Wonderfully easy and delicious bean soup. Mr. Food is a genius and I think I own all of his cookbooks and use them all.

Number Of Ingredients 8

2 (14 1/2 ounce) cans chicken broth, ready to use
2 (16 ounce) cans butter beans, drained
1 (28 ounce) can diced tomatoes, undrained
15 ounces sliced canned potatoes, drained
8 1/4 ounces canned sliced carrots, drained
1/2 lb cooked ham, diced
1 small onion, chopped
1/4 teaspoon ground black pepper

Steps:

  • In a soup pot combine all of the ingredients.
  • Bring to a boil over medium heat.
  • Reduce heat to low and simmer for 30 minutes for flavors to marry and soup to thicken.

250 g ham
1 3/4 liters vegetable stock, plus
1 tablespoon vegetable stock
1 red onion
2 -3 garlic cloves
2 spring onions
3 carrots
2 (400 g) cans butter beans
1/4 cup basil
3 tablespoons lemon juice

Steps:

  • Heat 1 tbsp stock in large pot and saute finely diced red onion, finely sliced ham (I used deli leg off the bone) and garlic for about 5 minutes.
  • Add rough cut carrots, butter beans (can use chickpeas), spring onions, 1 3/4 litres of vegetable (or chicken) stock and bring to a boil.
  • NOTE: Adjust garlic to your taste.
  • SIMMER uncovered for twenty minutes and let sit for 5 minutes.
  • MASH; reheat if necessary and add chopped basil and lemon juice.
  • ENJOY!

Old Fashioned Butter Beans & Ham image

There's nothing better than a big bowl of these beans with a slice of fresh homemade bread slathered in butter. I use a 1 lb. bag of large dried lima beans for this. From my collection of handwritten recipes. Note: soak beans overnight or use quick-soak method.

1 lb dried large lima beans, soaked (butter beans)
1 ham hock (or ham shank)
2 medium onions (1 quatered and 1 finely chopped)
3 garlic cloves, peeled
2 bay leaves
1 tablespoon butter
1 1/2 teaspoons hot sauce
salt and pepper

Steps:

  • Half fill a large saucepan with water and stir in the beans, ham hock, quartered onion, garlic and bay leaves. Bring to a boil, then lower the heat and simmer, uncovered for 1 hour or until the beans are tender. Drain the beans, reserving all of the liquid and discarding the onion, garlic, and bay leaves. Transfer beans to a bowl and the ham hock to a cutting board. Cut the meat into small pieces (you should have about 1 cup). Discard the bones. In the same saucepan, melt the butter over medium heat. Add the chopped onion and saute for 5 minutes or until tender. Stir in the ham and enough bean liquid to make the beans soupy (about 2 cups); bring to a boil. Lower heat and simmer, uncovered, for 5 minutes. Stir in the beans, hot sauce, and salt and pepper to taste; heat for 3 minutes or until hot. Ladle into bowls (I like to add a couple of drops of catsup) and serve with warm fresh homemade bread and butter.

BASIC HAM AND BEAN SOUP



Basic Ham and Bean Soup image

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.
