1/3 cup butter, softened
Sugar substitute equivalent to 3/4 cup sugar
1/3 cup packed brown sugar
2 teaspoons vanilla extract
2 large eggs, room temperature
1/2 cup water
1-1/3 cups all-purpose flour
1/2 cup nonfat dry milk powder
3 tablespoons baking cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas (about 2 medium bananas)
Confectioners' sugar

Steps:

  • Preheat oven to 375°. Coat a 9-in. square baking pan with cooking spray., Cream butter, sugar substitute and brown sugar until light and fluffy. Add vanilla and eggs, one at a time, beating well after each addition. Stir in water. Whisk together flour, milk powder, cocoa, baking powder, baking soda and salt; add to creamed mixture just until combined. Stir in bananas., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean and cake begins to pull from sides of pan, 23-28 minutes. Cool completely in pan on a wire rack. Dust with confectioners' sugar.

This is a very moist chocolate cake. I've also known it to be called Wacky Cake or Crazy Cake. My family likes it with Canned Milk Frosting. (kinda defeats the purpose of non-dairy :) This is very easy one dish and easy clean up. Enjoy!

3 cups flour
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons vinegar
3/4 cup canola oil (almost any kind of cooking oil will do)
2 teaspoons vanilla
2 cups water

Steps:

  • Sift first 5 ingredients together in an ungreased 9x13-inch pan.
  • Make 3 wells and in each hole place the next 3 ingredients.
  • Pour 2 cups of water over top mix with a fork or wire whisk.
  • Bake at 350° for 30-35 minutes.

1/4 cup butter or 1/4 cup unsalted margarine
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/4 cup water
1 cup mashed ripe banana
1 1/2 cups flour
1 teaspoon baking powder
1 cup chocolate chips
1 teaspoon flour

Steps:

  • Beat butter, sugar, eggs, and vanilla.
  • Dissolve baking soda in water and add to batter; beat well.
  • Add bananas.
  • Add dry ingredients; blend.
  • Pour chocolate chips into a separate bowl and mix with the remaining teaspoon of flour before adding to the batter (this can keep the chips from sinking to the bottom of the pan). Pour into a 9-inch square baking pan or bundt pan.
  • Bake at 350°F for 45-50 minutes.
