BBQ CHICKEN CHILI

A delicious twist on traditional chili - shredded chicken, beans and BBQ sauce are simmered in one big pot which has just a touch of sweetness that makes this meal Seriously Delish!

2 tablespoons olive oil
1 cup red onion (diced)
1 jalapeño pepper (seeded and diced)
2 garlic cloves (minced)
1 1/2 tablespoons smoked paprika
1 tablespoon plus 2 teaspoons chili powder
1 tablespoon ground cumin
1/2 teaspoon black pepper
1 teaspoon kosher salt
pinch of red pepper flakes
12 oz cooked boneless skinless chicken breasts (shredded)
12 oz jar roasted red peppers in water (drained and chopped)
1 1/2 cups canned cannellini beans (rinsed and drained)
1 1/2 cups canned kidney beans (rinsed and drained)
3 cups low sodium chicken stock
28 oz can diced tomatoes
1/2 cup barbecue sauce
11 tablespoons reduced fat cheddar cheese (for topping)
chopped cilantro (for topping)

Steps:

  • Heat a large pot over medium heat and add the olive oil, onion, jalapeño, and garlic. Cook until soft, about 5 minutes. Add the paprika, chili powder, cumin, black pepper, salt, and red pepper flakes. Stir and cook for 2 to 3 more minutes.
  • Add the chicken, red peppers, beans, chicken stock, tomatoes, and barbecue sauce, stirring to combine. Cover the pot, lower the heat to medium low, and cook for 20 minutes. Remove the lid and taste, adjusting the seasoning to taste, if needed. Cover and cook another 10 minutes.
  • Ladle the chili into bowls and top with cheddar cheese and cilantro. Enjoy!
  • Press saute, add the olive oil, onion, jalapeño, and garlic. Cook until soft, about 5 minutes. Add the paprika, chili powder, cumin, black pepper, salt, and red pepper flakes. Stir and cook for 2 to 3 more minutes.
  • Add the chicken, red peppers, beans, chicken stock, tomatoes, and barbecue sauce, stirring to combine. Cover and cook high pressure 10 minutes (if using raw chicken, 15 minutes). Natural release, adjusting the seasoning to taste, if needed.
  • Ladle the chili into bowls and top with cheddar cheese and cilantro. Enjoy!

This hearty chicken chili gets it's sweet-smokey flavor from the addition of Bush's Kidney Chili Beans, barbecue sauce, and spices.

Number Of Ingredients 13

1 tablespoon olive oil
1/2 large yellow or white onion, chopped
1/2 large green bell pepper, chopped
2 garlic cloves, minced
2 to 3 cups Rotisserie chicken, diced
2 teaspoons McCormick Mesquite seasoning
1/2 teaspoon smoked paprika
1 (14.5 ounce) can petite diced tomatoes
2 (16 ounce) cans Chili Kidney Beans
1 mild chili seasoning packet (prefer Chili-O)
3/4 cup barbecue sauce
1 (8.7 ounce) can corn, drained or 1 - cup frozen corn
1 cup chicken broth

Steps:

  • In a large pot or Dutch oven, heat the oil and saute the onion and green pepper until soft, about 3 minutes.
  • Add the minced garlic and saute about 2 minutes until fragrant. Add the cooked chicken, mesquite seasoning, and smoked paprika, saute for an additional 1 minute.
  • Add the diced tomatoes (including juice), kidney chili beans, chili seasoning packet, barbecue sauce, and corn (drained) if using canned, and chicken broth.
  • Lightly mix to combine. Bring the mixture to a boil, reduce heat to a simmer, cover and cook for 25 minutes to allow the chili time to thicken.
  • Remove from heat, ladle into bowls, and garnish with corn chips, shredded cheese, sour cream, chopped green onions, and cilantro.

2 whole boneless skinless chicken breasts
2 (15 ounce) cans white beans, drained and rinsed
1 red bell pepper, seeded and chopped
1 anaheim chili, seeded and chopped
1 onion, chopped
1 bunch fresh cilantro, separate leaves from stems
1 (14 1/2 ounce) can diced tomatoes with green chilies
1 (15 ounce) can chicken broth
1/2 cup Chardonnay wine or 1/2 cup your favoite white wine
2 tablespoons olive oil
black pepper, to taste
garlic powder, to taste
cumin, to taste
crushed dried red chili, to taste
salt, to taste

Steps:

  • Coat Chicken with olive oil and season with black pepper, garlic powder and cumin. Grill till done. Put aside on plate.
  • In a soup pot heat some olive oil put in chopped onions, bell pepper, anaheim chili, cilantro stems and some leaves, saute till tender crisp.
  • Add wine, tomatoes and juice, chicken broth, black pepper, garlic powder, cumin, crushed red chilis, and salt to taste. Bring to a boil. Reduce heat and add beans.
  • When grilled chicken is cool enough to handle, chop into bite size pieces. Add chopped chicken and any juices from cooked chicken into soup.
  • Serving Suggestions:.
  • Garnish with chopped cilantro leaves and grated jack cheese, with warm flour tortillas on the side. Bill also suggests an Ice cold Corona and a wedge of lime.

2 medium sweet red peppers, chopped
1 large onion, chopped

1 can (4 ounces) chopped green chiles
4 garlic cloves, minced

2 teaspoons ground cumin
1 teaspoon ground coriander
2 cans (15 ounces each) black beans, rinsed and drained
1 can (28 ounces) Italian stewed tomatoes, cut up
1 cup chicken broth or beer
1/2 to 1 cup water

Steps:

  • In a Dutch oven, saute the chicken, red peppers and onion in oil until chicken is no longer pink, about 5 minutes . Mom's Perfect Chili image

Smoky tomato flavors lead the way in this comforting classic. This is the perfect chili recipe in my opinion--it's not so fancy that it's intimidating at all, but it's definitely a step above chili packet recipes and chili beans. Serve topped with desired garnishes, such as jalapeno, green or white white onion, cheese, sour cream, cilantro, and hot sauce.

2 pounds ground beef sirloin
1 large onion, diced
2 medium poblano peppers, diced
1 medium orange bell pepper, diced
1 medium jalapeno pepper, seeded and chopped

¼ cup chili powder
4 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon white sugar
1 teaspoon kosher salt
1 teaspoon black pepper
½ teaspoon garlic powder

½ teaspoon dried oregano
1 (12 fluid ounce) can or bottle beer
1 (28 ounce) can crushed tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes

1 chipotle pepper in adobo sauce, minced
1 tablespoon adobo sauce from chipotle peppers
3 (15 ounce) cans kidney beans, drained and rinsed

Steps:

  • Heat 1 1/2 teaspoons oil in large Dutch oven over medium-high heat. Add ground beef and cook, crumbling with a spoon until evenly browned and cooked through, about 8 minutes. Drain and set aside.
  • Add remaining oil to the pot and return to medium-high heat. Add onion and saute, stirring often, until translucent, about 5 minutes. Add poblano, bell, and jalapeno peppers and garlic; cook, stirring frequently until softened, about 5 minutes.
