vegetable oil
1 1/2 c. unsifted all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 c. solid vegetable shortening
1 c. light brown sugar
1/4 c. granulated sugar
1 tsp. vanilla
2 eggs
2 c. old-fashioned rolled oats
1 package semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Grease baking sheets with vegetable oil.
  • Combine flour, salt, and baking soda on waxed paper.
  • Beat together shortening, sugars, and vanilla in large bowl with an electric mixer until creamy. Add eggs, beating until light and fluffy. Gradually beat in flour mixture and rolled oats. Stir in chocolate chips.
  • Drop batter by well-rounded teaspoonfuls onto baking sheet. Bake for 8-10 minutes, or until golden.
  • Cool cookies on sheets for 2 minutes. Remove to wire rack to cool completely.

This was a recipe I requested from Mrs. Williams almost 50 years ago after her husband brought them into work. It was and still remains the best chocolate chip cookie I've ever had. My DDs (and now my DGDs) made this in their teens and now for their families. A real favorite that has become a family tradition. The batter is a bit stiff to mix, but worth the effort and then some.

1 cup shortening
1 cup sugar
1 cup brown sugar (packed)
1 teaspoon vanilla extract
2 large eggs
2 tablespoons water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick-cooking oats
2 cups chocolate chips
3/4 cup walnuts (optional)

Steps:

  • Preheat oven to 375°.
  • Cream sugar, shortening and vanilla; beat in eggs and water.

1 ½ cups all purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
1 cup solid vegetable shortening
1 cup light brown sugar, firmly packed
½ cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups old fashion oat
1 package semisweet chocolate chip

Steps:

  • Preheat the oven to 350°F (180°C). Grease 2-3 large baking sheets with cooking spray.
  • In a medium bowl, mix together the flour, salt, and baking soda.
  • In a large bowl, combine the vegetable shortening, brown sugar, granulated sugar, and vanilla. Using an electric hand mixer, beat on medium speed until creamy.
  • Add the eggs and beat until light and fluffy.
  • Gradually add the flour mixture and beat to incorporate. Mix in the oats.
  • Fold in the chocolate chips until evenly distributed.
  • Scoop rounded tablespoons of the dough onto the prepared baking sheets, 12 cookies per pan.
