1 (10 ounce) box Cheez-It crackers, crushed
2 eggs, hard-boiled and sliced
1 (10 ounce) can cream of mushroom soup
1/2 cup mushroom, chopped

Steps:

  • Preheat oven to 350°F
  • Mix asparagus and juice with cream of mushroom soup and mushrooms. Put half crackers on bottom of a greased baking dish.
  • Pour soup mixture onto crackers, layer with sliced egg. Top with other half of crackers.
  • Cook for 30 minutes or until bubbly.

4 can(s) whole green asparagus (15 oz. cans) or 4 bundles of fresh steamed asparagus
4 Tbsp butter
4 Tbsp flour
2 c milk
2 c extra-sharp cheese (grated)
1/2 tsp salt
1/2 tsp hot sauce ( i use crystal's brand)
white pepper
4 eggs, hard boiled, peeled and sliced
1 c slivered almonds, toasted
buttered bread crumbs

Steps:

  • 1. Drain the asparagus.
  • 2. Make a white sauce by melting butter in fry pan, adding flour and cooking a minute, then adding the milk.
  • 3. Add grated cheese to the sauce.
  • 4. Season sauce with salt, hot sauce and white pepper (to taste).
  • 5. Place a layer of asparagus in a deep dish, cover with sauce, a layer of sliced eggs, and a sprinkling of sliced almonds.
  • 6. Repeat by layering asparagus, sauce, eggs, and almonds.
  • 7. Top with buttered bread crumbs.
  • 8. Bake at 350 degrees until brown and bubbling. (about 25 minutes, depends on oven).
  • 9. Let sit about ten minutes before serving.
  • 10. Enjoy!

I found this recipe in an old cookbook I had and figured I would try it. It is very good!! I usually double the amount of asparagus and cheese. Also this recipe is very easy to double. This was the first time I had tried asparagus and had been eating it ever since.

1 (10 1/2 ounce) can green cut asparagus spears, undrained

  • Combine eggs and milk in a medium mixing bowl, beating well. Stir in crackers,asparagus,cheese, and hot sauce. Pour mixture into a greased 1-quart casserole dish. Sprinkle with paprika. Bake at 375 degrees for 45 minutes or until puffed and browned. Serve immediately.

1/3 c milk or water
1/2 c dry bread crumbs
2 Tbsp butter, melted

Steps:

  • 1. Place the asparagus in a 13x9x2 inch (3 qrt) shallow baking dish.
  • 2. Stir the soup and milk in a small bowl and pour over the asparagus. Mix the bread crumbs and butter in a small bowl and sprinkle over the soup mixture.

4 hard-boiled eggs, peeled & thinly sliced
1/3 cup butter flavored cracker, crushed (I use Ritz)
1 cup shredded sharp cheddar cheese
1/2 can cream of mushroom soup, undiluted
1/4 cup milk
salt and pepper, to taste
1/4 teaspoon italian seasoning (optional)

Steps:

  • Drop fresh asparagus into boiling water.
  • As soon as they turn"bright" green, remove and plunge them into ice water to stop the cooking process.
  • Drain.
  • Mix soup and milk together.
  • Place asparagus in 9x13x2-inch casserole.
  • Top with sliced eggs.
  • Sprinkle with crackers; sprinkle with cheese.
  • Pour soup mixture over casserole.
  • Bake at 350 degrees until hot, just bubbling and cheese is melted.
  • NOTE: For a spicier version my family really, really likes, I use Cheez-its (Hot and Spicy) crackers instead of the butter-flavored crackers mentioned above. I usually add a few more crackers than the original recipe calls for.

1 pound fresh asparagus, trimmed, cut into 1-inch pieces
2 cups cubed fully cooked ham
3 cups cooked rice
1 cup finely chopped celery
1-1/2 teaspoons lemon-pepper seasoning
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup dry bread crumbs
1 tablespoon butter, melted

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender; drain well. , In a greased 2-1/2-qt. baking dish, combine the asparagus, ham, rice, celery and lemon-pepper; set aside. 2 lb asparagus, fresh
6 Tbsp butter, unsalted
4 Tbsp all purpose flour
1 c heavy cream
1 pinch paprika
salt and pepper, to taste
4 hard boiled eggs, peeled and sliced
2 c fresh bread cubes
1 c crumbled ritz crackers
1/2 c parmigiano-reggiano, grated

Steps:

  • 1. Preheat oven to 350°. Bring a large pot of salted water to a boil over high heat. Coat a medium baking dish with non-stick cooking spray.
  • 2. Prepare asparagus by holding bottom half of each spear with both hands and gently bending it until it snaps where it naturally breaks, separating tough fibrous end from tender part. Discard ends. Cut asparagus into pieces, add to pot, and cook until soft, 4-6 minutes. Reserve 1 cup of the cooking water, then drain asparagus.
  • 3. Melt 4 tbsp. of the butter in a saucepan over medium-low heat. Add flour and cook, stirring, for 2 minutes. Whisk in reserved cooking water, then the cream, stirring until smooth and thick, 8-10 minutes. Add paprika, then season to taste with salt and pepper.
  • 4. Layer asparagus, eggs, and sauce alternately in a medium baking dish, ending with sauce. Sprinkle with bread cubes, cracker crumbs, and parmigiano. Dot with remaining 2 tbsp. butter.
  • 5. Bake until bubbling and golden, 25-30 minutes. Serve hot.

2 tablespoon(s) butter
1 tablespoon(s) flour
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/2 cup(s) evaporated milk
1/2 cup(s) evaporated milk
1/2 cup(s) cracker crumbs
2 - hard boiled eggs (chopped)
1/2 cup(s) cheese, shredded

Steps:

  • Drain asparagus, reserving liquid. Melt butter; blend in flour, salt, and pepper. Add evaporated milk to asparagus liquid (enough to make 1 1/2 cups). Stir into flour mixture. Blend until smooth. Cook 2 minutes.
  • Spread asparagus in bottom of greased, shallow 1 1/2 quart casserole. Reserve a few asparagus spears for top. Sprinkle half of cracker crumbs over asparagus. Add eggs and half of sauce. Sprinkle with remaining crumbs. Arrange rest of asparagus spears over top. Pour over remaining sauce. Sprinkle with shredded or grated cheese. Bake at 350 for about 30 minutes or until casserole is bubbly.
