Mom's Fabulous Chicken Pot Pie with Biscuit Crust image

Leftover chicken or rotisserie chicken from the supermarket helps on the ease of preparation of this fabulous comfort style dinner. Fresh vegetables gives this a very special added flavor and is worth the effort. Everyone loves Mom's Chicken Pot Pie! Serve with a green salad.

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 ¾ cups chicken broth
⅔ cup milk
2 cups chopped cooked chicken
1 (14.5 ounce) can peas and carrots
½ (15 ounce) can whole new potatoes, drained
1 (15 ounce) package prepared double-crust pie pastry

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in a large skillet over medium heat. Cook and stir onion, flour, salt, and pepper in melted butter until the onion is translucent, about 5 minutes.
  • Remove skillet from heat and pour chicken broth and milk into the skillet; bring the mixture to a boil and cook to thicken slightly, about 1 minute.
  • Remove skillet from heat and stir chicken, peas and carrots, and potatoes into the broth mixture.
  • Press one pie pastry into the bottom of a deep-dish pie pan. Pour the broth mixture into the pie pastry. Top with remaining pastry and press edges together to form a seal. Cut several slits into the top pastry. Place pie plate on a baking sheet.
  • Bake in preheated oven until the crust is golden brown, about 30 minutes. Let pie cool and filling thicken at room temperature for 15 to 20 minutes before cutting.

Steps:

  • Put 4 cups of flour into a mixing bowl ,Reserve last cup
  • add salt mix together
  • add 1 lb shortning cut into flour till crumbly.With pasty blender
  • add 1 cup orange juice ,I use tang or orange crystals for this receipe
  • I have used real orange juice both work fine
  • Mix all together use remaining cup of flour on the counter for rolling add more if needed
  • This receipe makes 2 double crust pies.

These little popovers let you create individual chicken pot pies: Flaky puff pastry is filled with a creamy chicken and vegetable sauce.

Baking spray with flour, for the muffin pan
1 cup whole milk
3 tablespoons unsalted butter, melted
1/4 teaspoon baking powder
3 cups low-sodium chicken broth
1/3 cup all-purpose flour
Kosher salt and freshly ground black pepper
1/3 cup shredded Cheddar
1 cup frozen peas and carrots, thawed
1/2 cup frozen cut green beans, thawed
1/2 rotisserie chicken, skin discarded, white and dark meat shredded (about 3 cups)
1/4 cup loosely packed fresh flat-leaf parsley, chopped, for garnish, optional

Steps:

  • Preheat the oven to 400 degrees F. Spray a 12-cup muffin pan generously with the baking spray.
  • Whisk the milk, flour, vanilla, eggs and 1/2 teaspoon salt in a medium bowl until combined. Drizzle in the melted butter while whisking until combined; let the batter stand for 5 minutes. Add the baking powder, whisking to combine, and divide the batter evenly among the muffin cups (about a scant 1/4 cup batter per muffin cup). Bake the popovers until puffed and browned around the edges, rotating the pan about halfway through, 20 to 25 minutes.
  • While the popovers are baking, whisk together the broth and flour in a medium saucepan until the flour is dissolved. Place the saucepan over medium heat and cook, whisking continuously, until the mixture comes to a boil; continue to cook, whisking, until the mixture is thick enough to coat the back of a spoon, 4 to 5 minutes. Reduce the heat to low and whisk in 1 teaspoon salt, 1/4 teaspoon pepper and half of the Cheddar. Stir in the peas and carrots, green beans and then the chicken; cover to keep warm.
  • When the popovers are done, turn them out of the pan, using a small spatula if necessary. Arrange 2 popovers on each of 6 plates or bowls and top with the chicken filling, dividing evenly among the popovers. Sprinkle the remaining Cheddar over the warm filling. Garnish with chopped parsley if using. Serve with the iced tea.

Just the way Mom always made it. She passed it on to me, and now I'm passing it on to you. I usually cheat and use ready made crusts, I never use the salt, and I add more pie seasoning and vanilla just as personal preference.

2 -2 1/2 lbs granny smith apples
3/4 cup sugar
1/4 cup packed brown sugar
2 tablespoons flour
1 teaspoon apple pie spice
1/8 teaspoon salt
3 tablespoons butter, cut into thin pats
1/4 cup heavy cream or 1/4 cup milk
1 teaspoon vanilla
2 prepared pie crusts

Steps:

  • Peel, core, and pare apples.
  • Mix all dry ingredients.
  • Spread 1/3 of apples, followed by 1/3 of sugar mixture into the bottom of prepared unbaked 9in pie crust, repeat twice.
  • Top with pats of butter, and cover with top pie crust. Cut star shape (an X) into center of crust, slightly pull back dough.
  • Mix cream with vanilla, pour slowly into opening of crust.
  • Place on cookie sheet, and bake at 400 for 50 minutes, or until crust is golden brown and juices are bubbling.

MOM'S FLAT APPLE PIE

This is a great pie for a picinic or potluck. You can pick it up and eat it with your hands. No gooey, drippy mess, but super moist!! The picture that I posted is one of the pictures of the pie my "little" brother made. He is such a great cook as well.

3 3/4 c flour
3/4 tsp salt
1 1/2 c shortening
1 egg yolk plus enough milk to make 1 cup of liquid
2-3 handfuls of cornflakes
10 granny smith apples sliced and cored
butter
1 c sugar
1 tsp cinnamon
1 egg
1 tsp sugar
2/3 c powered sugar and a few drops of vanilla and milk

Steps:

  • 1. Mix ingredients for crust (which are the first 4 ingredients on the list).
  • 2. Roll out half of the dough to fit a cookie sheet.
  • 3. Sprinkle with cornflakes.
  • 4. Place sliced apples on top of cornflakes.
  • 5. Mix sugar and cinnamon and sprinkle on top of apples and dot with butter.
  • 6. Add top crust to cover.
  • 7. Beat egg white and sugar and brush on top of pie. Cut a few slits in the top of the pie crust.
  • 8. Bake at 425 degrees F for 25-30 mintues.
  • 9. Mix powered sugar, vanilla and enough milk to make a thin frosting. Drizzle over hot pie.
