2 boneless, skinless chicken breasts
olive oil, to taste
salt, to taste
pepper, to taste
garlic powder, to taste
oregano, to taste
1 ball fresh mozzarella cheese
1 tomato, medium
5 leaves fresh basil leaf
1 cup dark balsamic vinegar, inexpensive
⅓ cup honey

Steps:

  • Preheat oven to 400°F (200°C).
  • On a parchment-lined baking sheet, season both sides of the chicken with olive oil, salt, pepper, garlic powder, and oregano.
  • Bake for 30 minutes, or until cooked through and juices run clear.
  • While the chicken is in the oven, combine the balsamic vinegar and honey in a sauce pot and simmer, stirring occasionally.
  • NOTE: It should take about 20 minutes for the mixture to reduce.
  • Once the glaze has reached your desired thickness, remove it from the heat and set aside.
  • Remove the chicken from the oven and top with slices of mozzarella and tomato.
  • Broil for 8-10 minutes, or until the cheese is melty and the tomatoes are slightly charred.
  • While the chicken is broiling, you can chiffonade (cut into thin strips) the basil.
  • Drizzle the balsamic glaze over the chicken and top with basil.

A classic veal Milanese consists of pounded veal cutlets or chops that have been breaded in crumbs and sometimes Parmesan, then fried until the coating is burnished and brittle. Accompanied by a crisp, bright salad, it's a meal both cooling and rich. In this version, chicken breasts replace the veal, and a salad of tomatoes and mozzarella tossed with garlicky basil oil acts as the foil to the meat. If you want to work ahead, you can coat the cutlets in crumbs up to 4 hours ahead. Store them on a wire rack in the fridge. But try to serve them freshly fried when their coating is at its crunchiest.

1 1/2 pounds chicken cutlets, pounded 1/4-inch thick
Kosher salt and freshly ground black pepper, as needed
2/3 cup plus 1/4 cup extra-virgin olive oil
2/3 cup basil leaves
1 fat garlic clove, finely grated or minced
1 pound cherry or grape tomatoes, halved
8 ounces fresh mozzarella, cut into 1/2-inch pieces
1/2 cup all-purpose flour
2 large eggs, beaten
1 1/4 cups panko bread crumbs
1/4 cup grated Parmesan
2 tablespoons unsalted butter
Lemon wedges, for serving

Steps:

  • Lightly season chicken cutlets all over with salt and pepper; let rest while you make the basil oil.
  • In a blender or food processor, combine 2/3 cup oil, basil, garlic and salt to taste; purée until smooth.
  • In a medium bowl, toss tomatoes and mozzarella with about half of the basil oil and salt to taste. Set aside.
  • Place flour in a shallow bowl or plate. Pour eggs into another shallow dish; combine panko and Parmesan in a third dish.
  • In a large skillet, melt butter and remaining 1/4 cup oil over medium heat. As it heats, dip a chicken cutlet in flour, shake off excess, then dip in eggs. Shake off excess, then dip both sides in panko mixture and transfer to a rimmed baking sheet. Repeat with remaining cutlets.
  • When oil is hot, fry 2 cutlets at a time until bottoms are golden, about 3 minutes. Flip and fry until golden and crispy all over, about another 3 minutes. Transfer to a paper towel-lined plate. Sprinkle immediately with salt.
  • Taste tomato-mozzarella salad and add more salt and-or basil oil if needed. Serve cutlets topped with a squeeze of lemon, a drizzle of remaining basil oil and tomato-mozzarella salad.

This recipe served as the cover photo for the August 2007 issue of Food and Wine magazine. I couldn't get my mind off the photo and made these the very next day. This is a perfect summertime sandwich! Quick, easy and delicious. Prep time includes marinating time.

1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
1 lemon, zest of, finely grated
1 1/2 tablespoons fresh lemon juice
1 tablespoon thyme leaves
2 garlic cloves, minced
kosher salt & freshly ground black pepper
2 tomatoes, thinly sliced
12 chicken breasts, cutlets (half inch thick totaling 2 1/2 pounds)
6 ciabatta rolls, split
6 slices fresh mozzarella cheese (1/3 inch thick)
6 large basil leaves

Steps:

  • In a large bowl, whisk 1/4 cup of the olive oil with the lemon zest, lemon juice, thyme, garlic and a generous pinch each of salt and pepper. Spoon 1» tablespoons of the mixture into a medium bowl, add the tomatoes and turn to coat. Add the chicken to the large bowl and turn to coat. Let the tomatoes and chicken stand at room temperature for 30 minutes.
  • Light a grill. Brush the rolls with the remaining 2 tablespoons of olive oil and grill over high heat until golden. Add the chicken to the grill, season with salt and pepper and grill over high heat, turning once, until cooked through and lightly charred, about 6 minutes. Place the chicken on the rolls and top with the mozzarella, tomato and basil. Spoon any tomato juices on the top half of the bun, close the sandwiches and serve.

2 pounds baby Yukon gold potatoes
1 tub bocconcini, bite size fresh mozzarella in water
2 pounds Italian hot or sweet fresh chicken, turkey or pork sausage, bulk if available
1 1/2 pounds broccolini
1 head garlic
1 (28-ounce) can San Marzano tomatoes
1/2 cup chicken stock or milk
1 tub grated Pecorino Romano
1 tub good quality fresh pesto from the refrigerated cases of the market
Extra-virgin olive oil, for liberal drizzling, 4 to 5 tablespoons total
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Quarter baby potatoes and cover with cold water. Bring to a boil then salt water and cook until tender, about 12 minutes.
  • While potatoes come up to a boil, place a nonstick baking sheet alongside a mixing bowl. Remove 12 pieces of bite sized mozzarella from the water and set on work surface. Remove sausages from casings, if bulk not available, and place in a bowl. Combine the meat into a single mound then score it into 4 sections. Each section will yield 3 large sausage meatballs. To form each ball, take a handful of meat and wrap it around a piece of mozzarella. Roll 12 balls. Wash up. Coat balls with a drizzle of olive oil. Bake 18 to 20 minutes until cooked through and evenly browned.
  • While the balls are cooking, trim ends of clean broccolini and scatter evenly over a baking sheet. Grate or chop 2 to 3 cloves of garlic and drizzle the broccolini and garlic with olive oil, then season with salt and pepper and roast 12 to 15 minutes to crisp the broccolini tops.
  • While the broccolini is roasting, add tomatoes to a small pot or skillet, mash with a potato masher and season with salt and pepper. Heat over medium heat then simmer to reduce about 8 to 10 minutes.
  • When the potatoes are tender, drain and return to the hot pot to dry them out a little. Mash the potatoes with 1/2 cup stock or milk, 1/2 to 2/3 cup grated Romano cheese, a few generous handfuls, lots of black pepper and a little salt.
  • Turn the heat off the tomatoes and stir in 1/2 cup prepared pesto.
  • Serve three cheese-stuffed sausage balls with tomato-basil sauce on top or underneath, cacio e pepe smashed potatoes and broccolini alongside.

I developed this, and the great thing about this recipe is that you can coat the breasts, brown them in oil and then refrigerate for up to 8 hours before continuing with the remainder of the recipe, which makes this a great recipe to serve to dinner guests, 30 minutes before serving just drizzle with the marinara sauce and bake! I use recipe#136292 that I make and freeze to use in recipes or recipe#71273 can also be used, your own favorite marinara or pasta sauce can also be used. If you are using more than 7 chicken breasts you will need a larger baking dish and breadcrumb mixture and marinara sauce will need to be increased. It is best to use fresh not frozen thawed breasts for this, with previous experience cooking frozen thawed breasts sometimes tend to create a soggy crust, if you are using frozen thawed make certain that your chicken breasts are completely thawed with no extra moisture left in them. You will love this dish!

7 boneless skinless chicken breasts
2 large eggs, slightly beaten
2 cups dry breadcrumbs (use dry breadcrumbs only!)
1/4 cup grated parmesan cheese
1/2-1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1 -2 teaspoon seasoning salt
1/2 teaspoon black pepper (or to taste)
2 -3 cups marinara sauce (use about 1/3 cup sauce for each breast, but can use more)
7 -14 slices mozzarella cheese (or to taste)

Steps:

  • Grease a 13 x 9-inch baking pan.
  • In a shallow dish mix together the breadcrumbs with the next 5 ingredients.
  • In another small shallow dish whisk the eggs.
  • Heat oil in a skillet over medium-high heat (use enough oil to coat bottom of the skillet).
  • Dip the breasts first in the egg (shaking off any excess egg) and then coat in the breadcrumbs mixture.
  • Place in oil and cook on both sides until browned (about 3-4 minutes on each side, do not cook the breasts completely just until the outside breadcrumb coating is lightly browned).
  • Place the browned breasts single layer in the greased casserole dish.
  • At this point you can cool and refrigerate until ready to bake.
  • Spread about 1/4 to 1/3 cup the marinara sauce over the browned breasts (not too much sauce or it will cause the outside breading to turn soggy and soft, if you do not mind that then use as much sauce as you like!).
  • Set oven to 350 degrees, oven rack set to bottom position.
  • Bake for about 35 for smaller thin breasts and 45 minutes for thicker-sized breasts or until the chicken is done (if you are baking the chicken from refrgerated then cooking time might take a little longer, cooking time will vary depending on the size of the chicken breasts).
  • Remove the chicken and place 1 or 2 slices of mozzeralla cheese on top of each cooked breast then return to oven for anout 4-5 minutes or until cheese is hot and bubbly or place under the broiler to melt cheese.
  • Delicious.

0.75 (142 g) package shake and bake original chicken coating mix (save the rest for another time)
1/2-1 teaspoon garlic powder
1 teaspoon fresh ground black pepper

1 1/2 cups pasta sauce, divided (can use more)
6 slices mozzarella cheese (can use shredded cheese)

Steps:

  • Remove about 1/4 of the package of seasoning mix and save for another time.
  • Place the coating mix in the shaker bag and add in the garlic powder, black pepper and seasoned salt; shake the bag to combine.
  • Add in one breast at a time to the bag and shake to coat with the crumb mixture.
  • Place the coated breasts into a greased 11 x 7-inch baking pan (or use a pan large enough to hold the chicken).
  • Set oven to 375 degrees F (set oven rack to lowest position).
  • Bake for 20 minutes.
  • Remove from oven and drizzle about 1/4 to 1/3 cup pasta sauce over each breast then place a slice of mozzarella cheese or about 1/3 cup shredded cheese on top.
  • Return to oven and bake for for about 10-15 minutes or until the chicken is completely cooked.

2 chicken breasts (boneless skinless)
3 slices bacon (thick cut deli style)
3 slices tomatoes (about 1/4 inch thick)
1/8 teaspoon rosemary (crushed or 1 sprig fresh)
2 slices mozzarella cheese (sandwich thickness)
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 425 degrees. Cut bacon slices into 3rds. Slice tomato into 3 slices. Butterfly chicken breasts cutting almost in half. Cut slices of cheese in half.
  • Lay 1 1/2 slices of tomato in each chicken breast. Top that with both halves of cheese placed end to end on each breast. Sprinkle each breasts on the inside with garlic and onion powders and pepper. Close chicken breasts. Sprinkle each breasts on top with small amount of rosemary or if using fresh pull off a couple leaves and place on top of each breasts. Lay bacon across each breasts. Tuck any overlay of bacon underneath breasts. Secure bacon with toothpicks.
  • Place breasts in shallow baking dish. Bake for 45 minutes. Remove bacon (and fresh rosemary leaves if used). Place chicken back in oven for additional 8-10 minutes to brown. While waiting for chicken, place any uncooked bacon in the microwave for a few seconds to completely cook. Serve chicken with crumbled bacon on top.

4 boneless skinless checken breasts halves
3 Tbsp olive oil divided
1 c chopped onion
2 tsp minced garlic
1 (14) oz can italian style stewed tomatoes undrained
1 1/2 c shredded mozzarella cheese

  • 1. Preheat broiler. Pound chicken breasts between 2 pieces of plastic wrap to 1/4 inch thickness using flat side of meat mallet or rolling pin.
  • 2. Heat 2 tablespoons oil in ovenproof skillet over medium heat.
  • 3. Cook chicken 31/2 minutes per side or until no longer pink in center. Transfer to plate keep warm.
  • 4. Heat remaining 1 tablespoon oil in same skillet over medium heat. Cook and stir onion and garlic 3 minutes.

1 (16-ounce) package pizza dough, brought to room temperature
2 teaspoons extra-virgin olive oil
2 tablespoons grated Parmigiano-Reggiano
1/3 pound broccoli from trimmed broccoli bin in produce section, 1/3 head
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 cloves cracked garlic
1/2 pound chicken breast cut for stir fry or chicken tenders
Salt and freshly ground black pepper
1 cup part skim ricotta cheese
10 sun dried tomatoes in oil, drained and sliced
1 cup shredded mozzarella cheese, available on dairy aisle
12 to 15 leaves fresh basil, torn or stacked and thinly sliced

Steps:

  • Preheat oven to 500 degrees F.
  • On a 12-inch nonstick pizza pan, stretch out your dough and form the pizza crust. Drizzle 2 teaspoons extra virgin olive oil on crust and spread it with a pastry brush over the dough to the edges. Sprinkle crust with 2 tablespoons grated Parmigiano-Reggiano.
  • In a small covered saucepan, bring 2 inches water to a boil. Separate broccoli tops into florets, discarding lower stalks or reserving for soup. Salt water and add broccoli florets. Cook covered 3 to 5 minutes. Drain broccoli and set on cutting board. Chop broccoli florets into small pieces.
  • Heat a small nonstick pan over medium high to high heat. Add oil, cracked garlic and chicken. Season with salt and pepper. Brown chicken breast cut for stir-fry or tenders until lightly golden all over, 3 to 5 minutes. Chop sauteed chicken and garlic on a cutting board into small pieces.
  • To assemble pizza, dot crust with chopped broccoli bits and cooked chopped chicken. Dot crust with spoonfuls of ricotta and spread ricotta gently with the back of your spoon. Add sliced sun-dried tomatoes, scattering them around the pizza to the edges. Complete the assembly with a thin layer of shredded mozzarella, about 1 cup. Place pizza in oven on middle rack and lower heat to 450 degrees F. Bake 12 minutes, until cheese is deep golden in color and crust is brown and crisp at the edges. Remove pizza from the oven and let stand 5 minutes. Top with lots of torn or shredded basil. Cut pizza into 8 slices using pizza wheel and serve.

  • In a heavy skillet heat 1 tablespoon of the butter and the oil over medium high heat, and in the fat sauté the cutlets in 2 batches for 1 minute on each side or until they are just cooked through. Transfer them to a baking dish and tent with foil to keep warm.
  • Preheat the oven broiler.
  • Remove the skillet from the heat, add the garlic, and cook stirring over medium low heat for a few moments. Add the wine and the lemon juice and simmer the mixture until it is reduced by half.
  • Remove the skillet from the heat, add the remaining tablespoon butter, and swirl the skillet until the butter is incorporated in the sauce.
  • Pour the sauce over the cutlets, and top the cutlets with the tomato, the artichoke hearts, and the mozzarella.
  • Broil the cutlets about 3 inches from the heat until the mozzarella is melted and begins to bubble.
  • Sprinkle with parsley and serve.

I love experimenting with different stuffings for chicken. Here's another combination I've come up with that works really well.

4 whole chicken breasts
1 avocado, Sliced
8 sun-dried tomatoes (in olive oil)
150 g mozzarella cheese
8 slices prosciutto ham (These are to wrap around the breast. I always say 8 slices to allow for 2 per breast. Last night I c)
1 cup milk
1 teaspoon condensed chicken broth (powder, cube, paste etc.. My stock is quite dense, so you may have to adjust for taste depending on )
125 ml dry white wine
1 1/2 teaspoons cornflour
2 teaspoons Worcestershire sauce
3 teaspoons Dijon mustard
3/4 teaspoon brown sugar
1/2 cup cream
1 tablespoon fresh parsley, chopped finely

Steps:

  • Pound chicken with a meat mallet to flatten slightly (about 1/2 inch thickness).
  • Place 2-3 slices of the avocado onto each breast (You will have avocado left over I use this for my salad I serve on the side), remove tomatoes from oil and slice thinly ( 2 Tomatoes per breast) lay slices on top of avocado, finally top with sliced mozzarella. (quarter of cheese per breast). Fold breast over to cover, Wrap two slices of Prosciutto around each breast.
  • Pre-heat oven to 180c. Lightly oil an oven proof dish, place chicken breasts in dish and cook for 35-40 minutes or until cooked through.
  • Sauce.
  • Heat milk in a medium saucepan add chicken stock. Mix a little water with cornflour and add half the cornflour to milk. Stir until sauce thickens slightly.
  • Add the wine, Worcestershire sauce stir, whisk in mustard until blended.
  • Finally add the sugar, cream and remaining cornflour stir until sauce boils and thickens, add the parsley, stir and serve with chicken.
  • To serve: Place chicken on a plate, pour the sauce over and serve with salad on the side.

This is a super easy weeknight meal, very few ingredients, but is quite lovely, I think sometimes simple is great. Makes for an easy meal to make and kind on the wallet but very satisfying. I served mine with pasta, it would also pair well with gnocchi or rice.

500 g cherry tomatoes
5 garlic cloves, unpeeled (large ones)
2 tablespoons olive oil
4 chicken breasts
1/4 cup fresh basil, chopped between coarse and fine
60 ml cream
200 g mozzarella cheese, sliced into 4 slices

Steps:

  • Preheat oven 200c.
  • Combine tomatoes, garlic and oil in an ovenproof baking dish. Roast uncovered, about 20 Min's or until tomatoes soften. When garlic is cool enough to handle squeeze out flesh.
  • Cook chicken in a pan, until nicely browned and cooked through.
  • When chicken is close to being finished, blend or process garlic and all but 12 tomatoes until smooth.
  • Place in a medium saucepan with basil and cream and cook stirring over a low heat, until heated through. Keep sauce warm on stove.
  • Top each breast with a slice of mozzarella and place under grill until cheese melts.
  • To Serve: Place chicken on a plate top with sauce and garnish with tomatoes (3 per plate) and basil leaves if desired. I served mine with tri colour pasta.

2 chicken breasts, sliced thin
1 tablespoon olive oil
1 teaspoon garlic powder
3 cups uncooked penne pasta
1 (14 ounce) can diced tomatoes
5 tablespoons butter
2 cups parmesan cheese
4 ounces shredded mozzarella cheese

Steps:

  • .Heat oven to 350°F.
  • Cook pasta to al dente.
  • Saute chicken in olive oil until done. Add garlic powder during cooking.
  • Heat tomatoes in saucepan to boiling, reduce heat to medium and cook 5-8 minutes until liquid has evaporated.
  • Melt butter in 9X12 glass dish in oven.
  • When pasta is cooked, reserve 1 cup of starch water.
  • Drain pasta and transfer to glass dish.
  • Toss pasta until coated in melted butter.
  • Slowly add Parmesan cheese and starch water until Alfredo sauce is made.
  • Add tomatoes, mozzarella cheese and chicken to dish.
  • Mix well.
  • Bake at 350 F for approximately 30 minutes.

1/4 cup flour, seasoned with salt and pepper
2 tablespoons unsalted butter
1 tablespoon olive oil

2 tablespoons dry white wine
2 tablespoons fresh lemon juice
4 1/4-inch-thick slices of tomato
1/2 cup sliced drained marinated artichoke hearts
4 1/4-inch-thick slices fresh mozzarella
1 tablespoon minced fresh basil

Steps:

  • Coat the chicken cutlets in the flour, coating them thoroughly and shaking off the excess. In a heavy skillet heat 1 tablespoon of the butter and the oil over moderately high heat until the foam subsides and saute the cutlets for 1 minute on each side, or until they are just cooked through, transferring them to a heated flameproof platter. •2 boneless skinless chicken breasts
•8 to 10 slices mozzarella cheese
•5 to 6 grape tomatoes; sliced in half
•Fresh basil leaves
•2 teaspoons Italian seasoning
•Salt and Pepper
•2 teaspoons olive oil

Steps:

  • 1. Place the chicken breasts on a cutting board. Using a sharp knife, cut slits across the chicken breast about 3/4 of the way through being careful not to cut all the way through. 2. Depending on the size of your chicken breast, you're going to want around 6 to 8 slits per chicken breast. 3. Stuff each slit with a slice of mozzarella cheese, half a grape tomato and a basil leaf. 4. Place the chicken breasts in a baking dish that has been coated with non-stick baking spray. 5. MOZZARELLA CHICKEN IN CHERRY TOMATO AND ASPARAGUS SAUCE

1 package(s) (about 4-6) thin sliced and cleaned chicken breasts
1 bunch(es) asparagus, fresh
1 package(s) cherry tomatoes (not grape)
1/2 cup(s) of dry white wine
2 clove(s) garlic sliced
2 - eggs with a dash of milk and black pepper whisked together
2 cup(s) seasoned breacrumbs preferably 4c
1 package(s) fresh mozzarella
1 cup(s) vegetable oil
2 - dashes each of black pepper, basil, italian parsley and onion powder
- salt to taste
1 cup(s) water

Steps:

  • Clean and slice asparagus spears in 3 even sized pieces per spear, throwing away the bottom 1/2 inch. Rinse clean and remove green leafy top (if any) of the cherry tomatoes. Add cherry tomatoes, asparagus, sliced garlic, 1/4 cup of extra virgin olive oil, the dashes of seasoning and salt to taste to a saute pan over medium heat and cover. Stir occasionally to make sure vegetables don't stick to bottom of pan. When tomatoes start to burst (about 5 mins.)add the 1/2 cup of white wine to pan and stir. Then add in 1/2 cup intervals the water to pan to build up the sauce making sure to scrape all sides of pan so no vegetables will get stuck and burn. Cook for a total of 15 mins. Sauce will be relatively thick and chunky. Then take the egg wash and bread crumbs and bread the cutlets. Then fry in the vegeatble oil. Slice up fresh mozzarella in thin slices. When cutlets are done line a baking pan with non stick aluminum foil and place cutlets evenly in pan. Cover each cutlet with a slice or two each of the fresh mozzarella. Then take your cherry tomato and asparagus sauce and pour evenly over the cutlets and bake at 400 degrees until the cheese melts and browns just slightly about 10-15 mins. Remove from oven and enjoy, mmmm!
  • Hint: If for some reason it looks as if you won't have enough sauce to cover the cutlets in the pan. add 1/4 water, 1 tablespoon of olive oil and a shot of white wine to saute pan before pouring over chicken. You may also add in at that point an extra dash of seasonings and salt to taste if desired.

SPINACH STUFFED CHICKEN BREAST WITH MOZZARELLA & TOMATO SAUCE IN BREADCRUMBS

This deliciously healthy recipe is a great and flavoursome recipe that is easy to make.

Steps:

  • Start with the sauce. Peel and seed the tomatoes and place to one side. Next pour your measured oil into a deep skillet or pot and leave on a medium heat.
  • Next dice your onions and peel/chop your garlic as finely as you can. Once you have done this add them to the simmering oil and stir until the onions become colourless.
  • Then add the herbs, tomatoes and cherry tomatoes stirring well until thoroughly combined. After this add the tomato puree and stir again. Finally add season generously and stir once more.
  • Place a lid over the pan and leave to simmer for 1.5-2 hours stirring every 20 to ensure the sauce-like consistency.
  • While the sauce is simmering you can begin to prep the chicken. Preheat the oven to 230 degrees centigrade and begin by pouring the breadcrumbs into a bowl and mixing them thoroughly with the salt and a generous sprinkle of parmesan.
  • Next prep the filling. Using a frying pan sauté the spinach using garlic oil to add flavour until just cooked. then mix together the spinach, a tablespoon of parmesan and 1 egg white. Stir gently as to not let air into the egg white.
  • Next prepare the chicken. slit the raw chicken in the middle and so a flap is created. then spoon in a tablespoon or enough of the spinach mixture into the flap and so it is not pouring out of the chicken but the flap just gently rests on top and the flap still closes. Repeat this with all the chicken breasts you could add an optional smooth layer of ricotta cheese for a little extra flavour.
  • (optional) Place the chicken in the remaining egg white and cover completely and dip in the breadcrumb/parmesan mix then place in an oiled baking dish. Repeat with the remaining chicken breasts and place them evenly apart from each other.
  • Bake the chicken in the oven for 25 minutes until the breadcrumbs have turned golden brown. Then remove from the oven and cover in the tomato sauce and place a slice of mozzarella over the top of each breast.
  • Place back in the oven and for roughly 5 minutes until the mozzarella has melted. Then sprinkle with the remaining parmesan and basil leaves and serve warm. This dish can be served with mushrooms, potatoes or seasonal veg for an additional healthy and delicious taste.
