HOMEMADE MOUNTAIN PIE PIZZA
My husband was watching an episode of Man versus Food on Food Network where he visited Beau Jo's in Boulder, Colorado. There they serve Mountain Pie Pizza. Steps:
- 1. In a large mixing bowl combine yeast, sugar, salt, and basil.
- 2. Add hot water and milk. Let sit for a few minutes.
- 3. Add 2 tbsp oil and combine. It will look soapy.
- 4. Stir in the flour until a thick dough forms. You may need to add water or flour to adjust for the right texture.
- 5. Knead the dough a few minutes on a floured surface until it is smooth.
- 6. Roll out the dough until 1/4" thick (it should be about 20" in diameter)
- 7. Use the remaining 2 tbsp oil to oil a springform pan. Lay the dough in the springform pan and up the edges. Fold it over a little along the top of the pan so that it will not fall in (see the picture)
- 8. Cover the dough and pan with a damp towel and place in a warm place to rise for 1 1/2 hours.
- 9. Meanwhile, preheat the oven to 425 degrees Farenheit
- 10. Add the toppings (all the sauce, then all the spices, then 8oz cheese, then the broccoli, olives, and red bell peppers, then the other 8oz cheese, then the meat)
- 11. Bake for 45 minutes or until the crust along the upper edge is golden brown. You might want to check it at 30 minutes to make sure, as ovens vary.
- 12. When you take it out, I suggest you check to see how liquidy it is and maybe pour out some of the liquid before removing from the springform pan. This will help when you cut the pizza.
- 13. Let the pizza cool about 10 minutes, then remove from the springform pan. The crust should serve as a perfect barrier for all the toppings to stay in. It looks soooo amazing when you cut it! ENJOY!

- In a large saucepan, combine sugar, cornstarch, salt and if desired, cinnamon. And water and stir until smooth; add blueberries. Bring to a boil; cook and stir until thickened, 2-3 minutes. Set aside to cool slightly. Gently fold strawberries, raspberries, blackberries and lemon juice into the blueberry mixture., Preheat oven to 400°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add berry mixture; dot with butter. Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge. , Bake for 10 minutes. Reduce oven setting to 350°; bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cool on a wire rack. Store in the refrigerator.

I always have a supply of frozen berries and love to make this pie. Thaw just enough to separate- could use fresh if available. Feel free to use more or less of a certain berry, as long as the total amount is around 4 cups.

Steps:
- Combine sugar, cornstarch, salt and cinnamon in a large saucepan.
- Stir in berries and add water and lemon juice.
- Cook over medium heat just to the boiling point- it should be thickened. If berries are frozen this takes a little while.
- Pour into pie shell and dot with butter.
- Top with a lattice crust or full crust with slits cut.
- Brush top with milk and sprinkle with sugar.
- Bake at 350 for 45 minutes.

- 1. Melt butter in a deep 3 qt casserole dish, while the oven is preheating, or melt it in the microwave.
- 2. In a small mixing bowl, combine flour, baking powder, and salt with a whisk. Blend in sugar. Then add milk and whisk until smooth.
- 3. Once butter is completely melted, pour the batter mix evenly over the melted butter, but DO NOT MIX.
- 4. Drop the pie filling by spoonsful over the batter, but DO NOT MIX.
- 5. Bake 45-60 min. at 350*, until golden and bubbly. Serve warm or room temp. Top with ice cream or whipped cream if you like.
- 6. NOTES: Baking time varies a bit with the size and shape of the baking dish, I find. Don't be afraid to give it a little extra time in the oven if it needs it -- you don't want it gooey. This dessert reheats very well. Cherry is my favorite pie filling to use in this recipe, but others are also good -- experiment to find your favorite! *After becoming gluten intolerant we have substituted gluten free flour very successfully. **If you prefer, use milk and butter substitutes; depending on your filling choice, almond or coconut milk would be wonderful, and soy works well, too.

- Have an 8-inch double crust pie shell ready.
- Sort, rinse and drain blueberries.
- Sprinkle lemon juice over berries.

This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him! I still make it as it brings a 'little bit of Bobby' back to the table. I dedicate this recipe to him. RIP Bobby John Love
