MUSHROOM SWISS CHEESE OMELET



Mushroom Swiss Cheese Omelet image

Eggs should be as fresh as possible and at room temperature. Salt should be added at the table to avoid toughening the omelet.

4 large eggs, beaten
1/4 cup cream
2 tablespoons butter
1/4 lb mushroom, thinly sliced
1/2 garlic clove, crushed
1 pinch red pepper flakes
1/4 teaspoon fresh thyme leave
1 tablespoon sliced fresh chives
1/3 cup swiss cheese, shredded

Steps:

  • Stir cream into eggs.
  • Sauté mushrooms and garlic in the butter, about 5-7 minutes in a 9-inch omelet. Add pepper flakes to taste, sprinkle in the chives and thyme.
  • Stir the beaten eggs into the mushrooms over medium-high heat.
  • Heat the remaining butter in pan over medium heat.
  • Stir the eggs briskly with flat of a fork and continue stirring until mixture is nearly cooked, but still wet, sprinkle the shredded cheese over the surface before folding.
  • Flipping one side over onto the other. If you have a hard time flipping you can cut in half then flip.
  • Garnish with additional chives.

3 eggs
3 tablespoons water
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 cup cubed fully cooked ham
1/4 cup shredded Swiss cheese

Steps:

  • In a small nonstick skillet, melt butter over medium-high heat. Whisk the eggs, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges)., As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, place ham on one side and sprinkle with cheese; fold other side over filling. Slide omelet onto a plate.

2 teaspoons butter or margarine
1/4 cup shredded Cheddar cheese
Salt and pepper, if desired

Steps:

  • Beat eggs in small bowl with fork or wire whisk until yolks and whites are well mixed.
  • Heat butter in 8-inch skillet over medium-high heat until butter is hot and sizzling. As butter melts, tilt skillet to coat bottom with butter.
  • Quickly pour eggs into skillet. While rapidly sliding skillet back and forth over heat, quickly stir eggs with a fork to spread them continuously over the bottom of the skillet as they thicken. When they are thickened, let stand over heat a few seconds to lightly brown bottom of omelet. Do not overcook-the omelet will continue to cook after being folded. Sprinkle with cheese.
  • Tilt skillet and run a spatula under edge of omelet, then jerk skillet sharply to loosen omelet from bottom of skillet. Fold portion of omelet nearest you just to center. Allow for a portion of the omelet to slide up side of skillet. Turn omelet onto warm plate, flipping folded portion of omelet over so far side is on bottom. Tuck sides of omelet under if desired. Sprinkle with salt and pepper.

1/2 tablespoon butter
1/3 cup swiss cheese, grated
1/3 cup sauteed spinach, drained
1 tablespoon sour cream
1 strip lemon peel

Steps:

  • Whip eggs, liquid and seasonings.
  • Melt butter in a 10" non-stick skillet coated with cooking spray over high heat.
  • Heat until bubbly.

1/2 cup swiss cheese, grated (10 oz)
1/8 cup butter
1 dash pepper
1 cup heavy cream
12 eggs, lightly beaten

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 13x9x2 inch glass baking dish.

2 tablespoons water
1/4 teaspoon salt
1 tablespoon butter
2 tablespoons butter

  • Beat egg whites until frothy.
  • Add water and salt and beat until stiff, but not dry.
  • Beat egg yolks until lemon-colored and very thick.

  • Heat butter in a 10" skillet with oven proof handle.

  • To make cheese sauce:.
  • Melt 2 tablespoons butter in saucepan over low heat.
  • Blend in 2 tablespoons flour, 1/4 teaspoon salt and a dash of black pepper.
  • Add 1 cup milk all at one time and cook and stir until mixture bubbles and thickens. Add 1 cup shredded sharp cheese and stir until it melts.

1/2 tablespoon milk

3 pinches pepper

American cheese or any other cheese

Steps:

  • Preheat omelet pan on medium heat.
  • Mix eggs, milk, salt, and pepper until frothy. (Don't over whisk).
  • Cut piece of butter off the short side of stick and melt in pan so omelette does not stick.
  • Pour mixture into pan and wait till it is cooked and thick. If it falls apart in pan, let it cook more.
  • Next,when the omelette is thick and does not fall apart when lifted take ripped up American cheese slices and put on one side of omelette.
  • Flip the uncheesed side of omelette to the side of the omelette with cheese. Wait until cheese melts and take off and into plate.
