Upgraded Kraft Mac N Cheese image

This recipe came from a Kraft newsletter. It's very simple, takes the 'blue box' of mac and cheese and adds just a few ingredients and steps to make it taste a bit more homemade. Note that this calls for the "dinner" Kraft mac n cheese, which is the one with the packet of cheese that you squeeze out, not the standard one with the powdered cheese. If you have to use the standard variety, use 2 boxes and add more milk or sour cream, as it tends to dry out during baking.

1 (14 ounce) package Kraft macaroni and cheese (dinner, blue box)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 teaspoon ground red pepper or 1/4 teaspoon black pepper
6 butter flavored crackers, crushed (like Ritz)
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Preheat oven to 375°F.
  • Prepare Mac n Cheese dinner as directed on package.
  • Stir in 1/2 cup of the Cheddar cheese, the sour cream and pepper.
  • Spoon into greased 1-1/2 quart baking dish; sprinkle with remaining 1/2 cup Cheddar cheese.
  • Combine the melted butter and cracker crumbs and sprinkle over the top.
  • Bake at 375 for 20 minutes. Let stand 5 minutes before serving.

The Best Baked Mac and Cheese image

A blend of three cheeses delivers a punch of flavor in this creamy mac and cheese. Toasted breadcrumbs give a crunchy texture contrast.

Kosher salt and freshly ground black pepper
1 pound elbow macaroni
Half a loaf day-old French bread
1 stick (8 tablespoons) unsalted butter
1/4 cup all-purpose flour
2 teaspoons mustard powder
1/4 teaspoon cayenne
3 cups milk
8 ounces fontina cheese, grated (about 2 cups)
8 ounces Gruyere, grated (about 2 cups)
1 pound sharp yellow Cheddar, grated (about 4 cups)

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just slightly softened, about 6 minutes. Reserve 1 cup pasta cooking water, then drain the pasta and rinse under cold water.
  • Meanwhile, remove the crusts from the bread and cut into 1-inch cubes. Pulse in the food processor until the bread breaks into bean-sized pieces.
  • Melt 3 tablespoons of the butter in a large skillet over medium heat. Add the breadcrumbs and cook, stirring, until toasted, 5 to 10 minutes. Remove from the heat and season with salt and pepper.
  • Melt 4 tablespoons of the butter in a large saucepan over medium heat. Whisk in the flour, mustard powder and cayenne. Cook, whisking constantly, until smooth and slightly golden, about 2 minutes. Whisk in the milk and cook, whisking occasionally, until the sauce begins to boil and thicken, about 7 minutes, then remove from heat. Stir in the fontina, Gruyere and all but 1 1/2 cups of the Cheddar until fully melted. Stir in the pasta, adding the reserved pasta water as needed to make a creamy sauce. Season with salt and pepper.
  • Melt the remaining 1 tablespoon butter in a small bowl in the microwave. Brush a 9-by-13-inch glass or ceramic baking dish with the melted butter. Spread the pasta mixture in the prepared dish. Sprinkle the remaining Cheddar evenly over the pasta, then scatter the toasted breadcrumbs on top. Bake until heated through and just bubbling, about 25 minutes. Let rest for 10 minutes before serving.

I call this a classic tuna casserole because it is made with a boxed macaroni and cheese and the basic ingredients we all grew up with. This is comfort food at it's best, my two favorites mixed together. This is so good that I took a picture of it after having it for dinner and decided it should be shared on my favorite recipe site. You will love it too.

nonstick cooking spray
1 (7.25 ounce) package macaroni and cheese dinner mix (such as Kraft®)
¼ cup butter
¾ cup milk
1 (10.5 ounce) can condensed cream of chicken soup
1 (15 ounce) can sweet peas, drained
1 (5 ounce) can chunk light tuna, drained and flaked
1 cup shredded mild Cheddar cheese
1 ⅓ cups French-fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
  • Bring 6 cups water to a boil in a medium saucepan. Stir in macaroni from the box and cook for 7 minutes. Drain macaroni, then rinse under cold water and drain again. Set cheese sauce packet aside.
  • Melt butter in the same saucepan over medium heat. Add milk and cheese sauce packet; mix well. Stir in condensed soup and cook until heated through, about 3 minutes.
  • Combine drained macaronis, peas, and tuna in a bowl. Fold in the cheesy soup mixture. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven for 30 minutes. Sprinkle with Cheddar cheese, then sprinkle French-fried onions over top. Bake until onions are brown and cheese is melted, another 5 minutes.
