I just got this recipe from the Mrs Dash site - I have not made them but I love the sound of them Imagine eating a snack that is good for you.

1 head cauliflower, broken into small florets about the size of popcorn
3 tablespoons olive oil
2 tablespoons Mrs. Dash table blend seasoning

Steps:

  • Pre heat oven to 450F Toss the florets in a plastic bag or bowl with the olive oil& Mrs Dash Table Blend.
  • Spread florets on a cookie sheet and roast for apprx 45 to 60 minutes or until nicely browned.
  • Flip them 3 or 4 times while roasting- the longer they are in the oven the sweeter they get!

I picked up this recipe from a neighbor of mine. This has a great flavor and turns a beautiful yellow popcorn-y color when ready.

8 ounces cauliflower
1 teaspoon salt
2 teaspoons sugar
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon paprika
1/4-1/2 teaspoon turmeric
6 -8 tablespoons oil

Steps:

  • Preheat oven to 450 degrees.
  • Toss cauliflower with oil and spice mixture.
  • Bake 30-35 minutes uncovered.

This is based on the recipe by Bob Blumer from the "Surreal Gourmet Bites" cookbook. This simple caramelization method transforms this much maligned veggie into a knock-your-socks-off side dish or sweet snack that you won't be able to get enough of!

1 head cauliflower or 1 head equal amount of pre-cut commercially prepped cauliflower
4 tablespoons olive oil
1 teaspoon salt, to taste

Steps:

  • Preheat oven to 425 degrees.
  • Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls.
  • In a large bowl, combine the olive oil and salt, whisk, then add the cauliflower pieces and toss thoroughly.
  • Line a baking sheet with parchment for easy cleanup (you can skip that, if you don't have any) then spread the cauliflower pieces on the sheet and roast for 1 hour, turning 3 or 4 times, until most of each piece has turned golden brown.
  • (The browner the cauliflower pieces turn, the more caramelization occurs and the sweeter they'll taste).
  • Serve immediately and enjoy!

1/4 cup crushed dried minced onion flakes
4 teaspoons crushed dried vegetable flakes (Schilling)
1 tablespoon garlic powder
1 tablespoon dried orange peel
2 teaspoons fresh coarse ground black pepper
1 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/2 teaspoon dried oregano
1/2 teaspoon dried savory
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon dried mustard
1/4 teaspoon celery seed
1/4 teaspoon kool-aid unsweetened lemonade mix
1 dash crushed dried rosemary

Steps:

  • Combine all of the ingredients in a small bowl and stir well.
  • As you stir, crush the leafy spices for a finer blend.
  • Store the spice blend in a covered container or a sealed shaker bottle.
