2 (6 ounce) tuna in water drained
1 cup shredded Swiss cheese 4 ounces
1 medium onion chopped 1/2 cup
2 tablespoon all-purpose flour
2 eggs
2 egg whites
1 cup skim milk
3/4 teaspoon salt
1/8 teaspoon red pepper sauce

Steps:

  • Heat oven to 350º. Spray pie plate, 9 × 1 1/4 inches, with nonstickcookingspray. Toss tuna, cheese, onion and flour; spread in pie plate. Beat eggsand egg whites slightly in small bowl; beat in remaining ingredients. Pouregg mixture over tuna mixture. Bake uncovered 35 to 40 minutes or untilknife inserted in center comes out clean. Let stand 10 minutes beforecutting.

½ cup milk
½ cup blue cheese salad dressing
1 teaspoon cornstarch
¼ cup thawed frozen chopped spinach
1 (12 ounce) can solid white tuna packed in water, drained
3 slices bacon strips, cooked and chopped
6 ounces Swiss cheese, shredded
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk together eggs, milk, blue cheese dressing, and cornstarch in a bowl until smooth. Fold in spinach, tuna, bacon, and Swiss cheese until evenly mixed. Pour into pie shell.
  • Bake in preheated oven until a knife inserted into the center comes out clean, 30 to 35 minutes.

My mom used to make this when I was a kid. Love the flavor and it is SO quick and EASY! Serve with salad, fruit and muffins for brunch or lunch or bring it to a pot luck. Another variation I do is with chicken chunks, spinach, mushrooms, scallions and cheddar cheese. I usually make one of each since the pie crusts come in...

4 large eggs
1 c milk
1 1/2 c swiss cheese, grated
2 can(s) tuna (water-packed, well drained)
2 c mushrooms, fresh
1/2 c chopped scallions (green onions)
seasoning salt & pepper to taste
1 Tbsp butter

Steps:

  • 1. Wash and chop mushrooms or use pre-sliced. Sautee in butter until moisture is removed.
  • 2. While mushrooms are cooking, chop scallions, grate cheese and drain tuna
  • 3. Place one (uncooked) pie crust in a deep-dish pie plate. Top with tuna, cheese, sautéed mushrooms and scallions.
  • 4. Beat together eggs, milk and seasonings and pour on top of tuna mixture. (You can add a sprinkle more of cheese on top if you like.) Bake at 350 degrees for 45 minutes. You can protect the crust edges with foil, but I have found that I don't need to. Let cool 10 minutes before cutting.
