Not Your Mother's Green Beans (Moosewood Cook at Home) image

Green bean steps out! Their elegant companions here are pine nuts and a shallot vinaigrette.

1/2 cup pine nuts, or thin sliced almonds
3-4 Cups Water
1 pound green beans
1 large shallot, sliced thin or in rings
1/4 cup raspberry or balsamic vinegar
1/4 cup olive oil
2 TBSP chopped fresh parsley, chervil, or basil (I prefer BASIL)
salt and ground black pepper to taste

Steps:

  • Toast the pine nuts in a little extra oil for about 10 minutes or until golden brown. While the nuts are toasting, bring the water to a boil in a small saucepan, and remove and discard the ends of the green beans. Ease the beans into the boiling water and cook them for about 3-6 minutes, or until just tender.
  • Combine the shallots or scallions, vinegar, oil, and herb of your choice in a medium bowl. Drain the beans thoroughly and immediately add them to the bowl, tossing them with the dressing. Stir in the toasted pine nuts. Add salt and pepper to taste. Serve warm, or chill for 20 minutes and then serve.

We like a buffet with all the family here. We serve a variety of salads. This is also great for summer picnics and cookouts. Keeps well, and serves a lot of people.

1 (15 ounce) can green beans
1 pound wax beans
1 (15 ounce) can kidney beans, drained and rinsed
1 onion, sliced into thin rings
¾ cup white sugar
⅔ cup distilled white vinegar
⅓ cup vegetable oil
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon celery seed

Steps:

  • Mix together green beans, wax beans, kidney beans, onion, sugar, vinegar, vegetable oil, salt, pepper, and celery seed. Let set in refrigerator for at least 12 hours.

What makes this cold green bean salad so good is that the beans marinate while they are still warm--that way the beans soak up the vinaigrette and become more flavorful.

2 pounds fresh green beans, trimmed
½ cup balsamic vinegar
⅓ cup extra-virgin olive oil
1 small sweet onion, thinly sliced
1 clove garlic, minced
2 teaspoons chopped fresh parsley
1 teaspoon white sugar
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.
  • Combine vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper in a large bowl.
  • Drain cooked green beans and mix with dressing in the bowl while still warm. Allow to marinate at room temperature for at least 1 hour. Serve at room temperature or chilled.
