Steps:
- Heat oven to 325°F.
- Mix cookie crumbs and butter; press onto bottom of 9-inch springform pan. Bake 10 min. Meanwhile, beat next 3 ingredients with mixer until well blended. Add melted chocolate and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended.
- Pour batter over crust.
- Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours. Top with powdered sugar and berries just before serving.

ELAINE'S CHEESE PIE ROYALE
My dear MIL always made this cheese cake for special occasions. According to my FIL, when they were dating (1955), she took him out to see her home town, Chicago, and they stopped for cheese cake at the Marshall Fields on State Street. He enjoyed it immensely, she won his heart, and they were married. When Marshall Fields stopped baking their cheese cake she searched until she found a recipe that came close. This is the result, and it is a family tradition. We call it "The Way-to-a-Texas-Boy's-Heart Cheese Cake." (Cooking time includes chill time).

- Have all engredients at room temperature.
- Preheat oven to 375°F.
- Crust:.
- Make graham crackers into crumbs by placing ia plastic bag and crushing with a rolling pin or in a food processor.
- Combine cracker crumbs, melted butter and 2 Tablespoons sugar.
- Press into a 9-inch springform pan.
- Filling:.
- In a mixing bowl, beat eggs thoroughly.
- Gradually add 1/2 cup sugar.
- Add cream cheese a little at a time, beating between each addition until smooth.
- Add 1/2 teaspoon vanilla.
- Pour filling into crust.
- Sprinkle lightly with cinnamon.
- Bake for 20 minutes.
- Cool.
- Topping:.
- Increase oven temperature to 400°F.
- Combine sour cream, 2 Tablespoons sugar and 1/2 teaspoon vanilla.
- Spread topping over baked filling.
- Bake for 5 minutes.
- Place in refrigerator to cool.
- Enjoy!
- Refrigerate any leftovers.

- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, 3 tablespoons sugar, cinnamon and melted margarine. Mix all ingredients well and press into bottom and sides of a 9 inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Blend in the eggs one at a time, then stir in the vanilla and salt. Fold in the sour cream.
- Pour batter into springform pan. Bake in preheated oven for 1 hour. Turn off oven and leave cake in for at least 30 minutes.

Steps:
- Preheat oven 325 degrees, butter a 9inch springform pan.
- whip egg whites with 3/4 cup sugar ntil very stiff.
- Put aside combine yolks, remaining sugar (1/2 cup), flour, vanilla, sour cream, cream cheese, and 1/2 of the instant pudding powder, and mix until smooth.
- I use the mixer for this.
- gently fold whipped whites into cheese mixture and add the orange peel.
- pour into prepared pan, and bake until top is almost golden but not quite, and the cake is quite firm.
- In my oven it takes about 40-50min.
- Remove from oven and let rest.
- Cool completely.
- I normally cool overnight before topping, best to keep in the fridge.
- to prepare topping-- whip milk+cream+remaining pudding powder until stiff.
- Pour over the cake and keep in the fridge.
- Before serving you could top with berries or other fruits sprinkled with powder sugar.
- It is best to serve this cake at room temperature and I normally take it out of the fridge at least an hour before serving.

- Preheat oven to 325 degrees F (160 degrees C). Line muffin cups with paper or foil muffin liners.
- Remove cookie top from each sandwich cookie; crush and set aside. Place cream-topped cookies in lined muffin cups, cream side up.

I almost never get to put the topping on this cake because as soon as I've turned my back usually half has disappeared. Personally, I like it better this way which is why I don't really complain unless I have company coming. - Crust Using a pastry blender or 2 knives cut cold margarine into flour, baking powder and sugar until pieces are the size of peas.
- Stir in sour cream, egg yolk& salt.
- Form into a ball& refrigerate for at least 1 hour.
- Roll out into a circle to cover bottom& halfway up sides of a well-greased, 9 inch springform pan (you can also do this with your hands).
- Filling Beat egg yolks until light, adding half the sugar.
- Stir in remaining ingredients except egg whites, remaining sugar, and cherry pie filling.
- Beat egg whites, gradually adding remaining sugar.
- Beat until able to form stiff peaks.
- Fold egg white mixture into cheese mixture.
- Pour into crust.
- Bake in a preheated 350° oven for 45 minutes.
- When cool, spread with a can of cherry pie filling.
- Refrigerate.
