1 boneless moose or beef top sirloin steak (about 1 inch thick and 1-1/2 pounds)
1/4 cup cornstarch
1 tablespoon ground mustard
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 medium onion, thinly sliced
1 medium carrot, diced
Hot cooked noodles, optional

Steps:

  • Preheat oven to 350°. Cut steak into serving-size pieces. Combine the cornstarch, mustard, salt and pepper; rub half over steak. Pound with a meat mallet to tenderize. Rub with remaining cornstarch mixture; pound on both sides with the mallet. , In a large skillet, brown steak in oil. Transfer to a greased 2-1/2-qt. baking dish. Top with tomatoes, onion and carrot. Bake, covered, until meat is tender, 1-1/4 to 1-1/2 hours. Serve with noodles if desired.

This is my favorite marinade after a good hunting season. The two days in the fridge really makes all the difference when dealing with fussy people who don't like the wild taste of a good hunt.

Number Of Ingredients 8

1 (12 fluid ounce) bottle amber beer (such as Honey Brown Lager®)
¼ cup soy sauce
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon ground black pepper
1 tablespoon salt
1 dash hot pepper sauce, or to taste
4 (3/4 pound) venison steaks

Steps:

  • Whisk together beer, soy sauce, mustard, Worcestershire sauce, pepper, salt, and hot sauce in a bowl and pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 days.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from marinade and shake off excess. Discard remaining marinade.
  • Cook steaks on the preheated grill until they are beginning to firm and are hot and slightly pink in the center, about 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Allow steaks to rest for 5 minutes before serving.

3 tablespoons canola oil
2 tablespoons minced onion
1 tablespoon lemon juice
1 tablespoon worcestershire sauce
1 tablespoon soy sauce
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 1/2 10 POUNDs elk steak

Steps:

  • Whisk canola oil, onion, lemon juice, Worcestershire sauce, soy sauce, garlic powder, and pepper in a bowl until marinade is well mixed. Place elk steak in a large resealable plastic bag and pour marinade over meat. Coat meat with marinade, squeeze out excess air, and seal bag. Marinate in the refrigerator for at least 4 hours, turning occasionally.Preheat grill for medium heat and lightly oil the grate. Drain elk steak and discard marinade.Cook steaks on the preheated grill until they are beginning to firm and are hot and slightly pink in the center, 5 minutes per side. 3 lbs moose round steak
1/2 cup butter
1 lb ground venison
salt and pepper
1 large onion, chopped
1 cup water
2 tablespoons pine nuts
1/2 cup Burgundy wine

Steps:

  • Melt 1/2 stick butter in large heavy skillet at low heat.
  • Brown onion, adding ground venison and pin nuts.
  • Tenderize steak with meat tenderizer using directions on bottle.
  • Lay steak on floured board.
  • Spread ground meat mixture on round steak and roll up as a jelly roll.
  • Tie with butcher string.
  • Melt remaining butter and brown steak on all sides.
  • Add water and burgundy.
  • Cover and steam for two hours or until tender.

1 large moose steak
3 tablespoons bacon drippings
1/2 cup bouillon or 1/2 cup consomme
1 md onion, chopped
1/2 teaspoon garlic powder
3 tablespoons tomato paste
1/2 cup water or 1/2 cup sherry wine
1 cup sliced fresh mushrooms
2 tablespoons unbleached all-purpose flour
1/4 cup cream
1 dash paprika

Steps:

  • Heat the bacon drippings in a large skillet and brown the steak on both sides, thoroughly.
  • Add the broth, onion, garlic, and tomato paste diluted in the water or sherry.
  • Cover the pan and simmer for 1 hour or until the meat is tender.
  • Remove the steak from the pan and keep hot.
  • Add the mushrooms to the pan liquid; cover and simmer for 1 minute.
  • Thicken with flour and water mixture.
  • Dilute with the cream.
  • Heat thoroughly.
  • Taste for seasoning and pour over the steak.
  • Sprinkle with the paprika.

Slow Cooker Recipe
We love this recipe, although we don't seem to cook it often enough.
Ingredients:
1-2 pounds moose round steak cut into cubes (Remove Silver Skin) [opens in a new window]
6 Cloves garlic (There's no such thing as too much Garlic )
1 large onion, quartered and sliced
2 stalks celery, sliced
2 medium carrots
16 ounces of tomatoes (chopped)
3 tablespoons flour
1 cup water
1 teaspoon of Worchestershire sauce
1 teaspoon salt
2 Tablespoons Olive Oil
Secret Tip: 1 tablespoon sugar (cut the acid from the tomatoes)
2 cups Good Red Wine - one cup for the cook! ;-)

  • Directions: In a skillet heat Olive oil and brown moose meat. Put meat in slow cooker Combine water and flour in a separate container and mix, add to slow cooker Add remaining ingredients Cook on low for 6-8 hours Serve moose Swiss steak on a bed of rice. Serves 4 Yummy!

4 boneless moose steaks, cut 1 1/2 inches thick
1/4 cup vegetable oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1 teaspoon chili powder
1 tablespoon dry mustard
2 tablespoons beef broth

Steps:

  • Brush steak with oil. Sprinkle with salt and pepper. Combine remaining ingredients to make a thin paste. Place steaks on grill 4 inches above source of heat. Brush with paste and grill 4-5 minutes. Turn steaks with tongs to prevent piercing and brush with remaining paste. Grill to desired doneness.
