- Preheat oven to 375°. Coat a 9-in. square baking pan with cooking spray., Cream butter, sugar substitute and brown sugar until light and fluffy. Add vanilla and eggs, one at a time, beating well after each addition. Stir in water. Whisk together flour, milk powder, cocoa, baking powder, baking soda and salt; add to creamed mixture just until combined. Stir in bananas., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean and cake begins to pull from sides of pan, 23-28 minutes. Cool completely in pan on a wire rack. Dust with confectioners' sugar.

NON-DAIRY CHOCOLATE CAKE
This is a very moist chocolate cake. I've also known it to be called Wacky Cake or Crazy Cake. My family likes it with Canned Milk Frosting. (kinda defeats the purpose of non-dairy :) This is very easy one dish and easy clean up. Enjoy!

- Sift first 5 ingredients together in an ungreased 9x13-inch pan.
- Make 3 wells and in each hole place the next 3 ingredients.
- Pour 2 cups of water over top mix with a fork or wire whisk.
- Bake at 350° for 30-35 minutes.

- Beat butter, sugar, eggs, and vanilla.
- Dissolve baking soda in water and add to batter; beat well.
- Add bananas.
- Add dry ingredients; blend.
- Pour chocolate chips into a separate bowl and mix with the remaining teaspoon of flour before adding to the batter (this can keep the chips from sinking to the bottom of the pan). Pour into a 9-inch square baking pan or bundt pan.
- Bake at 350°F for 45-50 minutes.
