Coffee Cake using Pie Filling image

Any fruit pie filling will work.

CAKE
1 c sugar
1/2 c margarine, softened
1 c sour cream
2 eggs
1 tsp vanilla
2 c flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 can cherry pie filling
CRUMB TOPPING
3/8 c flour
1/4 c sugar
1/4 c chopped nuts (optional)
1 tsp cinnamon
3 Tbsp margarine, softened

Steps:

  • 1. Cream margarine and sugar. Beat in eggs, sour cream and vanilla.
  • 2. Sift flour, baking powder and baking soda. Beat into batter.
  • 3. Spread half of the batter in a prepared 13x9 pan. Spoon pie filling over batter.
  • 4. Spoon remaining batter over filling and spread carefully to cover.
  • 5. Mix crumbs and sprinkle over batter.
  • 6. Bake at 325 for 50 - 60 minutes.
