have modified this recipe slightly by adding bacon, mushroom and sunflower seed. It works equaly well with chorizo instead of bacon. Sunflower seed is optional, it gives a bit of texture to the dish.

340 g penne pasta
4 slices bacon
1/2 cup mushroom, sliced
20 g sunflower seeds
1 (240 g) jar sun-dried tomatoes packed in oil
4 garlic cloves
salt & freshly ground black pepper
1 cup fresh basil leaf
1/2 cup parmesan cheese, grated

Steps:

  • Cook the pasta as directed on the package. Drain and reserve 1 cup of the cooking liquid.
  • Chop bacon, fry gently in a frying pan.
  • Add mushrooms.
  • Blend the sun-dried tomatoes and their oil, garlic, and basil in a food processor and blend until the tomatoes are finely chopped.
  • Transfer the tomato mixture to a large bowl. Stir in the Parmesan.
  • Add the pasta, mushrooms and bacon to the pesto and toss to coat, adding enough reserved cooking liquid to moisten.
  • Season the pasta, to taste, with salt and pepper and serve.

2 slices whole wheat country bread or 1 5-inch square focaccia, sliced in half laterally
1 heaped tablespoon parsley pesto (see recipe)
1/4 cup sautéed mushrooms (see below)
3/4 ounce Gruyère cheese, cut in thin slices (I use a cheese slicer)
2 to 3 tablespoons blanched kale
1/2 ounce baby arugula or wild arugula tossed with 1/2 teaspoon vinaigrette

Steps:

  • Spread the bottom slice of bread with parsley pesto. Top with the sautéed mushrooms and top the mushrooms with the kale. Lay the cheese over the kale. Place both slices of bread in a toaster oven and toast until the cheese melts, about 3 minutes. Remove from the toaster oven, top the melted cheese with the arugula, place the top slice of bread on top, press down hard, cut the sandwich in half, and serve.
