These bars are a great lunch box treat. Use almonds or macadamia nuts as a variation.

½ cup unsalted butter
⅓ cup packed brown sugar
3 tablespoons honey
1 cup quick cooking oats
⅓ cup chopped hazelnuts
⅓ cup shredded coconut
⅓ cup sesame seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch baking pan.
  • In medium sauce pan, over low heat, combine butter or margarine, brown sugar and honey. Cook, stirring, until butter or margarine is melted and sugar is dissolved. Remove from heat. Add oats, nuts, coconut and sesame seeds. Mix with a wooden spoon until well combined. Press mixture evenly into the prepared baking pan.
  • Bake for 15 to 18 minutes in the preheated oven, until the top is golden brown. Let cool in the pan and cut into bars.

1 ½ cups honey
¾ cup peanut butter
¾ cup almond butter
2 teaspoons vanilla extract
1 cup semisweet chocolate chips
7 cups puffed rice cereal
¼ cup chopped almonds
2 cups rolled oats

Steps:

  • Grease a 9x13 inch baking dish. In a small saucepan over medium heat, combine the honey, peanut butter and almond butter. Bring to a boil, then lower the heat and simmer for 3 minutes. Remove from heat and stir in the vanilla.
  • In a large bowl, toss together the chocolate chips, rice cereal, almonds and rolled oats. Stir in the peanut butter mixture so everything is evenly distributed. Pack tightly into the prepared pan. Refrigerate until set. Cut into bars when cool.

Steps:

  • heat the oven to 180C. Melt the butter, sugar and honey together with the cinnamon and simmer for 2 minutes. stir in the muesli, pumpkin seeds and dried apricots.
  • pack the mixture into a lined baking sheet, cover with foil and bake for 15 minutes. leave in the tin for 10 minutes, then loosen the edges and turn out. slice into squares and serve cold.

My auntie out here in Australia made this for me and at first, I hesitated as I picked out a piece. but once I'd tasted it? mmm! It is so easy to make (I do it now whilst heavily engrossed in tv programmes like CSI where you really need to concentrate...that's how easy it is) and takes about 25 mins (max) in total. then you have to refrigerate it, but it's worth the wait!! It's great to snack on and I like to think that it's healthy (despite the butter, sugar and honey) because it contains seeds! *SPECIAL TREAT - when you have toasted the seed mix, if you let it cool completely - you could add chocolate chips. this has just occurred to me so I will be trying it next time!*

1 cup rolled oats
1 cup desiccated coconut
1 cup sultana
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup sesame seeds
1/2 cup honey
1/3 cup soft brown sugar
125 g butter

Steps:

  • Mix the seeds, coconut and oats in a bowl.
  • Heat a little oil in a pan, and toast the mix on a light-medium heat for 4-5 minutes, until it turns golden (but before it burns!).
  • Remove from heat, and pour back into the bowl to cool. once cool, add the sultanas.
  • In a small saucepan, add the honey, sugar and butter and heat gently until the butter has completely melted (this may be easier if you chop the butter into smaller cubes). now, turn up the heat and bring to the boil while constantly stirring the mixture. as soon as it comes to the boil, turn the heat right down and let it bubble (without stirring) for approximately 7 minutes.
  • Remove from heat, and pour over the muesli mix. work the syrup through the muesli completely to ensure it is all moist.
  • Take a dish (grease the edges lightly with a dab of oil, or use baking paper) and press the mixture firmly into it. obviously you can use whatever shape you like, but beware that if it is too thick, it becomes very difficult to cut once it is refrigerated.
  • Put in the fridge and let it set.
  • Eat it! YUMMY! mmm.

PEANUT BUTTER MUESLI BREAKFAST BARS

2 3/4 cups Alpen No Sugar Added Muesli
1/4 cup Your favorite assortment of nuts or seeds
1/3 cup Peanut butter (creamy or crunchy)
1/3 cup Brown Rice Syrup
1 tablespoon Pure Vanilla Extract

Steps:

  • Preheat oven to 325° F; line an 8×8" pan with parchment paper.
  • In a large bowl, combine Alpen No Sugar Added Muesli with preferred nuts/seeds.
  • In a small, microwaveable bowl, combine peanut butter and brown rice syrup; microwave for 10 seconds, stir, and microwave for another 10 seconds.
  • Stir in vanilla and pour mixture over dry ingredients; combine until all ingredients are coated and press firmly into prepared pan.
  • Bake for six to eight minutes, until slightly browned; remove from oven and press the top down with the back of a spatula.
  • Set aside to cool completely.
  • To serve, cut into eight bars and store in the refrigerator for the week ahead; enjoy.

2 cups muesli
1/4 cup honey (Use light syrup for the vegan version.)
1/4 cup tahini
1/4 cup dried fruit, of your choice in bits
1/4 cup nuts, of your choice chopped in small pieces
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Combine honey, tahini, cinnamon, nuts, and dried fuit in a bowl and mix well. Add the muesli and mix well until you get a hard dough. It may not all stick together, this is fine.
  • Take portions into a sushi roller lined with wax paper and form into 4" bars by rolling and pressing. Once the desired formed is reached, open the roller, cut the edges off and carefully place on a prepared baking sheet.
  • Once finished with all the bars bake for 10 minutes. This is important: they are still tender when hot so let the bars cool for at least 15 minutes before transfering to a cooling rack, then let them cool completely before removing them so that they don't break.
  • Store in your refrigerator and enjoy!

  • Combine first 6 ingredients.
  • Place butter, honey and corn syrup in small pan.
  • Heat slowly till butter melts.
  • Add to dry ingredients and mix well.
  • Press mixture into lined tray - 18cm x 28cm.
  • Put in fridge till firm and then slice.

I've been making these for years as I find most commercial bars too dry for me. These make a soft, low-fat bar. Store in an air-tight container. (Australian measurements used.)

185 g rolled oats
6 Weetabix, crushed lightly
90 g raisins
60 g dried apricots, chopped
1/2 cup honey
1 cup orange juice
2 egg whites

Steps:

  • Line 18 x 28cm tin with non-stick baking paper and pre-heat oven to 180 deg Celsius.
  • Put oats, Weetabix, raisins and apricots in a bowl, and mix.
  • In a small saucepan, blend honey and orange juice over medium heat. Bring to boil, then reduce heat and simmer for 10 minutes, or until mixture is thick and syrupy.
  • Stir honey mixture into oat mix then stir in the egg whites.
  • Press mixture into prepared tin and bake for 20-25 minutes, or until golden. Cool in tin. Cut into 14 bars.

3 cups unsweetened muesli (granola)
1/2 cup brown sugar
1/2 cup plain flour
1 teaspoon baking powder
2 large bananas, mashed
1/3 cup light olive oil or 1/3 cup canola oil
3 tablespoons honey
2 eggs, lightly beaten
150 g strawberries (if using strawberries, chop into small chunks) or 150 g blueberries (if using strawberries, chop into small chunks)

Steps:

  • Preheat oven to 180°C, grease and line a 25 x 15cm slice pan (10" x 6").
  • Place muesli, brown sugar, flour and baking powder in a large bowl.
  • Mix together bananas, oil, honey and eggs. Mix the wet mixture into dry ingredients. Stir through the berries.
  • Scrape the batter into prepared tin, Bake for 20 - 25 minutes or until golden.
  • Cool completely in pan and cut into squares.
