1 cup butter (softened)
2.5 cups sugar
6 eggs
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla
4 cups all-purpose flour
1.5 pounds golden raisins
1 pound pecans (chopped)
9 oz crushed pineapple ((with juice))
9 oz maraschino cherries
1 cup dried cherries (or dried cranberries)

Steps:

  • Preheat oven to 300°F and line loaf pans with parchment paper.
  • Blend eggs, vanilla, sugar and butter in a large mixing bowl.
  • Add salt, baking powder, and flour and mix.
  • Mix in pineapple and juice, cherries, raisins, dried cherries, and pecans.
  • Fill the tins with fruit cake batter and spread to even the surface.
  • Bake at 300° for 1 1⁄2 hours. Start testing for doneness with 20 minutes left, to prevent over-cooking.

This is definitely not your ordinary fruitcake. So yummy! The addition of lemon extract gives a different flavor to this fruitcake. Guests will be asking for a second piece of this!

4 c all purpose flour
1 lb butter, softened, room temperature
1 lb candied cherries, halved
2 oz pure lemon extract (4 tablespoons or 1/4 cup)
2 c sugar
6 extra large eggs, separated
4 c pecans, chopped

Steps:

  • 1. PREHEAT OVEN TO 250 DEGREES F. Line a 12 cup bundt pan with greased parchment paper or brown paper bag, & then dust with flour, and set aside. NOTE: With improvements in technology over the years, you can now spray pan liberally with Bakers Joy, and eliminate the use of the Brown Paper Bag.
  • 2. Cream butter & sugar in a large bowl with an electric mixer until light and fluffy. Add egg yolks one at a time, beating well after each addition.
  • 3. Gradually add the flour, a little at a time. Stir in the cherries and pecans. When the batter becomes stiff, add the lemon extract, mixing well until blended.
  • 4. I prefer using both green & red cherries to add extra color to the cake.
  • 5. In a separate bowl beat the egg whites until stiff peaks form, but are not dry. Fold into the cake batter until blended. Spread batter evenly into the prepared pan and bake in preheated 250 degree F. oven for 2 1/2 hours.
  • 6. Cool the cake in pan on a rack for 1 hour. Invert cake onto rack. Remove liner, and cool completely, right- side up.
  • 7. This recipe is dedicated to the memory of my mother Barbara S. Goldmon, my first culinary instructor, that had so much patience to teach me what she knew how to do best. She made this cake for as long as I can remember, and each time I make it, it reminds me of her, and her true patience. If you want to know patience try cooking this cake at 250 degrees for 2 and a half hours in a wood stove, where you need to constantly add wood to maintain the temperature. That's patience my friend. Here is to you mama with love.
  • 8. I just made this cake for the first time WITHOUT THE BROWN PAPER BAG, OR PARCHMENT PAPER. I used the BAKERS JOY, AND THE CAKE TURNED OUT WONDERFULLY. jUST THOUGHT YOU WOULD LIKE TO KNOW. I have made it for years strickly as it was written, but now I know if I use BAKERS JOY, I do not need the parchment paper or brown bag. YIPPEE.

I make this cake every year for "Mothers Day"..so moist and delicious..I also love the frosting, light and fluffy..

2 1/4 c cake flour, i sift, and then measure again
1 Tbsp baking powder
1/2 tsp salt
1/2 c butter, softened
1 1/2 c sugar
4 egg whites
2 tsp vanilla
1 c milk
FROSTING
2 envelopes (1.3 ounces each) dream whip
2/3 c milk
1 c ( 6 ounces) white chocolate chips, melted
1/4 c strawberry jam
FRUIT FILLING
1 c strawberry frosting
1 can(s) (8 ounce) crushed pineapple, drained
1 c sliced strawberries

Steps:

  • 1. Preheat oven to 350 degree. Line the bottoms of two 9 - inch round cake pans with waxed, or parchment paper, sprayed with cooking spray. I spray the pan before laying the parchment, and then also again after. Combine flour, baking powder and salt in medium bowl; set aside.
  • 2. Beat butter and sugar in large bowl with electric mixer at medium speed until light and fluffy. Add egg whites, two at a time, beating well after each addition. Add vanilla; beat until blended, with mixer at low speed, add flour mixture alternately with milk, beating well after each addition. Pour batter evenly into prepared pans.
  • 3. Bake 25 minutes or until wooden pick inserted into centers come out clean. Cool cakes in pans on wire rack 10 minutes. Loosen edges and invert layers onto rack to cool completely.
  • 4. PREPARE FROSTING AND FRUIT FILLING... Strawberry frosting.. Beat whipped topping and milk in medium bowl with electric mixer on low speed until blended. Beat on high speed 4 minutes until topping thickens and forms peaks. With mixer at low speed, beat melted chocolate into topping. Add jam; beat until blended. Chill 15 minutes or until of spreading consistency.
  • 5. Fruit filling: Combine 1 cup strawberry frosting,(recipe above), pineapple and strawberries in medium bowl; mix well.
  • 6. To fill and frost cake, place one layer on cake plate, spread top with fruit filling. Place second layer over filling. Frost top and sides. Place strawberries on top of cake, if desired

2 1/2 cups butter
4 cups light brown sugar
8 eggs, beaten
10 cups flour
1 tsp. salt
3 tsp. baking powder
2 1/2 tsp. cinnamon
1 tsp. allspice
3/4 tsp. nutmeg
3/4 tsp. cloves
2 lb. mixed candied fruit
2 lb. red candied cherries (leave whole)
1/2 lb. candied pineapple (cut into wedges)
1/2 lb. pitted dates (chopped)
1 lb. golden raisins
1/2 lb. currants
2 1/2 lb. walnuts (broken large)
3/4 cup sherry wine

Steps:

  • Preheat oven to 250-275 degrees.
  • Batter will make about 15 lbs. Prepare pans according to chart below. Grease and line pans with brown paper, waxed paper, or parchment. Grease again. Cut paper about 1 inch taller than pans. Fill pans a little over half full with batter. If you have room in the oven, put a pan with some hot water in it in the bottom, to keep the cakes moist. Enjoy!
  • Pan sizes and baking chart:
  • 9 x 5 x 3-inch loaf pan: 6 1/2 cups batter, bake for 3 hours
  • 10" tube pan: 2 1/2 quarts batter, bake for 3 hrs 15 mins
  • 1 lb. coffee cans: 3 3/4 cups batter, bake for 3 hrs 15 mins
  • 9 1/4 oz. tuna cans: 1 cup batter, bake for 1 hour 30 mins
  • No.303 (16oz) cans: 1 2/3 cup batter, bake for 2 1/4 to 2 1/2 hours
  • 4 1/2 x 2 1/2 x 2-inch mini loaf pans: 3/4 cup batter, bake for 1 hour

1 package (8 ounces) chopped mixed candied fruit
1-1/4 cups golden raisins
1 cup chopped walnuts, toasted
3 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature

Steps:

  • Preheat oven to 275°. Line bottoms of four greased 9x5-in. loaf pans with parchment; grease parchment., In a small bowl, toss candied fruit, raisins and walnuts with 1/2 cup flour. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in remaining flour. Fold in fruit mixture., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pans 10 minutes before removing to wire racks to cool.

3/4 cup Butter
1 cup Sugar
3 cups All pupose Flour
1/2 teaspoon Salt
2 tablespoons Baling Powder
1 can Crushed Pineapple Drained 14 oz
1 pound White Raisins
2 pounds Mixed Fruit (Candied Pineapple, red and green cherries, dried California apricots
1 cup Coarsely chopped peacans OR sliced almonds
1/2 teaspoon Vanilla extract
2 cups White Port (or white wine or rum)

Steps:

  • Slice apricots. Mix with all fruits except crushed pineapple. Pour Port (or either wine or rum) over fruit.Mom said "at least one cup". I use 2 cups Port. If using rum 1 cup might be better,
  • Mix and let stand over night. Drain a bit if there is alot of liquid.
  • Add part of flour and mix well.
  • Sift rest of four with dry ingrediants
  • Cream together Butter and Sugar then beat in eggs one at a time.
  • Add Vanilla
  • Add dry ingredients, crushed pineapple and nuts.
  • Butter bread pans and line with wax paper. Butter paper.
  • Bake at 325 for 1 1/2 hours. Put a small pan of water in the oven while baking.
  • Let cool in pans. Remove from pans (leave wax paper in place).
  • Wrap each loaf in cheese cloth. Splash them with rum or brandy.
  • Keep in refrig for at least a week in an airtight container.

1/4 cup butter, softened
3/4 cup sugar
2 egg whites
1 teaspoon vanilla extract
1 cup plus 2 tablespoons cake flour
1-1/2 teaspoons baking powder

1/2 cup milk
FROSTING/FILLING:
1/2 cup vanilla or white chips
1 envelope whipped topping mix (Dream Whip)
1/3 cup milk
3 tablespoons seedless strawberry jam
1/2 cup sliced fresh strawberries
1/4 cup drained crushed pineapple

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add egg whites, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with the milk. Pour into two greased 6-in. round baking pans. , Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , In a microwave, melt vanilla chips; stir until smooth. Set aside to cool slightly. In a small bowl, combine topping mix and milk. Beat on high speed for 2 minutes or until thickened. Beat in jam and melted chips until blended. Cover and refrigerate for 15 minutes or until frosting achieves a spreading consistency. , For filling, in a small bowl, combine 1/2 cup frosting with strawberries and pineapple. Place one cake layer on a serving plate; spread with filling. Top with remaining cake layer. Frost top and sides of cake with remaining frosting. Store in the refrigerator.

A holiday tradition at our house for over 60 years, these cookies are full of candied fruit, pecans, and rum-soaked dates. It wouldn't be Christmas without them.

1 pound dates
2 tablespoons dark rum
2 pounds red and green candied cherries
1 pound candied pineapple
6 cups pecans, roughly chopped
4 cups all-purpose flour, divided
3 teaspoons baking soda
3 tablespoons milk
¼ cup shortening (such as Crisco®)
1 cup white sugar
4 large eggs, at room temperature
1 tablespoon orange juice
1 teaspoon ground nutmeg
1 pinch kosher salt

Steps:

  • The day before: chop dates into small pieces and put in a glass bowl. Add rum. Cover with plastic wrap. Let sit for 8 hours, or overnight, to absorb the rum. You can leave this step out if you want but I find it makes the dates more delicious and the cookies have more flavor.
  • Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • Dice candied cherries and pineapple into small pieces and place in a very large bowl; I use the top of my cake carrier. Add pecans, followed by dates. Add 1 cup flour. Toss well to coat all of the pieces and break them up so they are not sticking together.
  • Whisk baking soda into the milk and let it dissolve.
  • Mix shortening into the fruit. Add remaining flour, sugar, eggs, orange juice, nutmeg, salt, and milk-baking soda mixture. Mix together with your hands just until you no longer see the flour. Try not to overmix. The batter will be very dense.
  • Use a small ice cream scoop or two teaspoons to drop the cookies onto the prepared pans, about 1 inch apart.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes. Cool on wire cooling racks.
