STRAWBERRY LASAGNA

Strawberry Lasagna is a layered no-bake dessert with four distinct layers: cookie crust, cheesecake cream, strawberry cream, and whipped cream.

14.3 oz package golden Oreos
½ cup unsalted butter (melted)
8 oz brick cream cheese (softened)
1 cup granulated sugar
24 oz Cool Whip whipped topping ((3 8-ounce containers))
0.3 oz box strawberry Jello
⅔ cup boiling water
½ cup cold water
1 cup ice cubes
1 cup fresh strawberries (chopped small)
Strawberries
Crushed golden Oreo cookies
White chocolate curls

Steps:

  • Place the cookies in a food processor and pulse until the cookies become fine crumbs.
  • Add cookie crumbs to a large bowl along with melted butter.
  • Mix until crumbs are moistened with butter.
  • Pour crumbs into an ungreased 9x13-inch pan and cress into an even layer along the bottom of the pan.
  • Chill for 30 minutes.
  • In a large bowl, add cream cheese and sugar. Beat with a handheld mixer on medium speed until smooth, about 1-2 minutes.
  • Fold in 1 (8 oz) container of Cool Whip.
  • Spread mixture over chilled crust. Chill for 30 minutes.
  • In a large bowl, whisk together strawberry Jello and boiling water until the Jello is dissolved, about 1-2 minutes.
  • Pour the ice-cold water (including the ice) into the Jello mixture.
  • Whisk until combined, and the Jello has thickened.
  • Remove any remaining ice chunks.
  • Fold in 1 (8 oz) container Cool Whip.
  • Fold in chopped strawberries.
  • Place the bowl in the refrigerator to chill and thicken for 30 minutes.
  • Spread the strawberry layer over the cream cheese layer.
  • Chill for 15-30 minutes or until this layer is firm and completely set.
  • Spread the remaining container of Cool Whip over the strawberry layer.
  • Garnish with strawberries, golden Oreo crumbs, and white chocolate curls if desired.
  • Chill for at least 4 hours or overnight.
  • Slice into 4 rows of 8. Serve.

For Oreo Crust:
36 Golden Oreo cookies
1/2 cup unsalted butter-melted
For Strawberry Cheesecake Layer:
8 oz. cream cheese-softened
1/2 cup unsalted butter-softened
1 cup powdered sugar
1 1/4 cup whipped cream
1 1/3 cup diced fresh strawberries (about 5.5 oz.)
For Strawberry Jello Layer:
3 oz. strawberry flavored gelatin (like Jello)
1/2 cup boiling water
Strawberry Greek yogurt
4 cups whipped cream
For Topping:
2-3 cups whipped cream
4-5 oz. white chocolate bar to make the curls

Steps:

  • To make the crust ground whole Oreo cookies with the filling in a food processor to make fine crumbs. In a bowl stir together ½ cup melted butter with Oreo crumbs until evenly moistened, then press the mixture in the bottom of 9 x 13 inch dish, set in the freezer to firm while making cheesecake layer. In a bowl cream together ½ cup softened butter, 8 oz. softened cream cheese and 1 cup powdered sugar until smooth and creamy. Add 1 ¼ cup whipped cream and mix to combine. Using a rubber spatula, gently fold in diced strawberries and spread the mixture over chilled crust. Place in the fridge. In a large bowl place strawberry Jello, add ½ cup boiling water and stir to dissolve completely. Whisk in 1 cup strawberry Greek yogurt until combine. Add 4 cups whipped cream and mix until combine evenly. Pour the mixture over cream cheese layer and smooth the top. Refrigerate for 2-3 hours until set. Spread 2 cups whipped cream on top. To make the curls, carefully draw a vegetable peeler across the broad surface of a bar of white chocolate at room temperature. Sprinkle curls on top. Refrigerate for 2 more hours before serving, or overnight. Store in the fridge.

While not a 30-minute meal, this lasagna is quicker and more straightforward than most. If you're in a real time crunch, use your favorite jarred red sauce. For greater success with the lasagna noodles, which have a tendency to stick together, boil them in the largest pot possible or work in batches - they need as much water as possible to move freely so they don't clump. This lasagna can be assembled, baked and refrigerated up to five days ahead, or frozen up to a month ahead if wrapped tightly.

2 tablespoons olive oil
1 pound Italian sausage, sweet or hot (optional), casings removed
1 large yellow onion, finely chopped
2 garlic cloves, finely chopped
Kosher salt, freshly ground pepper
2 tablespoons tomato paste
1 (28-ounce) can whole, peeled tomatoes
1 (28-ounce) can crushed tomatoes
Kosher salt
1 1/2 pounds fresh mozzarella, grated or shredded into small pieces
16 ounces (2 cups) whole milk ricotta
1 cup coarsely grated Parmesan, plus more for sprinkling on top (optional)
1/4 cup heavy cream
Freshly ground pepper
1 pound dried lasagna noodles (not the no-boil variety)
Olive oil

Steps:

  • Make the sauce: Heat oil in a large, heavy bottomed pot over medium heat. Add sausage, if using, and cook, stirring occasionally, until it's starting to brown but not yet crisp, about 5 minutes.
  • Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is totally softened and translucent (without letting it brown), 8 to 10 minutes. Add tomato paste and continue to cook, stirring until the tomato paste has turned a deeper brick red color, tinting the oil and onions a fiery orange color, about 2 minutes.
  • Using your hands, crush the whole tomatoes into smaller, bite-size pieces and add them and the crushed tomatoes, stirring to scrape up any bits from the bottom of the pot. Fill one of the tomato cans halfway with water and add it to the pot. Season with salt and pepper. Bring to a simmer and cook, stirring occasionally, until the tomato sauce has thickened and flavors have come together, 20 to 30 minutes.
  • Make the lasagna: Heat oven to 375 degrees and set a large pot of salted water to boil.
  • Set aside 1 cup mozzarella. In a medium bowl, combine remaining mozzarella, ricotta, 1 cup Parmesan and cream; season with salt and pepper and set aside.
  • Cook lasagna noodles in the large pot of salted boiling water until just softened (before they are even aldente), about 4 minutes. Drain and separate any noodles that are trying to stick together, slicking them with a bit of olive oil to prevent them from sticking further.
  • Spoon a bit of sauce on the bottom of a 3-quart baking dish and top with a layer of noodles, avoiding any heavy overlap.
  • Top with about 1 ¼ cups of sauce, and dollop ¼ of the cheese mixture over. Top with another layer of noodles and repeat three more times, ending with the last of the noodles (depending on size of the noodle/shape of the baking dish, you may have a few extra noodles) and the last of the sauce. Top with reserved 1 cup mozzarella and more Parmesan, if you like.
  • Cover loosely with aluminum foil and place baking dish on a foil-lined rimmed baking sheet (to prevent any overflow from burning on the bottom of your oven).
  • Bake until pasta is completely tender and cooked through and sauce is bubbling up around the edges, 30 to 40 minutes. Remove foil and increase temperature to 450 degrees. Continue to bake until lasagna is golden brown on top with frilly, crispy edges and corners, another 15 to 20 minutes. Let cool slightly before eating.

Strawberry Lasagna hails from a restaurant in Nashville, Tenn. It's absolutely delightful, made of layers of pound cake, a cream cheese filling, strawberries soaked in kirsch and strawberry sauce.

2 (8 ounce) packages cream cheese
2 large boxes vanilla instant pudding mix
1 cup low-fat whipping cream
1 cup whole milk
1/2 cup powdered sugar
8 cups mashed strawberries
1/2 cup kirsch
1 cup granulated sugar
2 loaves size pound cake

Steps:

  • I usedSara Lee'spound cakes available in the freezer section. Any pound cake will do, but this one was dense, so it was easier to slice.
  • In the bowl of an electric mixer, blend cream cheese, pudding mix, cream, milk and confectioners' sugar on high speed until light and fluffy.
  • In a large bowl, mash the strawberries with the kirsch and granulated sugar. Most of the strawberry mixture will be used for the filling. For the topping, puree ½ cup of the strawberry mixture in a food processor. This will be used later as the lasagna sauce for the top of the dessert. Refrigerate until ready to use.
  • To assemble, slice the pound cake loaves lengthwise using a serrated knife or bread knife, into ½-inch slices. Line the bottom of a metal or glass 13-by-9-inch baking dish with a layer of sliced pound cake. Layer with half the cream cheese mixture, then a layer of strawberry mixture. Layer again with cake, cream cheese and strawberries. Repeat until you've used all of the ingredients.
  • To serve, cut the lasagna into 3-inch squares. Swirl the reserved strawberry topping on top of the dessert to make it look like sauce.
