MOM'S IRISH SODA BREAD

Steps:
- Blend all dry ingredients - add raisins and mix well. Add buttermilk. Mix well. Knead slightly in the bowl until stickiness begins to disappear. Form into a round loaf and place in a greased pie tin/cake pan. With a serated knife, cut an X (cross). Place in 375 degree oven for 10 minutes. Reduce heat to 350 degrees and bake another 30 minutes or so. Should be light brown-ish when done. Knock on it for hollow sound.

This recipe was passed down to me by my wonderful mother who got it from her mother. When she did ask my grandmother to write down the recipe for her she couldn't because she didn't measure the ingredients. My mother had to watch her and measure the ingredients after my grandmother had everything ready.

- 1. Preheat oven to 400 degree for 10 minutes then turn down to 350 and bake 45 minutes till golden brown and sounds hollow when tapped on bottem.
- 2. DO NOT USE ANY METAL. Sift dry ingredients in a large bowl, not metal. Cut in butter and rub into flour untl mixture resembles bread crumbs. Make a well in center and pour eggs and buttermilk. Using clean hand mix thorougly to make a soft dough. Turn onto flour board and knead 1-2 mins. Shape into round load and place onto a greased floured bakng sheet. Mark an X on top of the loaf to allow even cooking. Bake 45 mins or until golden brown. Tap on bottem of bread if sounds hallow it is done.
- 3. Remove and place on wire cooling rack. Taste wonderful with butter and jelly.
