1 tbsp olive oil
handful button or chestnut mushrooms, sliced
25g vegetarian cheddar, grated
small handful parsley leaves, roughly chopped
2 eggs, beaten

Steps:

  • Heat the olive oil in a small non-stick frying pan. Tip in the mushrooms and fry over a high heat, stirring occasionally for 2-3 mins until golden. Lift out of the pan into a bowl and mix with the cheese and parsley.
  • Place the pan back on the heat and swirl the eggs into it. Cook for 1 min or until set to your liking, swirling with a fork now and again.
  • Spoon the mushroom mix over one half of the omelette. Using a spatula or palette knife, flip the omelette over to cover the mushrooms. Cook for a few moments more, lift onto a plate and serve with oven chips and salad.

2 eggs, large
2 tablespoons button mushrooms, chopped
5 onions, sweet, mini, chopped (Pyaj)
1/2 teaspoon salt (or to taste)
1/2 teaspoon white pepper
2 tablespoons butter
1/8 teaspoon mustard powder (ground mustard)

Steps:

  • Beat the eggs thoroughly along with the salt, pepper, mustard powder and the chopped onions.
  • Heat a little of the butter in a pan and add the washed and sliced button mushrooms.
  • Toss in the butter for 2 minutes, remove the mushrooms and keep aside until needed.
  • Melt the remaining butter in a non stick pan over a medium flame and add the beaten eggs to it.
  • Spread evenly around the pan and sprinkle the mushrooms on top.
  • When one side is cooked slowly fold the omelette into half with a wooden spoon.
  • Remove from the flame and serve hot.

  • Beat eggs, add mushrooms and ham.

  • Add egg mixture to hot pan and cook until almost set. Flip over and when egg is set, top with cheese. Cook until cheese is melted.

The measurements for this recipe are guesstimates as I don't generally *measure* when I'm cooking, so it may be necessary to add more or less for personal preference. I also only used enough dried green pepper for one omelette, as my dad can't eat them!! So if it is desired for both, the amount will have to be increased. (If you can't find dried, chopped regular would also work fine, but might be easier to mix with mushrooms).

2 (10 ounce) cans mushrooms, drained
1 small onion, sliced
1 tablespoon olive oil
1 teaspoon butter
1/3 teaspoon garlic powder

Steps:

  • Mushrooms:.
  • On med-high heat combine butter and olive oil in frying pan and allow butter to melt.
  • Sauté onions until tender. Add mushrooms, salt, pepper, garlic powder and chives. Saute until heated through and mushrooms have reduced slightly.
  • Set aside in bowl.
  • Omelette:.
  • Break two eggs into a bowl and whisk. If desired, add dried green pepper flakes to the egg mix before cooking.
  • Melt 1 tsp butter in pan. Add beaten eggs and let cook on one side.
  • When eggs have almost completely set up, flip the omelette over to allow for browning on other side.
  • As soon as it is flipped, sprinkle one half of the omelette with half of the cheddar cheese and top with half of the mushroom mixture. Fold omelette in half, covering mushrooms. Slide onto a plate and enjoy.

Tasty, easy, economical appetizer. They seem to disappear quickly too. In this recipe I have used chicken that I minced very finely.A small half breast skinless will do the trick. You could substitute leftover meat, fish or seafood for the chicken . I have put the chili sauce and ginger as optional but I recommend that you use both as they give that final flavor burst. Serve at room temperature . You may make these several hours ahead,store them in the fridge bring out 45 minutes before serving. The recipe can be doubled or tripled.

2 tablespoons vegetable oil
4 ounces finely minced chicken
2 garlic cloves, smashed
3 tablespoons onions, finely minced
1/2 teaspoon powdered ginger
2 tablespoons light soy sauce
1/4 teaspoon chili flakes
1/4 cup shiitake mushrooms, dried or 1/4 cup fresh portabella mushroom, minced
3 tablespoons white wine
2 tablespoons lemon juice
1 egg white
2 eggs
1 teaspoon water
1 teaspoon cornstarch
salt
12 pieces of soft crystallized ginger, 1/4 inch each (optional)
sweet hot chili sauce (You just need a small dab per piece) (optional)

Steps:

  • Add dried Shitake mushrooms to boiling water & simmer 1 minute remove from heat and let them sit for ten minutes, drain and chop finely.
  • In a fry pan saute the minced chicken & garlic until cooked and the chicken is lightly browned , make sure the chicken is well separated.
  • Add Ginger, Soy, Chili Flakes, reconstituted, chopped mushrooms (or fresh chopped), wine & lemon juice.
  • Simmer until the moisture has evaporated - set aside to cool.
  • Meanwhile whisk the 2 eggs with the water & cornstarch.
  • Whip the egg white until it forms soft peaks.
  • Mix the egg white with the cooled chicken mixture,.
  • Fold the chicken mixture into the whisked eggs.
  • Heat a no stick omelette pan over medium high heat.
  • Pour in half of the mixture and tilt the pan so you have as thin a layer as possible, cook until bubbly on top.
  • It should be almost totally cooked.
  • Tilt the pan and pick up an edge of the omelette & roll it into a jellyroll.
  • Leave over heat turning the roll to finish heating through for another minute, remove roll to a plate.
  • Cook second omelette.
  • Insert 6 toothpick in each roll about 3/4" apart and slice between them giving you 4 small end pieces (for the cook) and 12 pieces to serve.
  • Place each piece rolled side up on a serving platter, put a dab of chili sauce on top of each and a piece of ginger Serve at room temperature.

1/2 cup mushroom, thinly sliced
3 egg whites (I measure 6 tablespoons because I always have a carton of egg whites in the fridge)
1/2 cup fresh spinach, lightly chopped
salt & freshly ground black pepper

Steps:

  • Spray 6" or 8" good quality nonstick pan with spray. Heat over low-medium heat, no hotter. Add mushrooms to pan, spreading evenly in pan. Slowly pour egg whites over mushrooms and then sprinkle with spinach. Cover with lid.
  • Let sit for about 10 minutes. Occasionally check to see when egg whites are no longer runny on top of the omelette.
  • When set, tip omelette onto plate while folding in half. Sprinkle with salt and pepper to taste.

2 tomatoes , halved
3 medium eggs
1 tbsp snipped chive
300g chestnut mushroom , sliced
1 tsp unsalted butter
2 tbsp low-fat cream cheese
1 tbsp finely chopped basil leaves

Steps:

  • Heat the grill to its highest setting and place the tomatoes on a square of foil underneath, turning occasionally to prevent burning. When the tomatoes are slightly scorched, remove from the grill, squashing them slightly to release the juices.
  • Break the eggs into a bowl and mix with a fork. Add a small splash of water and mix. Add the chives and some black pepper, and beat some more. Set aside while you prepare the mushrooms.
  • In a non-stick frying pan, heat the butter over a medium heat until foaming. Add the mushrooms and cook for 5-8 mins until tender, stirring every few mins. Remove and set aside.
  • Briskly stir the egg mixture, then add to the hot pan (tilting it so that the mixture covers the entire base) and leave for 10 secs or so until it begins to set. With a fork, gently stir the egg here and there so that any unset mixture gets cooked.
  • While the egg mixture is still slightly loose, spoon the mushroom mix onto one side of the omelette, and top with the cream cheese and basil leaves. Flip the other side of the omelette over to cover, if you like. Leave to cook for 1 min more, then cut in half and slide each half onto a plate. Serve immediately with the tomatoes on the side.

4 white mushrooms
1/2 small white onion
1 teaspoon minced garlic
2 slices American cheese
3 eggs
1 1/4 tablespoons butter
1 teaspoon basil
1 pinch table salt
1 pinch black pepper

Steps:

  • Cut mushrooms into slices of desired size.
  • Chop small white onion into pieces.
  • Melt 1/4 tablespoon butter in a small pan over medium heat. When the melted butter has coated the pan, add the mushroom slices and onions. Sprinkle the basil over the ingredients in the pan and stir. Saute over medium heat until the mushrooms start to turn brown on the edges, about 10 minutes. When done, put to the side.
  • While the mushrooms and onions are cooking, break the eggs into a mixing bowl and add the pinches of salt and pepper. Using a fork, wisk the eggs until the yolk is just mixed with the whites.
  • THE NEXT STEPS MUST BE DONE AFTER PREPARATION IS COMPLETE, AS IT GOES VERY QUICKLY (< 1 MINUTE).
  • On high heat, melt a table spoon of butter in a pan that has a cooking surface of about 7 inches in diameter.
  • When the butter stops foaming and is about to turn brown, add the egg mixture into the pan.
  • Quickly, whisk the egg in the pan until it looks like a broken custard material. Add the cheese and mushroom/herb mixture from before and let cook for another 10 to 15 seconds.
  • Use the fork to make sure the omelette didn't stick to the pan.
  • Use the fork to flip the edge of the omelette up, and hold the pan at 45°. Use the fork and the pan itself to make the omelette roll down on itself. This technique is tricky and requires some practice, but if done right, the omelette can just roll onto a plate.
  • Garnish with parsley if desired.
  • *NOTE* - I use American cheese because it melts fast, but it is entirely possible to use other types of cheese, but take a grater to it first. Enjoy!

1/4 c mushrooms, diced small
1/2 c swiss cheese, shredded
6 slice bacon

Steps:

  • 1. Cook bacon crisp. Crumble. Set aside.
  • 2. In bacon grease, cook mushrooms 3 minutes. Remove and set aside.
  • 3. Heat nonstick skillet. Beat 2 eggs. Pour into skillet.
  • 4. As the egg sets, sprinkle one half/side of the egg with 1 Tbsp, bacon, 1 Tbsp. mushrooms, 2 Tbsp cheese.
  • 5. Fold the empty side of the egg over the fillings.
  • 6. Repeat steps three more times. Yields 4 omelettes.

MUSHROOM & PARSLEY OMELETTE

This is from "The Best Traditional Recipes of Greek Cooking". I have posted it as writted in the book, but when I made them, instead of frying them on both sides, I fried them until they were cooked on the bottom and almost set, then placed them under the grill to set the top. I used cheese kransky for the sausages (simply because I had them on hand), which worked well. I would love to try it with Greek sausages or chorizo next time. This was a very filling, tasty brunch, and it was easy to adapt to the number of servings we needed.

400 g mushrooms, sliced
400 g sausages
4 tablespoons parsley, finely chopped
300 g olive oil
salt

parsley, extra for serving

Steps:

  • In a frying pan, heat 2TB of oil, add the mushrooms and parsley and saute for about 5 minutes over medium heat.
  • Then, beat 3 eggs in a bowl. Add 1/4 of the mushroom and parsley mixture and season with pepper and salt.
  • In another frying pan, heat 2 TB of oil. Add the egg mixture, 1/4 of the sausage slices, and some more parsley.
  • Stir a little and let the omelette fry on both sides.

80 ml hoisin sauce
1 teaspoon sesame oil
4 eggs
80 ml water
60 ml peanut oil
500 g swiss brown mushrooms, thinly sliced
1 bunch gai lan, ends trimmed, cut into 6cm lengths (Chinese broccoli)
80 g bean sprouts, trimmed

Steps:

  • Combine the hoisin sauce and sesame oil in a small bowl.
  • Whisk together eggs and water in a jug. Heat 2 teaspoons of peanut oil in a wok over high heat. Add one-quarter of egg mixture, tilting wok to cover base and side. As omelette sets, lift edge so that any uncooked egg runs underneath. Cook for 2-3 minutes or until just set. Slide onto a plate and cover. Repeat, in 3 more batches, with 6 teaspoons of oil and the remaining egg mixture, reheating the wok between batches.
  • Heat remaining peanut oil in wok over medium heat. Add mushroom and cook, stirring, for 2-3 minutes or until tender. Add the gai lan and cook, stirring, for 1-2 minutes or until gai lan just wilts.
  • Divide omelettes among serving plates. Place one-quarter of bean sprouts on half of each omelette. Top with the mushroom mixture. Fold in half to enclose the filling. Drizzle over hoisin sauce mixture to serve.

6 eggs
1/4 cup milk (i use 2%)
1/4 teaspoon salt
2 tablespoons vegetable oil
1 sweet red pepper, chopped
2 cups sliced mushrooms
1 tablespoon fresh thyme, chopped or 1/2 teaspoon dried thyme
1/4 teaspoon pepper
2 green onions, sliced
2/3 cup cheddar cheese, shredded

Steps:

  • Line bottom of 13 x 9 inch metal cake pan with parchment or waxed paper; grease paper and sides of pan.
  • Set aside.
  • In bowl, whisk together eggs, milk and salt, pour into prepared pan.
  • Bake in 400f degree oven for 10 minutes or until centre is firm when touched.
  • Meanwhile, in nonstick frypan, heat oil over medium high heat; cook red pepper, mushrooms, thyme and pepper, stirring often, for 5 minutes or until mushroom liquid has evaporated.
  • Stir in onions.
  • Invert egg onto work surface; peel off paper.
  • Sprinkle with half of the cheese; spread mushroom mixture over top.
  • Starting at narrow end, roll up jello roll style.

200 g mushrooms
60 g unsalted butter
1 garlic clove, finely chopped
sea salt
black pepper
1 tablespoon finely chopped parsley
6 eggs, lightly beaten

Steps:

  • slice or quarter mushrooms.
  • heat 25g butter add mushrooms and cook until not moisture in pan.
  • strain mushrooms returning any juices to pan and saute garlic for 30 seconds.
  • then add mushrooms and toss
  • season and add parsely.
  • keep warm.
  • whisk egg lightly and season.
  • in 26 cm pan heat all but 1 teaspoon remaining butter moderate heat until foaming.
  • tip in egg and tilt so covers pan.
  • drag cooked edges to centre with wooden spoon and tilt pan to allow egg to run to edges.
  • sppon mushrooms into centre give it 30 seconds.
  • push pan away from you causing omlette to start to flip and finish flip with spatula.
  • skim browned surface with last teaspoon butter and divide at table.

  • Preheat the oven to 190C/Gas 5. Cut the potatoes into chunky, even-sized chips and place in a large pan of lightly salted boiling water. Boil for 6-7 minutes, then drain thoroughly. Return to the pan, replace the lid, and shake to roughen the edges of the chips (this helps them to crisp up during baking).
  • Line a baking sheet with nonstick baking parchment and spread out the chips. Spray with oil and sprinkle with sea salt. Place in the oven and bake for 15-20 minutes, or until the chips are crisp and golden.
  • About 5 minutes before the chips are ready, gently beat the eggs together with the herbs and water. Season well.
  • Spray a medium, non-stick frying pan with a thin coating of oil and place over a high heat. When hot, pour in the egg mixture and cook for 1-2 minutes. As the egg begins to set around the edges, add the cooked mushrooms and use a spatula to push the egg towards the centre. When the entire egg mixture is set, cook for another minute, then loosen the edges with a spatula and fold the omelette in half. Serve with the chips and grilled tomatoes.

1 cup hard cheese, grated

Steps:

  • Heat half the oil in a pan, add the mushrooms and cook for 5 minutes until brown. Set aside.
  • Heat the rest of the oil in the same pan and add the beaten egg, let sit until the egg starts to set then sprinkle on black pepper, mushrooms, cheese and parsley and let stand for another 3 minutes or until egg is cooked through.
  • Fold in half and serve.

Steps:

  • In an oven-proof frying pan, lightly fry the mushrooms in butter , then remove from the heat and set aside
  • Whisk the eggs with the seasoning and the milk, then heat some butter in the pan and add the egg mixture to it
  • When the base of the omelette is turning golden,scatter the mushrooms and parsley over the omelette
  • Place the omelette under the grill for 2 minutes until the egg has set, fold over and then serve for a delicious breakfast!

Awesome for comfort food when you have the house to yourself. Be careful not to over-spice (especially if you use freshly cracked peppercorn)!!! Less is more! I used the peppercorn and it ended up being WAY too much, even though it didn't look like it when it was in the bowl before I cooked it. If you want to opt for less cholesterol, try using 3 egg whites instead of 2 whole eggs.

salt and pepper (or freshly cracked peppercorn)
1 pinch garlic powder
1 pinch tarragon
2 pinches sweet basil
2 ounces mushrooms (fresh or canned)

Steps:

  • Set burner to medium to medium high (depending on your preference).
  • Whisk eggs in a small bowl.
  • Whisk in remaining ingredients.
  • If burner is on medium, pour the eggs onto the pan first.
  • If burner is on medium high, whisk in mushrooms before pouring onto pan.
  • Flip omelette constantly so mushrooms don't burn.
  • Use your better judgement as to when the omelette is ready (all ovens are different). My omelette took a little under 2 minutes on medium high.
