SIMPLE HOMEMADE CHOCOLATE SAUCE



Simple Homemade Chocolate Sauce image

Number Of Ingredients 5

1/2 cup unsweetened cocoa powder
1 cup sugar
1/8 teaspoon kosher salt
1/2 cup cold water
1 1/2 teaspoons vanilla

Steps:

  • In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium to medium high heat.
  • Reduce to a simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add vanilla. Pour into a glass jar and refrigerate until needed. Enjoy!

Chocolate Sauce image

A straightforward ganache-chocolate and cream - with a two-to-one ratio of cream to chocolate. Some sugar, in the form of corn syrup, is added, primarily for consistency. The chocolate sauce is only as good as the chocolate you use, so use the best you can.

Yield Makes about 2 cups

Number Of Ingredients 3

8 ounces semisweet chocolate, such as Valrhona Equatoriale, finely chopped
1 cup heavy cream
1/2 cup light corn syrup

Steps:

  • Place the chocolate in a metal bowl.
  • Combine the cream and corn syrup in a small heavy nonreactive saucepan and bring to a simmer. Pour the liquid over the chocolate and allow it to sit for 3 to 4 minutes, or until the chocolate has melted. Whisk to combine. Allow the sauce to cool slightly, then pour into a bowl or other container. (Stored in the refrigerator, tightly covered, the sauce will keep for up to 2 weeks.)
  • To serve, warm the sauce gently in the top of a double boiler or in the microwave.

2 teaspoon(s) vanilla

Steps:

  • Mix the first four ingredients over medium heat. Once the mixture boils, boil for 3 minutes, stirring constantly. Remove from heat and add vanilla.
  • Can serve hot or cold over ice cream. Other serving ideas: mix 1-2 tsp with cold milk for chocolate milk; mix 1-2 tsp with hot milk for hot chocolate; or use this as a sauce over cheesecake.

4 ounces good quality bittersweet chocolate
5 large eggs, separated
2 teaspoons instant espresso dissolved in 1 teaspoon or two of boiling water so it makes a paste; cooled
Slivered toasted almonds
Whipped cream, optional

Steps:

  • Melt chocolate in the top of a double boiler. Add yolks, 1 at a time and stir (take care not to scramble). Add the coffee paste and let cool to room temperature. Beat the egg whites until stiff and fold into cooled chocolate mixture.
  • Refrigerate in a big bowl or in individual wine glasses. Serve garnish with slivered toasted almonds and whipped cream piped through a pastry bag.

1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.
  • Pour hot over ice cream or store in airtight containers in the refrigerator.
