- Prepare fruits and put all together in a large bowl.
- Mix whipping cream with 6 tsp of sugar and 1/4 tsp almond extract.
- Add a couple of tablespoons of cherry juice to make it a pretty pink and give it extra flavor.
- Add marshmallows and whipped cream to fruit and chill until ready to serve.
MOM'S FRUIT SALAD WITH COOKED DRESSING
This is an adaptation of several slightly different recipes, but slightly different from the rest. My family LOVES it--and so does everyone else who's tasted it! This is also wonderful as a topping for belgian waffles.

- Whisk the flour & sugar together. Beat eggs until light, and whisk in flour & sugar.
- Drain a can of pineapple tidbits into a 2-cup measure, add the lemon and orange juices, and pour in enough vinegar to make 1-1/4 cups total liquid.
- Add to the egg mixture. Cook in double boiler, stirring constantly, until thickened.
- Chill thorougly, then fold in whipped cream.
- Fold into your mixed fruit--you really can use whatever fruit you have on hand. I've added mango, pears, starfruit, kiwi, and I can't remember what all!
- Chill and enjoy!

- 1. Mix all of the fruit in a medium bowl.
- 2. Pour lemon juice over them; set aside.
- 3. In a small bowl, mix mayonnaise and sugar; stir well. Add pineapple juice a little at a time. The sauce should be a little thin, but not runny.
- 4. Pour sauce over fruit; stir well. Cover bowl with plastic wrap. Chill salad and remove right before you're ready to eat (within 30 mins.- 1 hour or the bananas will go brown). Enjoy!

- 1. You can use any combination of your favorite or available fruits. I usually use a combination of fresh and canned fruits. This picture has strawberries, blueberries, grapes, apples and bananas that are fresh. I also added canned mandarin oranges, pineapple and papaya. (I sometimes add canned peaches and pears if I don't have enough fresh fruit.) I like fresh as much as possible.
- 2. Drain the canned fruits and reserve the juice. Put 2 cups of the juice in a small pot and bring to a boil. (If you don't have 2 full cups, you can add some orange juice or water.) While it is coming to a boil, mix the cornstarch and sugar in a bowl until there are no cornstarch lumps. Once the juice is boiling, add enough of the sugar mixture to thicken the juice. Let cook for a couple of minutes until it is thick. Remove from heat and let cool. I make sure it is cold, usually in the refrigerator for a couple of hours, you will find it to be the consistency of pudding.
- 3. Cut up fresh fruit into bite sized pieces and add to the canned fruit. Before you do this, you might want to make sure no more juice has gathered at the bottom of the bowl. If it has, discard before proceeding.
- 4. Mix the sour cream with the cooled, thickened juice/pudding. Add to the fruit a little at a time until it has the desired amount. Each of us is different and like different amounts of the dressing on salads. I like lots, but some don't. Eat and enjoy!
- 5. NOTE: I wouldn't add the bananas, if you are using them, until you are ready to serve.
