12 thick slices white bread, cut into 1 inch cubes
¼ cup crumbled cooked bacon
2 cups shredded Cheddar cheese
1 ½ cups chopped fresh mushrooms
12 eggs
2 ½ cups half-and-half
1 teaspoon Dijon mustard

Steps:

  • Toss cubed bread with bacon, cheese, and mushrooms, and pour into a 9x13 inch baking dish. Whisk together eggs, half-and-half, and mustard until smooth, then pour evenly over cubed bread. Cover dish with plastic wrap, and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and bake strata in preheated oven until the top is golden brown, and the eggs are set, about 1 hour. Let stand for 10 minutes before serving.

1 tablespoon bacon grease
1 (1 pound) loaf day-old bread, cubed
12 large eggs
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper
1 pinch freshly grated nutmeg
2 ½ cups heavy cream
1 pound sliced bacon, cut crosswise into 1/2-inch strips
1 pound fresh spinach, wilted, squeezed dry
12 ounces shredded extra-sharp Cheddar cheese, divided

Steps:

  • Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
  • Place bread cubes in a large mixing bowl.
  • Crack eggs into a separate mixing bowl. Season with salt, pepper, cayenne, and nutmeg. Add cream and whisk mixture thoroughly.
  • Pour egg/cream mixture over the bread cubes and mix to distribute ingredients evenly. Allow bread mixture to sit about 15 minutes to absorb the liquid.
  • Transfer half of the bread mixture to the baking pan; spread evenly over the bottom and press mixture down a bit. Top with half of the grated Cheddar cheese. Add cooked bacon pieces in an even layer over the cheese. Place the cooked spinach over the bacon; top with half of the remaining cheese. Finish with the rest of the soaked bread cubes, spread evenly and pressed down slightly. Sprinkle with the rest of the grated cheese. Cover and let strata sit at room temperature for 1 hour before baking.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake strata in preheated oven until set, about 45 minutes. Optionally, you can broil the strata for a minute or two to brown the top.

This fluffy vegetarian strata boasts earthy sauteed mushrooms, nutty Swiss cheese, and fresh thyme, along with a little bacon on top, just for the meat-eaters. You make it the night before, so all you have to do Christmas morning is pop it in the oven!

1 tablespoon olive oil
1 cup chopped onion
2 cups sliced white button mushrooms (8 ounces)
6 large eggs
2 cups whole milk
2 teaspoons chopped fresh thyme plus additional sprigs for garnishing (or 1/2 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 slices plain white sandwich bread (crusts trimmed)
2 cups grated Swiss cheese (8 ounces)
1 slice of thick-cut bacon (cooked, drained, and chopped)

Steps:

  • In a medium saute pan, heat the olive oil and saute the onion and mushrooms until soft, about 5 - 6 minutes. Set aside.
  • In a medium bowl, whisk together the eggs, milk, thyme, salt, and pepper until well-beaten.
  • Spray an 8-inch x 8-inch x at least 2-inch deep baking pan/casserole dish with non-stick cooking spray (or grease with butter).
  • Lay four bread slices on the bottom of the pan.
  • Sprinkle bread with 1/2 of the sauteed vegetables.
  • Add 1/2 of the cheese.
  • Pour half of the egg mixture over the top.
  • Add the remaining four slices of bread in a single layer, then the veggies, then the cheese. Pour the remaining egg mixture over the top.
  • Cover tightly with plastic wrap or aluminum foil and refrigerate overnight, or for at least three hours.
  • In the morning, uncover and bake at 325 degrees for about 50 minutes, until the strata is set (it will no longer jiggle in the middle).
  • Let cool for about 10 minutes, then serve.

½ cup diced fresh mushrooms
½ cup chopped green bell pepper
16 ounces Cheddar cheese, shredded
½ cup chopped onion
2 cups cubed cooked ham

  • Grease a 9x13 inch baking dish. Layer half of the torn bread in the bottom of the dish. Sprinkle the mushrooms and green bell pepper evenly over the bread layer. Sprinkle with half of the cheese. 1 medium onion, chopped (1/2 cup)
1 clove garlic, minced
2 tablespoons margarine or 2 tablespoons butter
4 cups assorted sliced fresh mushrooms (such as oyster, shiitake, button, white, and/or crimini)
1/2 cup shredded mozzarella cheese (2 ounces)
1/4 cup shredded Fontina cheese (1 ounce)
2 tablespoons assorted snipped fresh herbs (such as basil, oregano, thyme, and/or parsley)
5 cups French bread or 5 cups Italian bread, cubes
2 ounces prosciutto or 2 ounces Canadian bacon, chopped
4 eggs, beaten or 1 cup fat-free liquid egg product, thawed frozen or refrigerated
1 3/4 cups milk
1/2 cup single cream or 1/2 cup light sour cream
1 tablespoon dijon-style mustard
1/8 teaspoon pepper
fresh thyme sprig

Steps:

  • Preheat oven to 325 degrees F.
  • In a large skillet cook onion and garlic in hot margarine or butter over medium heat for 2 minutes.
  • Add mushrooms and cook about 3 minutes more or until tender, stirring occasionally.
  • Remove from heat.
  • In a small mixing bowl combine the mozzarella, fontina, and herbs; toss to mix.
  • In a greased 2-quart square baking dish place half of the bread cubes.
  • Top with the mushroom mixture, cheese mixture, and prosciutto or Canadian-style bacon.
  • Top with the remaining bread cubes.
  • In a mixing bowl combine beaten eggs or egg product, milk, sour cream, mustard, and pepper.
  • Pour over layers in dish.
  • Cover and chill in the refrigerator for 2 to 24 hours.
  • Bake, uncovered, for 55 to 60 minutes or until a knife inserted near the center comes out clean.
  • Let stand 10 minutes.
  • To serve, cut into squares; garnish with fresh thyme sprigs.

This was served at my sister-in-laws baby shower along with a wonderful salad with balsamic dressing and seasonal fruits. It was so elegant. I had to ask for the recipe it was so delicious! My mother-in-law asked her friend for the recipe and here it is! I couldn't believe how easy it is to make. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking. You put this together in the evening the night before. Try changing the cheese and toppings with your favorites! Very versatile dish! Enjoy.

1 loaf French bread (4 cups cubed)
10 eggs
4 cups milk
1 teaspoon dry mustard
1/4 teaspoon onion powder
1 teaspoon salt
1 teaspoon Worcestershire sauce (optional)
8 -10 slices bacon (crumbled)
2 cups cheddar cheese (shredded)
1/2 cup fresh tomato (chopped)
1/2 cup mushroom (sliced)

Steps:

  • Butter a 13 x 9 inch casserole dish.
  • Arrange bread cubes in casserole dish. Sprinkle with shredded cheddar cheese.
  • Beat together the eggs, milk, dry mustard, onion powder, salt and worcestershire sauce. Pour over the bread and cheese in the casserole dish.
  • Sprinkle with crumbled bacon, mushrooms and chopped tomatoes.
  • Cover and chill overnight.
  • Bake uncovered for 1 Hour or until set. (cover if getting too brown on top).
