Cheese and potatoes - such a delicious combination. Easy to prepare this is an easy side dish. Serve at the holidays or as a side dish for steak or chicken. The potatoes are buttery and tender. Parmesan cheese adds a nice flavor to crispy crust while the mozzarella cheese adds a little gooeyness and a creamy flavor. So good!

- 1. Boil potatoes until tender on medium to high heat for about 15 minutes.
- 2. Drain potatoes.
- 3. Preheat oven at 350 degrees. Place potatoes in a 2-quart baking dish. Pour butter over potatoes. Then lightly sprinkle garlic salt and paprika over the potatoes.
- 4. Sprinkle cheese over potatoes.
- 5. Bake until cheese has melted (about 15 minutes).
CREAMY PARMESAN SCALLOPED POTATOES

- Preheat oven to 325 degrees. Lightly spray a 2 quart casserole dish with cooking spray and set aside. In a small saucepan melt 2 Tablespoons butter over medium heat and which in the flour, salt and pepper. Add the whipping cream and stir for about 2 minutes until it starts to thicken. Add 1/4 cup parmesan cheese.
- Arrange half of the potatoes in the prepared casserole dish overlapping each other. Spread half of the sauce on top followed by 1/2 cup mozzarella cheese. Repeat with another layer of potatoes and sauce topped with mozzarella cheese and remaining parmesan cheese.
- Cover with foil and bake for 40 minutes. Uncover and bake for 25-30 minutes more until the potatoes are fork tender and the top is starting to brown. Sprinkle with chives before serving.

- Dump cream of bacon soup, milk, salt, pepper, garlic powder and onion powder into a large mixing bowl. Stir well.
- Add the frozen diced hash brown potatoes to the bowl.
- Stir until the potatoes are well coated in the soup mixture.
- Add the shredded mozzarella cheese, diced onion and bacon crumble to the bowl. Stir well.
- Dump the potato mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

- Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with the 1 tablespoon of room temp butter and set aside.
- Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well with a potato masher. Mix in the melted butter and milk. Mix in the mozzarella, 3/4 cup of the Parmesan and pancetta. Season, to taste, with salt and pepper and add in parsley.
