These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
⅓ cup vegetable oil
1 egg
⅓ cup milk, or more as needed
1 cup fresh blueberries
½ cup white sugar
⅓ cup all-purpose flour
¼ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  • Bake for 20 to 25 minutes in the preheated oven, or until done.

1 cup whole wheat flour
1 cup rolled oats
1 cup natural bran
1/2 teaspoon salt
1/3 cup non-fat powdered milk
1/2 teaspoon baking soda
2 teaspoons baking powder
1 cup mashed banana
2 egg whites
3 -4 tablespoons maple syrup or 3 -4 tablespoons molasses
2 tablespoons vegetable oil
1 cup orange juice
2 tablespoons dark rum or 2 teaspoons rum extract

Steps:

  • Preheat oven to 400 degrees.
  • Combine dry ingredients.
  • In a larger bowl, mash the banana and beat in the egg whites until mixture is frothy.
  • Blend in the honey, vegetable oil (if using), orange juice and rum.
  • Incorporate dry ingredients and blend just until combined.
  • Lightly grease muffin tins and fill two-thirds.
  • *This oil can be eliminated for completely fat-free muffins.
  • Bake for 18-20 minutes.

These are wonderful for just throwing in your favorite ingredients---I don't need any other muffin recipes. Editing to add, based on a recent review: Be sure not to overmix muffins; if you do, they will be tough. They should still be lumpy when you are finished mixing them.

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil

Steps:

  • Preheat oven to 400°F (205°C).
  • Stir together the flour, baking powder, salt and sugar in a large bowl.
  • Make a well in the center.
  • In a small bowl or 2-cup measuring cup, beat egg with a fork.
  • Stir in milk and oil.
  • Pour all at once into the well in the flour mixture.
  • Mix quickly and lightly with a fork until moistened, but do not beat.
  • The batter will be lumpy. DO NOT OVERMIX. This will create tough/heavy muffins.
