MOM'S BEEF STROGANOFF

This is a favorite with all of my family. Not sure where my mother got the recipe so many years ago, but it is different than the creamy white stroganoff so many people make. It really is very good. Serve this with egg noodles or rice.

1 lb round steaks or 1 lb sirloin steak, cut into bite size pieces
4 tablespoons flour, to coat meat
1 tablespoon olive oil
1/2 cup chopped onion
1/2 teaspoon salt
1 minced garlic clove
1 tablespoon Worcestershire sauce
1 (10 1/2 ounce) can tomato soup
1 cup sour cream (low fat works, but not no-fat)
6 -8 drops Tabasco sauce
1 (6 ounce) can sliced mushrooms, drained
freshly grated parmesan cheese

Steps:

  • Coat meat with flour and brown in hot oil.
  • Add the onions and garlic and saute until golden.
  • In a bowl, mix the sour cream,salt, tomato soup, Tabasco and Worcestershire sauce.
  • Add to the meat.
  • Add the mushrooms.
  • Cook over very low heat for 1 hour or until meat is tender.
  • Serve over egg noodles or rice and top with Parmesan cheese.

  • Season with garlic powder, salt and pepper.
  • Incorporate soup into beef mixture, add sour cream and heat through.

This was not served when I was a kid. I think Mom learned to make it when she decided she liked Hamburger Helper Stroganoff and she wanted to do it from scratch. Someone at church gave her this recipe and it is good and easy.

1 lb lean ground beef
1/2 c chopped onions
1/2 tsp salt
1/2 tsp paprika
dash of black pepper
1 can(s) cream of mushroom soup
1 small can sliced mushrooms, optional
1 c sour cream
hot buttered noodles for 4-6 servings

Steps:

  • 1. In a large skillet brown and crumble beef. Drain grease from pan. Add onion and cook until it is tender, stirring occasionally. Add remaining ingredients except sour cream and noodles and reduce heat to a simmer. Cook, stirring frequently, for about 20 minutes.
  • 2. Meanwhile prepare noodles according to package directions. When beef mixture is ready stir in sour cream and heat thoroughly without boiling. Serve over noodles. Optional garnish: Sprinkle a bit of paprika over the dish before serving.

Mom made this all the time growing up. My step-sister recently e-mailed me asking for the recipe, thinking it had been from scratch! Of course, growing up our tastes weren't very refined and now i can tell that it's not from scratch. A few variations to the directions on the package and I still think it's delicious. My husband loves this recipe. I am not sure on the size of the egg noodles bag, but just cook up however many noodles your family needs.

1 onion, diced
1 (4 ounce) can mushrooms (or you can use fresh)
1 (1 1/4 ounce) package beef stroganoff sauce mix
1 cup water
1 cup sour cream
salt and pepper
1 -2 minced garlic clove (optional)
1 (8 ounce) package egg noodles

Steps:

  • BROWN the ground beef with the onion and mushrooms and garlic if using.

1 (16 ounce) package egg noodles
2 tablespoons butter
1 pound ground beef
1 onion, chopped
1 tablespoon all-purpose flour
1 (4.5 ounce) can sliced mushrooms, drained
1 tablespoon garlic salt
1 (10.75 ounce) can cream of mushroom soup (such as Campbell's®)
1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain.
  • Melt butter in a large skillet over medium-high heat. Saute onion in hot butter until translucent, about 5 minutes. Add ground beef to skillet in small chunks; cook and stir to break the beef into smaller pieces as it cooks until no longer pink, 5 to 7 minutes.
  • Sprinkle flour over the beef mixture, stir, and cook for 1 minute. Stir mushrooms and garlic salt into the beef mixture. Pour mushroom soup and chicken soup over beef, stir, and cook until hot, about 5 minutes; add sour cream, stir until smooth, and cook until again hot, 2 to 3 minutes more. Pour beef mixture over the cooked egg noodles.
