1 (1-inch) piece ginger, peeled
4 cloves garlic, peeled
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon dried chili flakes
4 tablespoons ground almonds
1/2 cup water
5 cardamom pods, bruised
1 cinnamon stick, broken in half
2 bay leaves
4 cloves
1/4 cup vegetable oil
3 pounds boned chicken thighs, each cut into 2
2 onions, finely chopped
1 cup Greek yogurt
1 cup chicken stock
1/2 cup heavy cream
1/2 cup sultanas (golden raisins)
1 teaspoon garam masala
1 tablespoon sugar
1 teaspoon salt
3/4 cup flaked almonds, toasted, to garnish

Steps:

  • Put the ginger, garlic, cumin, coriander, and chili into a food processor, or into a mortar and pestle, and blend to a paste. Add the ground almonds and water and then blend again, set aside.
  • Heat the oil in a large pan and add the chicken pieces - in batches so they fry rather than stew - and cook them just long enough to seal on both sides, then remove to a dish.
  • Add the spices and turn them in the oil. Add the onions and cook them until softened and lightly browned, but keep the heat gentle and stir frequently, to avoid sticking. Pour in the blended paste, and cook everything until it begins to colour. Add the yogurt, half a cup at a time stirring it in to make a sauce, then stir in the stock, cream, and sultanas.
  • Put the browned chicken back into the pan, along with any juices that have collected under them, and sprinkle over the garam masala, sugar, and salt. Cover and cook on a gentle heat for 20 minutes, testing to make sure the meat is cooked through.
  • It's at this stage, that I like to take the pan off the heat and leave it to cool before reheating the next day.
  • So either now, or when you've reheated it, pour into a serving dish and scatter with the toasted flaked almonds.

1 kg chicken piece (thigh, breast, leg or any you prefer)
3 chopped garlic cloves
1 teaspoon ginger paste
1 teaspoon salt
1 teaspoon pepper
1 onion, chopped
1 teaspoon cumin seed
1 teaspoon red chili powder
1/2 teaspoon garam masala
1 tablespoon cooking oil
1 cup yogurt
1 sprig fresh coriander

Steps:

  • Boil chicken pieces in water along with 2 cloves of chopped garlic, ginger paste, salt and pepper.
  • Once chicken is boiled, take the pieces out of the stock. Set stock aside.
  • In a wok or deep cooking pan with lid, pour cooking oil and saute onions and garlic together.
  • Once the onions and garlic turn golden brown, add cumin seeds, chicken pieces, garam masala, and red chilli powder.
  • Stir fry this mixture for 4 minutes.
  • Now add half a cup of stock.
  • Also add yogurt to this mixture.
  • Cover and let this cook on medium heat for 20 minutes.
  • Check after 20 minutes to see if the oil is visible on the sides. That means you're done.
  • You can let your chicken a little more to thicken the gravy or serve right away with rice or bread.
  • Garnish with chopped corriander leaves.

This is an ancient recipe! The word "zaafrani" means "Saffron" or what we call "Kesar" in Hindi. In my home, we use this in plenty during the winter/cooler months. The word "murg" is the Hindi equivalent for "Chicken". This delicious recipe was telecast at 11:30am Oman time on this Sunday on Mirch Masala, Star Plus. It was cooked by a chef in Jaipur who has been cooking since he was a young boy. Now, he's an old man with a long white moustache, a pot belly and a beaming smile! This chicken looked so yummy while he was cooking it in his pot on TV, I can't wait to try it, I will be doing that very soon! Join me, will you? :)

750 g chicken, cleaned, washed and cut into pieces
1 teaspoon salt, to taste
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder, paste of
1 pinch saffron, divided
4 -6 tablespoons cashews, paste of, divided
2 tablespoons fresh low-fat plain yogurt, beaten
4 -5 tablespoons oil
2 -3 bay leaves
4 -5 cloves
2 tablespoons onion paste (paste of 2 onions)
1 teaspoon garlic paste
2 tablespoons fresh coriander leaves, chopped finely

Steps:

  • To make this yummy chicken, first prepare the marinade.
  • Before doing that, soak red chili powder in water and prepare a paste of it.
  • Now, in a bowl, mix together, the chicken, salt, ginger-garlic paste, 2-3 tablespoons of cashewnut paste, a pinch of saffron, yogurt and a tsp of red chili paste.
  • Mix well, using your hand, and keep aside for 15-20 minutes.
  • Heat oil in a skillet.
  • Add bay leaves and cloves.
  • Stir-fry for a minute.
  • Add onion paste and sauté till it turns brown.
  • Add a teaspoon of garlic paste.
  • Continue to sauté till the raw smell of garlic is gone.
  • Add the marinated chicken pieces and mix well.
  • Cover and cook for 15 minutes or until the chicken is tender.
  • Add 2-3 tablespoons of cashewnut paste and a pinch of saffron.
  • Mix well.
  • Remove from flame.
  • Garnish with fresh chopped coriander leaves.
  • Serve hot with rotis/parathas/naan/kulcha!
  • YUM!

1 inch fresh ginger, peeled and coarsely chopped
8 garlic cloves, peeled
6 tablespoons blanched almonds, slivered
4 tablespoons water
7 tablespoons ghee
3 lbs chicken parts
10 cardamom pods
1 inch cinnamon stick
2 bay leaves
5 whole cloves
2 medium onions, peeled and finely chopped
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
7 tablespoons yoghurt
300 ml light cream
1 1/2 teaspoons salt
2 tablespoons golden raisins
1/2 teaspoon garam masala

Steps:

  • Put the ginger, garlic, 4 tablespoons of the almonds, and the water into a blender and blend until you have a paste.
  • Heat oil in a skillet over medium heat. When hot add chicken in a single layer and fry until golden brown on the bottom. Now turn all the pieces over and brown the second side. Remove the ckicken pieces with a slotted spoon and set them aside.
  • In the same oil add cardamom pods, bay leaves, cinnamon stick and cloves. Stir and fry them for a few seconds. Now put in the onions. Stir and fry the onions for 3-4 minutes or until they are lightly browned. Put in the paste from the blender, and the cumin and cayenne. Stir and fry for 2-3 minutes or until oil seems to separate from the spice mixture and the spices are lightly browned. Whip yoghurt with a fork and add 1 tablespoon at a time to the onion masala until yoghurt is well blended.
  • Add the cream and salt, plus the chicken and any juices that may have accumulated. Bring to a simmer. Cover, turn heat to low, and cook gently for 20 minutes. Add the raisens and turn the chicken pieces. Cover again and cook another 10 minutes or until the chicken is tender. Add the garam masala. Stir to mix.
  • Put the remaining almonds on a baking sheet and put them under the broiler until they brown lightly, about 5 minutes. Keep an eye on them, and shake the pan frequently. Sprinkle the roasted almonds over the chicken when serving.

1 1/2 lbs raw chicken
1 teaspoon red chili powder
1 teaspoon ginger-garlic paste
1 teaspoon salt (or to taste)
1 1/4 cups plain yogurt
1/3 cup unsalted butter
1 teaspoon black cumin seeds
1 1/2 cups tomato puree
1 teaspoon sugar
1 teaspoon red chili powder
1 teaspoon salt (or to taste)
1/3 cup fresh cream
4 green chilies (sliced)
1 teaspoon dried fenugreek leaves (crushed)

Steps:

  • For the marinade,mix red chilli powder, ginger garlic paste, salt and yogurt together. Marinade is ready.
  • Now mix the raw chicken in the marinade and keep it in the refrigerator overnight.
  • Then roast the marinated chicken in a an oven at 400 F for about 5-10 minutes till it is three fourth done.
  • For the gravy, heat white butter in pan. Add black cumin seeds, tomato puree, sugar, red chilli powder and salt. Mix it well.
  • Now add the prepared chicken, fresh cream, sliced green chillies and crushed fenugreek leaves.
  • Cook till chicken is done.
  • Butter Chicken is ready to eat.
  • Serve hot with rice or naan. (a type of Indian bread avaialable at Trader Joe's).

30 large cashews, plus 10 more for garnish
2 1/2 lb chicken thighs and drumsticks
1 tsp ground turmeric
2 tsp garam masala powder, divided
1 Tbsp freshly squeezed lime juice (about 1/2 lime)
2 1/2 Tbsp ghee, divided
4 c onions, finely chopped (about 2 large onions)
ground himalayan sea salt, to taste and divided
5 large cloves garlic, peeled
2 large green chilies, stems removed
3 large red chilies, stems removed
1 1/2 Tbsp ginger, peeled and diced
1 c low-sodium chicken broth, divided
5 cardamon pods
5 whole cloves
3 bay leaves
1/2 large cinnamon stick (about 2-inches long), broke into pieces
1 Tbsp brown sugar
1 1/2 tsp ground cumin
1 tsp ground coriander
1/2 tsp mild paprika
freshly ground black pepper, to taste (i always use mixed peppercorns)
1 c light sour cream
1/2 c 35% heavy cream
1 Tbsp fresh chopped cilantro, for garnish

Steps:

  • 1. In a small bowl, soak cashews in very hot water for 10 minutes. Drain and add to the bowl of a food processor; set aside.
  • 2. In a medium bowl, place chicken pieces and sprinkle with turmeric and 1 tsp. garam masala. Pour in lime juice and coat; set aside for 30 minutes.
  • 3. In a large saucepan over medium heat, add 1 ½ tbsp. ghee. When hot, add onions and sprinkle generously with ground sea salt; sauté until caramelized, about 25 minutes. Using a slotted spoon, transfer to a bowl to cool off.
  • 4. In the bowl of a food processor, add garlic to the cashews as well as green and red chilies, ginger, caramelized onions and ¼ cup chicken broth. Process until the mixture resembles a thick paste; set aside.
  • 5. In the same saucepan over medium heat, add 1 tbsp. ghee and when hot, working in batches, fry the chicken (thighs skin side down at first) just enough to brown on both sides, about 3 to 4 minutes per side; transfer to a plate.
  • 6. Return the saucepan on medium heat and when hot, add cardamom pods, whole cloves, bay leaves, and cinnamon stick; sauté for 1 ½ minutes.
  • 7. Add the onion paste, remaining 1 tsp. garam masala, brown sugar, cumin, coriander, paprika, salt and freshly ground black pepper. Pour in remaining ¾ cup chicken broth; stir, Add chicken back (thighs skin side up), cover, reduce heat to medium-low and cook for 15 minutes.
  • 8. When time is up, add sour cream and stir gently to combine. Spoon sauce over chicken pieces and pour in heavy cream; stir once again. Simmer until heated through, about 7 to 10 minutes.
  • 9. When ready, garnish with chopped cashews and cilantro and serve with white rice and naan bread.

3 lbs chicken parts
1 large onion, cut into 8 pieces
1 inch fresh ginger
4 garlic cloves
1/2 teaspoon cayenne pepper (optional)
1 teaspoon coriander powder
1 cup nonfat yogurt
2 tablespoons vegetable oil
1 teaspoon cumin seed
4 cardamom pods
2 bay leaves
1 inch cinnamon stick
4 whole cloves
1/4 cup water
1 teaspoon salt
2 tablespoons golden raisins
1/4 cup blanched almond, slivered
1/2 teaspoon garam masala
2 tablespoons coriander, chopped

Steps:

  • Remove skin and fat from chicken. Cut into 8 - 10 pieces. Cut 2 or 3 slits in each chicken piece, 1 inch long and 1/2 inch deep. Set aside.
  • Grind onion, garlic and ginger to a paste. Set aside.
  • Heat oil in a skillet over medium heat. Add chicken in a single layer and fry 3 - 5 minutes, turning pieces over several times until they're white. Transfer chicken to a plate with a slotted spoon.
  • In the same oil add cumin seeds, cardamom pods, bay leaves, cinnamon stick and cloves. Fry until cumin seeds turn golden brown. Add onion paste and fry until golden brown again. Whip yoghurt with a fork and add 1 tablespoon at a time to the onion masala until yoghurt is well blended. Cook until most of the liquid has evaporated and the mixture draws into a dense mass.
  • Add chicken and any juices that may have accumulated. Stir thoroughly, add water and salt and mix again. Bring to a boil, reduce heat and simmer 20 - 25 minutes, covered.
  • Heat oven to 300 degrees F and roast almonds in a baking pan until light brown (15 - 20 minutes). Shakes pan frequently to avoid burning.
  • Add raisins to the chicken and stir thoroughly. Cover and simmer 10 minutes. Add 2 tablespoons roasted almonds, garam masala and chopped coriander. Stir gently.
  • Transfer to a platter and garnish with the rest of the almonds.
