Flaky, tender, cheesy dough surrounds a warm and salty-juicy olive. A fun and easy baked appetizer recipe, perfect for entertaining!

18 queen olives stuffed with pimento
1/4 c. unsalted butter, at very soft room temperature (but not melty)
4 oz. Crystal Farms® Shredded Sharp Cheddar
1/2 c. + 1 T. all-purpose flour
1/4 tsp. paprika
1/4 tsp. kosher salt
1/4 tsp. black pepper

Steps:

  • Drain olives and place them on a paper towel to dry.
  • In a small bowl, combine butter and sharp cheddar with a wooden spoon. Add flour, paprika, kosher salt, and black pepper. Mix as well as you can with the wooden spoon, and then finish by combining with your hands. It will turn into a moist, dense dough that can easily be formed into a ball.
  • With a small scoop, portion out 18 balls of tightly packed dough. My small scoop holds a little more than 2 teaspoons of dough when tightly packed. Roll each portion into a ball and place it in the palm of one hand. With the thumb of your other hand, press the dough ball to flatten it. Place an olive in the center of the flattened dough and mold the dough up around the olive. Give it a gently roll between your palms to finish. Place two inches apart on ungreased baking sheet - this 10" x 15" rimmed pan works perfectly. Cover and refrigerate for 1 to 2 hours.
  • Heat oven to 400° F. Bake for about 15 minutes, until lightly browned. Let cool on pan for 5 to 10 minutes before serving. These are best when eaten while still warm. Serve with homemade buttermilk ranch if you like to dip!

Another appetizer I remember from my childhood. Be warned - these are *addicting*!

1 jar(s) kraft old english cheese spread (sharp)
1/2 stick unsalted butter
1 jar(s) green olives with pimentos (small jar)
dash(es) worcestershire sauce
dash(es) your fave hot sauce (i like louisiana and crystal)
3/4 c all purpose flour

Steps:

  • 1. Drain olives in strainer, and pat dry. Don't smush them, but do your best to make them not overly wet. Cut flour, butter, and cheese together until consistency of a pastry dough. Pinch off enough to wrap around an olive, until all olives are comfortably inside a ball of cheese :) Place olive balls on "Pamm'd" baking sheet
  • 2. FREEZE!! for at least 8 hours. Preheat oven to 400, leaving olives in freezer until oven is preheated. Bake 9-12 minutes.
  • 3. YUM!

When I was a kid growing up in Texas, my best friend's mom used to make these every Christmas. Thank you Schotzie! Wouldn't you know it - I married a guy who hates olives. These tasty little treats can be frozen in single layer. When frozen, store in plastic zipper bag. If frozen, bake at 400ºF for 18-20 minutes.

1/2 cup butter or margarine, melted

  • Stir together cheese and flour in large bowl. Stir in butter thoroughly. (If dough seems dry, work with hands.)

2 large egg yolks
1 large egg
1/4 cup whole milk
20 pitted olives
Store-bought puff pastry, rolled into 1 (10 by 12-inch) rectangle

Steps:

  • Prepare the egg wash: Combine the yolks, whole egg, and milk in a small mixing bowl and whip with a hand whisk until well combined. Preheat the oven to 400 degrees. Set the puff pastry on a lightly floured work surface, with the long side facing you and cut in half from top to bottom. Use a pastry brush to coat one piece of the dough with egg wash. Lay the olives spaced about 1-inch apart from top to bottom on the egg-washed dough. Place the other rolled-out dough half on top of the olives and mark each olive by pressing the dough on either side of the olive. Use a sharp paring knife to cut between each puff pastry-covered olive. Place on a parchment paper-covered baking sheet and brush with more egg wash. Bake until well risen and golden brown, about 20 minutes. Cool completely on a wire rack before serving. There is no need to cut these in half. Just cut between the olives to make small packages. Baking and cooling is the same. These puff pastry items are best eaten the day they are made.

I based this recipe on one from a famous Virginia colonial tavern, but I've had much better success with this one than the one published in their cookbook. It's great for parties, picnics, or potlucks. It will also freeze well (uncooked) for quick prep anytime!

18 ½ ounces extra sharp Cheddar cheese, shredded
½ cup butter, softened
½ teaspoon paprika
1 ½ cups all-purpose flour
45 pitted green olives

Steps:

  • Allow cheese to sit out until it is at room temperature. In a large bowl, mix together the cheese, butter and paprika using a pastry blender. Gradually mix in flour, first using the pastry blender, then using your hands. Mix until the dough pulls together. It should form a solid ball with a smooth appearance, but have a crumbly texture when pulled apart. If dough appears too dry, add more shredded cheese.
  • Preheat the oven to 375 degrees F (190 degrees C). Pinch off a small piece of dough, and cover an olive with it. Roll gently between your palms to smooth and seal the olive inside the ball. Place onto an ungreased cookie sheet and repeat with remaining dough and olives. Place the tray of covered olives into the refrigerator for 10 minutes to firm up.
  • Bake for 20 to 25 minutes in the preheated oven, or until browned. Serve hot or at room temperature.

  • Cream all the ingredients except olives, knead to form a dough. Wrap around the olives individually. At this point you can place them on a cookie sheet and freeze then put them in a gallon sized bag for later, or refrigerate for at least one hour.
  • Bake at 400 degrees for 16-18 mn. if refrigerated, if frozen 20-23 mn. No need to thaw.
