Steps:
- Preheat the oven to 350°F.
- Add the milk, vanilla, shortening, and egg to a bowl and whisk together.
- Add the flour, sugar, baking powder and salt to the bowl and gradually combine with the milk mixture until it comes together into a dough.
- Place the dough on a lightly greased baking tray, with a slight rim, and spread out towards the edges. Scatter the apples evenly over the dough.
- In a small bowl, combine the topping ingredients. Crumble the topping evenly over the apples.
- Bake the kuchen for about 40 minutes, until the crumble has turned golden brown and the apples have softened.

MOM'S FRESH GERMAN APPLE KUCHEN
While we were stationed in Germany our land lady used to make the most fantastic apple cake. So I decided to come up with my own recipe for fresh apple cake and I hit the jack pot. I have been making it ever since, it is so simple you can do it with your eyes closed.

- 1. Preheat oven at 375* Lightly grease and flour 9 inch baking pan.
- 2. In bowl cream Oil, sugar, and eggs, beat after each addition. Add flour and baking soda, and salt, add vanilla, you can add the apples to the mix or spread apples on top and press apples into mixture. I prefer the apples on top, sprinkle with nutmeg on top.
- 3. The mixture will be thick in consistency. Place in oven and bake for 1 - 1 1/2 hour. Till knife inserted comes out clean. Let cool on cake rack, serve with powder sugar sprinkled on top. Great warm or cold

- Preheat oven to 350°F.
- Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
- Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
- In a small bowl, beat egg with 2 T milk and add to dry mix.
- Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
- Pare and core apples.
- Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
- Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
- Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.
GERMAN APPLE CAKE (APFELKUCHEN)

- Preheat oven to 350 F. Butter a 10 to 11 inch springform pan or a pan with a removable bottom.
- Peel the apples, remove the core, dice/slice them (not too thick), place them in a bowl and stir in a tablespoon or two of lemon juice (to prevent browning). Set aside until the batter is ready.
- In a small bowl combine the flour, baking powder, and salt. In a large mixing bowl beat the butter, sugar, milk, vanilla extract, and cinnamon until pale and creamy/frothy. Beat in the eggs one at a time, mixing thoroughly before adding the next egg. Stir in the flour until combined but don't over-stir.Pour the apples into a colander and let them drain. Set aside a few pieces/slices to press into the top of the cake at the end. Stir the apple pieces into the batter and scoop the batter into the greased pan. Use the apple pieces you set aside and press them into the top of the batter. Bake for 40-55 minutes until a toothpick inserted into the center of the cake until comes out clean. Let the cake cool in the pan for 15 minutes and then remove it to let it cool completely.
- If using the sugar cinnamon or apricot jam toppings (see blog post "Optional Toppings" for instructions), apply it while the cake is hot and then let the cake cool. If using powdered sugar, sprinkle it over the cake once it's cooled. Serve the cake on its own, with some whipped cream, or serve it with vanilla ice cream and/or a drizzle of homemade caramel sauceStore the cooled cake in a cake saver or airtight container. This cake will be even more moist the next day. Will keep at room temperature for up to 3 days or can be refrigerated a little longer.

DOROTHY ZEHNDER'S APPLE KUCHEN
Steps:
- Preheat oven to 350 degrees F
- In a bowl, combine 1/2 cup butter, 1/4 cup sugar, and 1/4 teaspoon vanilla. Gradually beat in 1 1/4 cups flour. Press crumbly mixture onto bottom and up sides of 9-inch pie plate. Bake in oven for 5 minutes. Cool.
- Beat cream cheese, 1/4 cup sugar and 1/2 teaspoon vanilla until combined. Beat in egg. Pour over crust.
- Mix apples, juice, remaining sugar, 2 tablespoons brown sugar, cinnamon and lemon juice. Spoon over cheese. Bake for 45 minutes.
- Combine oats, 1/3 cup flour and 1/3 cup brown sugar. Cut in 1/4 cup butter or margarine, to resemble coarse crumbs. Sprinkle over pie. Bake for 15 to 20 minutes more.
APPLE KUCHEN
This simple-to-fix recipe came out of an old Swedish cookbook that my mom always held together with a large rubber band. The recipe is my favorite!

- Arrange apples in a greased 13x9-in. baking dish. Combine 1/2 cup sugar and cinnamon; set aside 1 tablespoon. Sprinkle remaining cinnamon-sugar over apples. , In a small bowl, combine the flour, baking powder and remaining sugar; beat in the milk and butter until blended. Drop by tablespoonfuls over apples; sprinkle with reserved cinnamon-sugar. Bake at 350° for 35-40 minutes or until golden brown. Remove to a wire rack., Meanwhile, in a saucepan, combine the sugar, cornstarch, salt and water until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; add butter and vanilla. Serve with warm kuchen.
