MONTREAL CHICKEN SEASONING COPYCAT RECIPE
Use for chicken, fish, vegetables and so much more. As written, this recipe fits into a standard 4 oz. spice jar, but can be easily doubled or tripled.

Steps:
- In a medium bowl whisk together onion, garlic, black pepper, salt, rosemary, thyme, paprika, coriander, and orange zest.
- Let mixture stand for 20 to 30 minutes to allow the salt to draw out the moisture and oils from the orange zest. Break up any clumps that form.
- Transfer mixture to an air-tight container. Store up to 3 months in a cool, dry, dark, place.

MONTREAL RUBBED CHICKEN
I came up with this meal when I wanted something simple to put together, but packed with flavor. This recipe is done in the oven, but can be also grilled. I served it with a simple salad and crusty French bread. Roasted vegetables, rice pilaf and buttered noodles would also be great side dishes for this recipe.

Steps:
- Preheat oven to 400°F.
- Line a sheet pan with foil and spray lightly with nonstick cooking spray.
- Coat chicken breasts with olive oil.
- In a bowl mix remaining ingredients.
- Rub evenly over top and bottom of chicken breasts, and place on sheet pan.
- Bake for 25-30 minutes or until chicken is lightly browned and done.
- (Note: You can prepare these the same way and grill/broil for 8-10 min on each side).

- Preheat oven to 375 F Lift skin off chicken legs and rub seasoning into meat Pull the skin back over the leg and brush with olive oil Sprinkle seasoning onto skin. Place chicken in a baking dish and bake for about 45 minutes on center rack until fully cooked. Skin should be crispy. Serve with your favorite side dish and veggies.
