Better-than-Mom's Stovetop Goulash image

When you need some homemade comfort food, this Better-than-Mom's Stovetop Goulash will do the trick!

2 tsp. olive oil
1 lb. ground beef
1 onion, chopped
2 tsp. minced garlic
1 1/2 cups water
1 15 oz. can tomato sauce
1 15 oz. petite diced tomatoes with juice
1 T Italian Herb Blend
2 bay leaves
2 T soy sauce
1 tsp. garlic powder
1 tsp. Montreal Steak Seasoning (or use your favorite purchased steak seasoning)
salt and fresh-ground black pepper to taste
1 cup macaroni
sour cream for serving, optional

Steps:

  • In a large non-stick pan, heat the olive oil, add the ground beef, and cook until it's well-browned, breaking apart with the turner as it cooks.
  • Push the beef to the side of the pan, add the onions and cook until the onions start to brown, about 5 minutes.
  • Add the minced garlic and cook about 2 minutes more.
  • Add the water, tomato sauce, petite dice tomatoes and juice, Italian Herb Seasoning (affiliate link), bay leaves, soy sauce, garlic powder, Montreal Steak Seasoning, salt, and pepper.
  • Stir the mixture together, then cover the pan and simmer about 20 minutes.
  • Add the macaroni, cover the pan again, and simmer 30 minutes.
  • Remove from the heat, discard the bay leaves, and let the mixture sit for a few minutes before serving. (We only made it about 10 minutes, which was fine.)
  • Serve hot, with a dollop of low-fat sour cream if desired.

We grew up with this casserole that we called "goulash." It is an humble dish that is comforting with its blend of garlic, mushrooms, peppers, and bacon. The oregano gives it a special flavor that makes it different from other hamburger casseroles. The original version did not have a bread crumb topping, but it does jazz it up for company. If you are lucky enough to have some frozen cooked ground beef (OAMC) this recipe can be assembled much quicker.This doubles nicely.

3/4 lb macaroni
2 (6 ounce) cans tomato paste
3 cups water
1/4 teaspoon baking soda (You could use a pinch of sugar. I find the baking soda "quaint" as it show the age of the recipe!)
1/2 lb bacon, cut in small pieces (I use scissors to cut, You can use "ready cooked bacon" but it's better with a good maple cured baco)
1 lb ground beef
1/2 lb sliced mushrooms
1/2 cup finely chopped green pepper
1/2 cup onion
1 teaspoon salt, to taste
1/8 teaspoon dried oregano
1 garlic clove, chopped fine (if you love garlic, you can use more)
1/4 cup fresh parsley or 1/4 cup dried parsley
1/4 cup plain breadcrumbs (preferably homemade- fresh or toasted)
2 tablespoons parmesan cheese
1 teaspoon very finely chopped parsley
3/4 cup parmesan cheese

Steps:

  • Cook macaroni in boiling salted water until tender.
  • Drain macaroni.
  • Combine tomato paste, water and baking soda and set aside.
  • Fry bacon in a medium fry pan until medium done.
  • Add mushrooms, green pepper, onions, and cook until tender (about 5 minutes).
  • Add ground beef,stirring constantly until beef is done.
  • Add all seasonings (including parsley) and HALF of tomato paste mixture and simmer for 5 minutes for flavors to blend.
  • Place half of the cooked macaroni in a greased 9x 13 casserole dish.
  • Sprinkle HALF the parmesan cheese.
  • Cover with ALL the meat mixture.
  • Cover with remaining half of cooked macaroni.
  • Sprinkle with remainging parmesan cheese.
  • Finally, top with remaining tomato paste mixture.
  • If desired, top with bread crumb mixture.
  • Cover casserole tightly (SPRAY FOIL WITH PAM OR CASSEROLE TOP WILL STICK) and bake at 375 degrees for 30 minutes.

1 lb lean hamburger
1 medium green pepper, chopped
1 sweet onion, chopped
1 1/2 cups elbow macaroni, cooked (or any other type of small pasta)
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can sliced mushrooms
italian seasoning (to taste)
ground black pepper (to taste)
salt (to taste) or garlic salt (to taste)

Steps:

  • Fry hamburger, pepper, and onion in large skillet.
  • Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
  • Add remaining ingredients and heat well.
  • Add macaroni and heat through.

BACON JALAPENO CHEESEBURGER MAC

My kids, like most, love macaroni and cheese. The trick for me is trying to keep it different and adult enough to satisfy more than just the kiddos. I came up with this recipe because my oldest loves cheeseburger mac and my husband thinks anything is better with bacon (hey he ain't wrong!) If you like a little more heat you can leave the ribs on one of the jalapenos or toss a little cayenne in with the paprika. We love heat but the kids aren't fans so I tend to try to keep things on the milder side. You know your tastes so don't be afraid to bump up the heat if you like. You can also use some Monterey jack or pepper jack to top the dish with instead of the additional cheddar, which I probably would have done myself if I had some in the house. Be sure not to over cook your pasta. Since it is going into the oven you want to be sure that it is al dente. If you like it a tad firmer you can stop just short of al dente and your noodles will be firmer in the end. I usually try to let it set for 10 minutes once I pull it out of the oven just to let it set up but if you are hungry it tastes the same right out of the oven!

6 slices bacon, finely diced, rendered fat reserved
1 lb ground beef
4 tablespoons butter
1 onion, diced
2 garlic cloves, minced
2 tablespoons smoked paprika
2 jalapenos, ribs and seed removed, minced
1/2 cup flour
4 cups milk, warmed
5 cups grated sharp cheddar cheese (roughly 18 ounces)
1 cup panko breadcrumbs, bread crumbs
2 tablespoons dried parsley
1 lb macaroni, cooked until al dente
salt and pepper

Steps:

  • Preheat oven to 375 degrees. In a 12 inch skillet over medium-high heat cook the bacon until crisp and it renders its fat. Use a slotted spoon to transfer the cooked bacon to a paper towel lined plate. Pour the bacon grease into a heat safe bowl or cup.
  • Return 2 tablespoons of the bacon drippings back to the skillet. Add the ground beef and cook, breaking up the meat, until no longer pink. Remove the meat to a colander to drain.
  • Add 4 tablespoons of bacon grease and 4 tablespoons of butter to the skillet (if you run out of bacon drippings substitute butter.) Add the onion and cook until translucent.
  • Toss the garlic, paprika, and jalapenos to the skillet. Return the cooked ground beef to the pan. Add the flour and stir until onion and meat is coated and reduce the heat to low. Pour in the milk slowly, whisking continuously, until it is mixed in well. Let the mixture come to a simmer.
  • Once the liquid comes to a simmer, turn off the heat, and add 4 cups of cheese a handful at a time (be sure to save the remaining cup of cheese for the top.) Be sure to make sure each handful is melted in before adding another handful. Salt and pepper to taste.
  • Stir the cooked macaroni into the cheese sauce until combined then pour into a 9×13 casserole dish.
  • For the topping combine the panko bread crumbs, crisped bacon, dried parsley, 2 tablespoons reserve bacon fat or 2 tablespoons melted butter, 1 teaspoon salt, ½ teaspoon pepper. Toss together until combined well.
  • Smooth the top of the cheese and macaroni mixture, sprinkle with the remaining 1 cup of cheese, and then evenly sprinkle the top with the bread crumb and bacon mixture. Place in the oven and cook for 35 minutes, until the top is browned and the mixture is bubbling.

1 lb ground beef
1/2 lb ground hot pork sausage
1 medium onion, chopped
2 cloves garlic, minced
1 Tbsp worcestershire sauce
8 oz tomato sauce
14 1/2 oz petite diced tomatoes with juice
1 tsp italian seasoning
1/2 tsp smoked paprika
1/4 tsp cumin
1/4 tsp pepper
2 c beef broth
1/2 c water
1 1/4 c uncooked elbow macaroni
1 c shredded cheddar cheese

Steps:

  • 1. In a large, deep sided skillet brown the ground beef and the sausage, breaking it up as it cooks. Drain off the grease and lower the heat to medium. Add in the onion and garlic and cook for 5 minutes.
  • 2. Stir in the worcestershire, tomato sauce, diced tomatoes with juice and seasonings. Add the broth, water and uncooked elbow macaroni. Stir to combine, cover and cook till noodles are tender, about 7-8 minutes. Turn off the heat, uncover and top with the cheese. Cover back up and let it sit till the cheese is nice and melted.
