CUCUMBER CREAM CHEESE SPREAD



Cucumber Cream Cheese Spread image

A creamy, yet light and refreshing spread that is perfect to use on crackers, baguettes, bagels or on top of vegetable slices.

1/2 medium size cucumber, peeled and cut into chunks
3 green onions
1 8 oz. block cream cheese, softened
1 teaspoon Worcestershire Sauce
1/8 teaspoon salt

Steps:

  • Add cucumber to food processor bowl.
  • Cut the roots off green onions and place in food processor.
  • Cover and process until coarsely chopped - be sure to not over process. You want chunks not puree/liquid.
  • Add cream cheese, Worcestershire sauce and salt to the bowl and cover and process until smooth. Transfer mixture to a serving bowl.
  • Cover and refrigerate overnight to allow the flavors to meld.

2 teaspoons lemon juice
2 teaspoons finely chopped onion
1/2 teaspoon dill weed
1/4 teaspoon prepared horseradish
Dash hot pepper sauce
3/4 cup finely diced seeded cucumber
Assorted crackers or assorted fresh vegetables

Steps:

  • In a large bowl, beat cream cheese until smooth. Add the lemon juice, onion, dill, horseradish and pepper sauce. Fold in cucumber. Cover and chill for at least 1 hour. Serve with crackers or fresh vegetables.

8 ounce block cream cheese, (softened)
1 teaspoon Worcestershire sauce

Steps:

  • Trim away roots from base of green onion, place in food processor. Add cucumber to food processor bowl.
  • Cover and process until coarsely chopped (DON'T OVERPROCESS!)
  • Add cream cheese, Worcestershire sauce and salt.
  • Cover and process until smooth. Transfer to a bowl.

This is the only cucumber salad I knew, until I ate at a friend's house when I was about 14! Mom and Grandma both made it this way...ok they used regular Miracle Whip, I use fat free.

1 medium onion, diced
1 cup fat-free Miracle Whip
1 1/2 teaspoons prepared mustard
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place cucumbers and onions in large bowl. In a smaller bowl, mix remaining ingredients and pour over the cucumbers and onions. Chill in refrigerator for at least one hour. Serve. Salt, sugar, and pepper can be adjusted to your own taste, this is just the way I like it.

1 (5/8 ounce) package good seasons Italian salad dressing mix
1 dash Tabasco sauce
1 (16 ounce) package rye cocktail bread
1 seedless European cucumber, unpeeled

  • I wash and score the cucumber with a fork along the entire lenth of the cucumber, all the way around, to make a design Slice thinly and set aside.

1 large cucumber, peeled,cored,and seeded (about 1 1/2 cups grated)
1/4 teaspoon salt
8 ounces cream cheese, softened
1/2 cup mayonnaise
3 tablespoons sour cream or 3 tablespoons plain yogurt
2 dashes Tabasco sauce, to taste
1/4 teaspoon lime juice
1/4 teaspoon garlic powder, to taste
1 teaspoon minced reconsitituted sun-dried tomato
2 tablespoons minced green onions
salt and pepper, to taste

  • Peel, core, and seed the cucumber, then grate.
  • Sprinkle cucumber with salt in a colander and toss (this allows the cucumber to"sweat" out excess water); let stand for 30 minutes, stirring once or twice, then remove and gently squeeze liquid from cucumber.

¼ cup white sugar
⅛ cup water
¼ cup distilled white vinegar
½ teaspoon celery seed
¼ cup chopped onion

Steps:

  • Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 minutes, then squeeze cucumbers to release moisture.
  • In a medium size bowl mix sugar, water, vinegar, celery seed, and onion. Add cucumbers to mixture. Mix well. Refrigerate 1 hour.
