MOIST, TENDER SPICE CAKE

This is a substantial yet tender spice cake that's flavorful enough to serve unadorned.

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

2 c flour
1 1/3 c sugar
4 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
1 (10.75oz can(s) tomato soup, undiluted
1/2 c butter, softened
2 eggs
1/2 c milk

Steps:

  • 1. Preheat oven to 350°F. Grease and lightly flour 13″ x 9″ baking pan or 2 8" round pans.
  • 2. In large bowl mix flour, sugar, baking powder, baking soda, and spices. Whisk together to blend well. Add soup, butter, eggs, and milk.
  • 3. With mixer at low speed, beat until well mixed, constantly scraping side and bottom of bowl. At high speed, beat 4 minutes, occasionally scraping bowl. Pour into prepared pan.
  • 4. Bake 20-35 minutes, test every 5 minutes after 20 minutes, until toothpick inserted in center comes out clean. This cake will become dry quickly if over-baked.
  • 5. Cool in pan on wire rack 10 minutes. Frost with your favorite icing or glaze.

This is a very flavourful, moist cake. I made it for my Mom's birthday since she doesn't like chocolate and the rest of the family isn't too keen on white cake. She loved it. The cake tastes even better after a day or two.

1/2 cup margarine
3/4 cup white sugar
1 egg
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon clove
3/4 cup skim milk

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine and sugar.
  • Beat in egg and vanilla.
  • Add baking powder, salt and spices.
  • Add milk to margarine mixture in 2 parts alternately with flour.
  • Begin and end with flour.
  • Spread batter into a greased 8" square pan.
  • (For a 9" X 13" cake, double the recipe.) Bake for 35 to 40 minutes.
  • When cool, frost with your choice of frosting (I added some orange extract to vanilla buttercream).

1-1/2 cups sugar
1 cup raisins, chopped
1 cup water
3/4 cup butter, cubed
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 large eggs, separated, room temperature
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup chopped pecans
CREAM CHEESE FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla extract
Pinch salt
4 cups confectioners' sugar
Additional chopped pecans, optional
Optional: Cinnamon sticks, fresh bay leaves, fresh rosemary sprigs, confectioners' sugar

Steps:

  • In a large saucepan, combine the first eight ingredients; cook and stir over medium-low heat until sugar is dissolved. Remove from the heat; cool. , In a large bowl, beat egg yolks; gradually stir in spice mixture. Combine the flour, baking powder, salt and baking soda; gradually add to spice mixture until blended. Stir in pecans. In a small bowl, beat egg whites until soft peaks form; fold into the batter. , Pour into two greased and floured 9-in. round baking pans. Bake at 325° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a large bowl, beat cream cheese and butter until fluffy. Add vanilla and salt. Gradually beat in confectioners' sugar until smooth. To decorate, spread frosting between layers and over top and sides of cake, leaving cake slightly exposed on the sides. If desired, top with pecans, cinnamon sticks, fresh bay leaves, fresh rosemary sprigs and confectioners' sugar. Store in the refrigerator.
