Mom's Applesauce Cake is an old-fashioned, treasured family recipe, that I found in my mom's recipe box.

1 Egg
1/2 cup Brown Sugar
1/2 cup Granulated Sugar
1/2 cup Canola Oil
1 teaspoon Vanilla
1 cup Applesauce
2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Cloves
1/4 teaspoon Allspice

Steps:

  • In a large bowl beat the egg. Add the sugars, oil, vanilla, and applesauce. Mix well.
  • In a separate bowl mix together all the dry ingredients. Add the dry ingredients to the liquids and mix until combined.
  • Pour the batter into a 13" x 9" baking dish that has been sprayed with non-stick spray.
  • Bake in a 350 degree oven for 23-28 minutes, or until a toothpick comes out clean when inserted into the center of the cake. Let the cake cool.
  • Frost if desired.

3 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
3 teaspoons baking soda
½ cup butter
2 cups packed brown sugar
2 eggs, beaten
3 cups unsweetened applesauce
½ cup raisins
½ cup dates, pitted and chopped
1 cup chopped walnuts
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
  • Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
  • To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

My Mom got this recipe from a little German lady at Lake Quinault, WA, right after WWII. It was a constant in our house, when I was growing up, as it was my Dad's favorite! Mom served it unfrosted, as it was so nice and moist! Do not overbake, to prevent it becoming too dry.

1 cup(s) butter, unsalted
2 cup(s) sugar
2-1/2 cup(s) flour
2 teaspoon(s) cinnamon
1 teaspoon(s) ground cloves
2 teaspoon(s) baking soda
1 cup(s) raisins
1 cup(s) chopped walnuts
2 cup(s) hot applesauce
2 large eggs

Steps:

  • Cream together butter and sugar.
  • Add eggs and mix well,
  • Sift together flour, cinnamon, cloves and baking soda, and add in to butter/sugar mixture. (It will be thick, like cookie dough.)
  • Mix in raisins and nuts, and hot applesauce (I heat in small saucepan on stove, but microwave should work, also). Hot applesauce will thin down the dough into a batter.
  • Pour into a 9" x13" baking pan (sprayed with Baker's Joy, or greased and floured)
  • Bake at 350* for 45 to 50 minutes, until toothpick comes out clean. Start checking at 40 minutes. Cake is best if slightly underdone.
  • Serve plain, dusted with powdered sugar, or frost with cream cheese icing. I grew up eating it plain.

3/4 cup raisins
1 cup hot water
1/2 cup shortening
2 cups sugar
1 large egg
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon each ground cinnamon, cloves and nutmeg
1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

1 cup chopped pecans
2 eggs
2 cups granulated sugar
3 cups applesauce
5 cups all purpose flour
1 cup Parkay Margarine, melted
3 teaspoon vanilla
1 teaspoon cloves
1 teaspoon cinnamon
2 teaspoon baking soda

Steps:

  • Coat raisins and nuts with small amount of flour, this keeps them from going to the bottom of the cake. Mix all ingredients very well.
  • Pour in bundt or angel food cake pan (greased & floured).
  • Bake at 350 degrees F for 1 1/2 hours.
