From Southern Living's Ultimate Book of Appetizers, these sound tasty. NOTE #1: Based on the 4 previous reviews, I've changed the recipe to decrease the amount of cinnamon, since the reviews indicate that the recipe seems heavy on the cinnamon. Original recipe calls for 2 tablespoons of cinnamon -- you make the call! NOTE #2: The directions for this recipe seemed somewhat lacking in the book, so I embellished a little. I would recommend for step #7, to either spray or spritz the oil on the chicken rather than brushing it on.

5 lbs chicken wings
1/2 cup fresh lemon juice (about 4 lemons)
8 garlic cloves, minced
1 3/4 cups all-purpose flour
2 tablespoons salt
2 tablespoons ground coriander
2 tablespoons ground cumin
1 tablespoon ground cinnamon (amount decreased from 2T in original recipe)
2 tablespoons paprika
2 tablespoons ground red pepper
2 tablespoons black pepper
1/2 cup extra virgin olive oil

Steps:

  • Cut off and discard chicken wing tips; cut wings in half at joint.
  • Combine chicken, lemon juice, and garlic, tossing gently. Let chicken marinate 20 to 30 minutes, stirring occasionally to re-coat.
  • Meanwhile, line a 15 x 10-inch jellyroll pan with aluminum foil; lightly grease aluminum foil and set pan aside. Preheat oven to 400 degrees F.
  • Combine flour and next 7 ingredients in a large heavy-duty zip-top plastic bag; seal bag, and shake to mix ingredients.
  • Remove chicken from lemon juice mixture, discarding lemon juice mixture.
  • Place chicken, a few pieces at a time, in bag with flour mixture; seal bag, and shake to coat chicken.
  • Place chicken on prepared pan, brush with oil. Bake at 400 degrees F for 30 minutes or until done.

This was published in a women's magazine over 10 years ago and has been one of my stand-by favorites of all time! Served over couscous completes this delicious meal. *I have best success using low heat, all day cooking with this.

1 1/2 lbs eggplants (peeled, cut into 1-inch cubes)
1 yellow pepper, diced
3/4 lb roma tomato (cut into 1/2-inch chunks)
1/3 cup raisins
1/3 cup red onion
8 sun-dried tomatoes packed in oil, cut into strips
2 tablespoons tomato paste
2 tablespoons balsamic vinegar
3 large garlic cloves, crushed
1 teaspoon turmeric
2 teaspoons salt
1/4 teaspoon hot red pepper flakes
8 chicken thighs, skin and visible fat removed
1 (15 ounce) can chickpeas, rinsed and drained
2 tablespoons smooth peanut butter

Steps:

  • In 5 or 6-qt slow cooker, combine eggplant, tomatoes, bell pepper, raisins, onion, sun-dried tomatoes, tomato paste, vinegar, garlic, turmeric, 1 tsp of the salt and the pepper flakes.
  • Toss with large spoon to blend.
  • Place chicken thighs on top, boneside up.
  • Cover; cook on low for 7-8 hours or high for 2 1/2 - 3 hours, until chicken and vegetables are tender. Remove chicken from cooker and debone, return to cooker. Stir in chickpeas, peanut butter and remaining salt. Reheat to simmer. Serve over couscous.

1 (5/8 ounce) envelope Italian salad dressing mix
1 (8 ounce) package wide egg noodles
2 tablespoons butter, softened
3 cups chopped cooked chicken
1 cup whipping cream
1/4 cup freshly grated parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Remove 1 tablespoons Italian dressing mix from envelope, and set aside; reserve remaining mix for another use.
  • Cook noodles according to package directions; drain well, and return noodles to pan.
  • Stir in 2 tablespoons butter, and toss to coat.
  • Stir in chopped chicken, next 3 ingredients, and 1 tablespoons dressing mix.
  • Cook mixture over medium-high heat, tossing to coat evenly, 5 minutes or until thoroughly heated.
  • Serve immediately.
