This salad was posted by my dear friend, Moxie. I'm not changing a word here. "My mom used to make carrot, apple & raisin salad like this when I was growing up. I came up with this fresh-tasting version one summer afternoon when I had fresh carrots & basil from the garden and was looking for an easy side dish for lunch. My daughter loved it -- but don't give it to kids under 1 because of the honey."

4 carrots
1/2 cup raisins
1/2 cup pineapple chunk
1 tablespoon honey
1 tablespoon lime juice
1/2 teaspoon fresh grated ginger
1 tablespoon chopped fresh basil

Steps:

  • Grate carrots, and combine in a bowl with raisins, pineapple chunks and basil.
  • Whisk honey, lime juice and ginger together and mix with other ingredients.

7 tablespoons olive oil
2 tablespoons wine vinegar
1/8 teaspoon salt
1/4 dry mustard
1 pinch pepper
1 small head lettuce
1 small cucumber, peeled and thinly sliced
1 (11 ounce) can mandarin orange segments, drained
1/4 red onion, peeled and thinly sliced
1 banana
2 teaspoons lemon juice

Steps:

  • Place all dressing ingredients in a screw-top jar. Cover and shake vigorously for 30 seconds to mix thoroughly. Set dressing aside.
  • Tear lettuce into bite-sized pieces.Place in a salad bowl and add cucumber, mandarin orange segments, and red onion.
  • Slice banana and sprinkle it with lemon juice to prevent it from turning brown. Add banana to salad bowl. Cover and chill until ready to serve.
  • At serving time, toss salad with vinaigrette dressing.

1 lb small curd cottage cheese
1 (8 ounce) can crushed pineapple (well drained)
1 (11 ounce) can mandarin oranges (well drained)
1 (8 ounce) carton Cool Whip
1 (3 ounce) package orange gelatin (use DRY powder)

Steps:

  • Mix cottage cheese, crushed pineapple, oranges and whipped topping.
  • Sprinkle gelatin over top and fold in well.
  • Refrigerate for at least 2 hours or overnight.
  • To make it pretty, use a large ice cream scoop or mold in muffin cups greased with mayo and serve on lettuce leaf.

1 package orange gelatin
1 package lemon gelatin
2 cups water, boiling
1/4 cup water, cold
8 ounces crushed pineapple in juice
1 cup grated carrot
8 ounces vanilla yogurt, lowfat

Steps:

  • Combine orange and lemon jello; dissolve in boiling water.
  • Measure out one cup; chill until slightly thickened.
  • Add cold water to remaining jello, then add 1 8 ounce tin crushed pineapple with juice, and the coarsely grated carrots.
  • Stir well.
  • Pour into a decorative mold.
  • Chill until set but not firm (about 45 minutes).
  • Blend yogurt with reserved jello; spoon into mold.
  • Chill until firm (3-4 hours).
  • Unmold and serve.

8 ounces carrots, peeled, cut into 1/4 slices
1 pinch sugar
12 ounces parsnips, peeled and cut into 1/4 slices
2 tablespoons butter or 2 tablespoons margarine
salt
pepper
4 tablespoons chopped fresh parsley or 1 tablespoon dried parsley

Steps:

  • Boil the carrots in a little lightly salted water with a pinch of sugar in it, until soft and drain.
  • Boil the parsnips separately in lightly salted water until soft and drain.
  • Marsh or puree them together.
  • Add the butter (less or more as you wish).
  • Season and sprinkle with the parsley. Serve.

2 tablespoons lemon juice

1/4 cup plain nonfat yogurt
1 tablespoon honey

Steps:

  • Blend together mayonnaise, lemon juice, salt, yogurt and honey.
  • Pour dressing over carrots and raisins and mix thoroughly.
  • Chill for 30 minutes before serving.
