BREAKFAST POPOVERS WITH ITALIAN SAUSAGE

Steps:
- Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter the muffin cups.
- Heat the oil over medium heat in a medium nonstick skillet. Add the sausage and break it into 1/4-to-1/2-inch pieces using a wooden spoon. Cook until brown and cooked through, about 6 minutes. Add the garlic and cook until aromatic, about 30 seconds. Spoon about 1 1/2 tablespoons sausage into each muffin cup. Sprinkle the cheese on top of the sausage.
- Blend the eggs in a blender until frothy, about 15 seconds. Add the milk, flour, green onions, basil, salt and pepper. Blend until just incorporated. Pour the batter into the muffin cups, filling each cup to just below the rim. Bake, without opening the oven door, until puffed and golden, about 35 minutes.
- Place the popovers on a platter and drizzle with maple syrup.

- Brown sausage as you normally would and drain well.
- Microwave cheese whiz so it is warm and a little runny.
- Mix together the cheese whiz and sausage. Then, add the bisquick to the mixture.
- Mix together well and the dallop the mixture onto a baking tray (ungreased).
- Cook in oven for about 10-12 minutes depending on how big you make them.

- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

- Preheat oven to 425 degrees with rack in center position.
- Roll out puff pastry to 12-inch square. Brush maple syrup over entire surface.
- Cut dough into thirds in each direction and then cut each square in half diagonally, ending with 18 triangles. Place a breakfast sausage link on the lower third of each triangle and roll up, making sure to place each tip-side down on a parchment-lined baking sheet.
- Whisk egg and 1 teaspoon water in a small bowl until lightly beaten. Brush each puff with egg wash and bake for 16 to 18 minutes until golden brown.

Steps:
- Preheat oven to 375 degrees.
- Scramble the sausage and crumble VERY well. Drain and rinse under running water to get rid of any excess grease. Wipe any grease out of the skillet and replace sausage on heat.
- Add in cream cheese and any other ingredients you might like. Stir over low heat until cream cheese is melted and the whole mixture is blended well.
- Unroll the crescents into triangles and place a small amount of filling in the center of the longest end. Roll, pinching the edges to seal in the filling and place on a lightly sprayed baking sheet.
- Bake until golden brown, about 12-15 minute Watch carefully, so they don't burn.

- Brown the ground beef or sausage, drain and set aside. Be sure to season the ground beef with a little salt and pepper.
- Melt butter in sauce pan. Add flour and stir till butter/flour mixture is bubbly.
- Add milk, salt, and pepper.
- Stir constantly until thick and bubbly.
- Add meat and stir.
- Serve over whole wheat toast. Great over biscuits as well.
- Note: For an evening meal substitute chipped beef.
