If you can use home made muesli/granola, because some of the bought mueslis can be very sweet.I sometimes add some dried cranberries, about a tablespoon.

1/2 cup butter
1/3 cup demerara sugar
1 tablespoon golden syrup or 1 tablespoon light corn syrup
1 cup self-rising flour
2 cups breakfast muesli
1 teaspoon baking soda

Steps:

  • Preheat oven to 325 degrees F.
  • Lightly grease one or two baking sheets.
  • Put butter, sugar and syrup in a pan and heat gently until the butter is melted Measure all the other ingredients in a large bowl and add the melted mixture, stir until well blended.
  • Spoon teaspoonfuls on the baking sheet (s), making sure you give them room to spread Bake them for approx 15 minutes.
  • Leave them to cool on the baking sheet for a few moments, lift them of with a metal spatula and let them cool completely on a cake rack.

½ cup butter, softened
½ cup brown sugar
¼ cup white sugar
1 egg
1 ¼ cups all-purpose flour, sifted
¾ cup rolled oats
½ cup malted milk powder
¼ cup chopped dates
¼ cup chopped dried apples
¼ cup sultana raisins
¼ cup shredded coconut
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground ginger

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • Combine butter, brown sugar, white sugar, and egg in a large bowl; beat with an electric mixer until smooth. Add flour, oats, malted milk powder, dates, apples, sultana raisins, coconut, baking soda, cinnamon, and ginger; mix until dough comes together.
  • Scoop up 2 tablespoons of dough and roll into a ball between your palms. Place onto the prepared baking sheet; press down to flatten slightly. Repeat with remaining dough.
  • Bake in the preheated oven until golden brown, 18 to 20 minutes. Transfer to wire racks to cool completely, about 10 minutes.

1/2 cup mashed ripe banana (1 medium)
1/2 cup natural peanut butter
1/3 cup real maple syrup
2 teaspoons vanilla
1 cup Nature Valley™ toasted oats muesli original
2 tablespoons ground flaxseed
1 teaspoon ground cinnamon
3/4 cup dried cranberries

Steps:

  • Heat oven to 350°F. Line 2 cookie sheets with cooking parchment paper, or spray with cooking spray.
  • In large bowl, mix banana, peanut butter, maple syrup and vanilla. Stir in muesli, flaxseed and cinnamon. Stir in cranberries.
  • Drop by heaping tablespoonsful 3 inches apart on cookie sheet. Dip back of spoon in water, and flatten dough slightly to form 2 1/2-inch round.
  • Bake 14 to 16 minutes or until bottoms are golden brown. Cool completely on cookie sheet, about 15 minutes.

500 g butter
460 g sugar (White)
300 g golden syrup
2 teaspoons baking soda
550 g all-purpose flour
550 g rolled oats
2 cups pumpkin seeds
2 cups sunflower seeds
2 cups chopped dried apricots
2 cups threaded coconut or 2 cups flaked coconut

Steps:

  • Bring butter, sugar, and syrup to the boil add soda mix until frothy.
  • Mix flour, oats, pumpkin seeds,sunflower seeds, apricots, and coconut.
  • Add hot mixture to dry ingredients.
  • Mix all and roll into 60 g cookies.work quickly with the mixture as it will harden as it cools.
  • bake 160 c for approx 20 mins when cooled completely store in airtight container, they keep very well and are extremely moorish, to make different add chopped Glace Ginger, I sell loads of these.

2 tablespoons honey (I used a creamy one)
200 g mixed seeds, and kernels (I used sesame, sunflower and pumpkin seeds)
50 g raisins (optional, but I would include them)

Steps:

  • Preheat oven to 180°C/350°F.
  • Mix all ingredients together in a bowl and drop by teaspoons on a paper-lined baking sheet leaving some space between the cookies.
  • Bake for 12-15 minutes until nicely browned.
  • Let cool completely on baking sheet. If you want to store them keep them in an airtight container in a dry place.
  • Enjoy!

Here's a New Twist on the Classic Recipe. I found the Non-Vegan Version of this recipe while looking for healthy breakfast cereal when I stumbled upon Bob's Red Mill Old Country Style Muesli and their recipe was on the side, but it included eggs, so I modified it a little and here you go, a healthy version of a childhood classic that tastes better than the orginal (in my opinion, try it for yourself!)

1 cup muesli (Bob's Red Mill is the best kind)
3/4 cup whole wheat flour
2/3 cup applesauce
3/4 cup brown sugar
3/4 cup semisweet vegan chocolate chips (Make sure to look at ingredients labels, FYI-Ghirardelli's semi-sweet chocolate chips are Vegan)
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1 tablespoon egg substitute, powder (Bob's Red Mill is the best kind)
3 tablespoons water

Steps:

  • Heat Oven to 375.
  • Put all ingredients except the chocolate chips in a large bowl.
  • Mix until well mixed.
  • Add in the Chocolate Chips and mix until evenly distributed.
  • Use a Tablespoon (measuring spoon) and scoop out TBSP size portions and put onto an ungreased, non-stick cookie sheet (lightly greased if not non-stick).
  • Use a spoon and flatten into cookie shape (just a little).
  • Bake for 10-12 Minutes.
  • Take out of oven and let them cool on the cookie sheet until completely cooled (about 20 minutes).
  • ENJOY.
